Light and moist, these flavorful zucchini spice bars have been a favorite fall treat in my family for ages. If I am taking them to a party, I will add a little cream cheese frosting, but I rarely have time to frost them at home before my family devours them!

1 cup white sugar
½ cup oil
2 eggs, beaten
1 teaspoon salt
1 ¼ cups grated zucchini
1 cup all-purpose flour
1 teaspoon baking soda
¾ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Beat sugar, oil, eggs, and salt together in a bowl using an electric mixer until creamy. Add zucchini and mix on low until blended. Add flour, baking soda, and cinnamon; beat until batter is smooth.
  • Pour batter into an ungreased 8x12-inch baking pan.
  • Bake in the preheated oven until a toothpick inserted into the cake comes out dry, about 20 minutes.

It's from Taste of Home. If you don't tell anyone any different, your guests will know for certain that they're eating apple pie! No kidding! Serve it...

4 c all-purpose flour
2 c granulated sugar
1/2 tsp cinnamon
1/2 tsp salt
1 1/2 c cold butter (3 sticks)
FILLING
8 - 10 c peeled, seeded, cubed zucchini (4 - 5 pounds)
2/3 c lemon juice
1 c granulated sugar
1 tsp cinnamon
1/2 tsp nutmeg

Steps:

  • 1. Combine flour, sugar, cinnamon, and salt in a medium-sized bowl.
  • 2. Cut in butter until crumbly; set aside 3 cups of this mixture.
  • 3. Pat remaining crumb mixture into the bottom of a greased 13"x9"x2" pan. Bake at 375 for 12 minutes.
  • 4. While the crust is baking, make the filling. Place zucchini and lemon juice in a saucepan; bring to a boil.
  • 5. Reduce heat; cover and cook gently for 6 to 8 minutes or until zucchini is crisp-tender.
  • 6. Stir in sugar, cinnamon, and nutmeg. Cover and simmer for 5 minutes. The mixture will be thin.
  • 7. Spoon over crust, and sprinkle with the reserved crumb mixture.
  • 8. Bake at 375 for 40 to 45 minutes or until golden.

4 cups all-purpose flour
2 cups sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1-1/2 cups cold butter
FILLING:
8 to 10 cups cubed seeded peeled zucchini (4 to 5 pounds)
2/3 cup lemon juice
1 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg

Steps:

  • In a large bowl, combine the flour, sugar, cinnamon and salt. Cut in butter until crumbly; reserve 3 cups. Pat remaining crumb mixture into a greased 13-in. x 9-in. baking pan. Bake at 375° for 12 minutes. , Meanwhile, for filling, place zucchini and lemon juice in a large saucepan; bring to a boil. Reduce heat; cover and cook for 6-8 minutes or until zucchini is crisp-tender. Stir in the sugar, cinnamon and nutmeg; cover and simmer for 5 minutes (mixture will be thin). , Spoon over crust; sprinkle with the reserved crumb mixture. Bake at 375° until golden, 40-45 minutes.

5 eggs, lightly beaten
1/2 c olive oil
1/2 c grated parmesan cheese
2 Tbsp chopped fresh parsley
1/2 tsp seasoned salt
1/2 tsp dried oregano
1/4 tsp garlic powder
1/4 tsp dried basil
1/2 c chopped onion
2 c bisquick heart healthy mix
3 c thinly sliced zucchini

Steps:

  • 1. Heat oven to 350. Spray a 9" x 13" baking pan w/ cooking spray. In lg bowl, whisk together eggs, oil, parmesan cheese, parsley, salt, oregano, basil and garlic powder.
  • 2. Whisk in onion then baking mix. Stir in zucchini. Spoon into pan. Bake until golden, about 25-30 mins.

1 cup vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 ⅓ cups all-purpose flour
¼ teaspoon baking powder
2 teaspoons baking soda
1 teaspoon salt
2 cups grated zucchini
½ cup margarine
1 (3 ounce) package cream cheese, room temperature
2 ½ cups confectioners' sugar, sifted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • In a large bowl, mix together the eggs, oil, sugar and vanilla until well blended. Combine the flour, baking powder, baking soda and salt; stir into the sugar mixture. Mix in the zucchini. Spread the batter evenly into the prepared pan.

Easy Cheesy Zucchini Squares image

This reminds me of a quiche. It can be served as the entree or as appetizers. It is a great way to use zucchini. I found this recipe printed in our local newspaper that sited the source as "The New Southern Garden Cookbook..."

3 c grated zucchini, peeled and seeded if needed ( i leave some peeling on for color)
2 tsp kosher salt
1 1/2 c all purpose flour
1 Tbsp baking powder
3 large eggs
1/2 c vegetable oil
1 tsp high quality lemon pepper
2 tsp chopped fresh thyme or 1 teaspoon dry
1 c finely chopped onion
2 c grated sharp cheddar cheese

Steps:

  • 1. Preheat oven 350 degrees. Mist the inside of a 7x11 glass baking dish with cooking spray.
  • 2. Stir together the zucchini and salt in a colander and let drain 15 minutes. Press out the liquid; let drain another 15 minutes. Pick up small handfuls of zucchini and squeeze out as much liquid as possible; transfer to a small bowl.
  • 3. Whisk together flour and baking powder in a large bowl.
  • 4. In a small bowl, whisk the eggs until blended, then whisk in the oil, lemon pepper and thyme. Pour egg mixture into flour mixture and mix well.
  • 5. Use a rubber spatula to fold in the zucchini, onion and cheese. The batter will be very stiff. Scrape it into the prepared baking dish and press evenly into the corners.
  • 6. Bake until the top is golden brown, about 30 minutes. Let cool at least 5 minutes before serving. Refrigerate leftovers.
  • 7. I have reheated the leftovers the next day and it was just as good maybe even better!

2 cups zucchini, Grated
3 teaspoons vanilla
2 1/2 cups flour

2 teaspoons baking soda
1/2 cup oleo (not spread or tub product) or 1/2 cup butter, room temperature (not spread or tub product)
1 teaspoon vanilla
1 (3 ounce) package cream cheese, room temperature
2 1/2 cups powdered sugar
milk, as needed

Steps:

  • Preheat oven to 350°F and grease/flour a 13x9-inch baking pan.
  • Beat eggs; add sugar and oil.
  • Add the zucchini and vanilla; stir to mix well.
  • Sift the dry ingredients together and add to the egg mixture.
  • Pour batter into prepared pan and bake for 20 to 25 minutes, or until done.
  • While the bars are baking, whip the butter and cream cheese until light; add vanilla and powdered sugar.
  • Beat until fluffy, adding a *little* milk as needed if frosting is too thick.
  • Spread frosting on top of the bars when they are cooled.
