EASY MASALA CHAI RECIPE

Easy Masala Chai Recipe image

A delicious and easy dairy-free chai recipe made with whole spices. It's spicy, comforting, naturally sweetened, and made in just 1 pot with 8 ingredients!

Provided by Minimalist Baker

Categories     Beverage

Time 25m

Number Of Ingredients 9

1 whole cinnamon stick
6-8 green cardamom pods
1 tsp whole black peppercorns
3-4 whole cloves
2 ½ cups water
2 Tbsp grated ginger ((for less intense ginger flavor, slice instead of grating))
3 Tbsp loose leaf black tea ((or ~3-4 black tea bags // use decaf as needed))
2 cups dairy-free milk
Sweetener such as stevia, organic cane sugar, or maple syrup to taste

Steps:

  • Add cinnamon stick, cardamom pods, peppercorns, and cloves to the bowl of a mortar (or cutting board) and use pestle (or heavy pan) to slightly crush the spices. You aren't pulverizing into a powder, just slightly crushing into small pieces (see photo).
  • To a medium saucepan add crushed spices, water, and grated (or sliced) ginger and bring to a boil over high heat. (Note: For a less gingery chai, reduce amount of ginger and slice rather than grating). Then reduce heat slightly to medium/medium-low and maintain a simmer for 15 minutes or until it reduces by about one-third.
  • Add tea (loose leaf or bags) and dairy-free milk of choice (we love light canned coconut) and lower heat to low. Cover and continue cooking for 5 minutes to allow the flavors to meld. Then turn off heat and let steep for 5 minutes more (covered) or longer for deeper flavor.
  • Add sweetener of choice to taste (we prefer stevia or maple syrup, but sugar is more traditional). Strain through a fine mesh strainer before serving.
  • Keep strained, cooled leftovers covered in the fridge up to 3-4 days. Reheat on the stovetop or in a milk frother. Not freezer friendly.

EASY TEA-LESS CHAI

Easy Tea-Less Chai image

This is an easy home alternative for coffee-shop chai tea lattes. I leave out the tea because most of the flavor comes from the spices and not having to brew the tea makes it much, much simpler. If you're looking for traditional Indian Chai, or for a caffeinated pick-me-up, this is not it. This single serve recipe leaves a lot to taste, as everyone prefers something a little different.

Time 5m

Yield 1 12 oz mug, 1 serving(s)

Number Of Ingredients 8

1 1/2 cups milk
1 -2 teaspoon honey
1 pinch ground cinnamon
1 pinch ground cloves
1 pinch ground ginger
1 pinch ground nutmeg
1 pinch ground cardamom
1 dash ground black pepper

Steps:

  • Put honey in mug, microwave for about 10 seconds.
  • Add spices to honey. I did not include amounts in recipe as for a single serving, this is little more than a "pinch" or "sprinkle" of each, you will probably have to play around with the recipe a few times before you know exactly what proportions you prefer. Stir spices in with honey until blended together smoothly.
  • Add milk to honey and spice, microwave about 2-3 minutes, or until hot. Stir well, if it's lost temperature from stirring, microwave briefly to reheat. Enjoy!

  • To make mix, add all spices to a small jar and shake or stir thoroughly to combine. Will keep at room temperature up to 3 months. Or you can store it in the refrigerator if you prefer. Double the recipe if you intend to use it daily (it goes fast!).
  • To make a HOT chai latte, add suggested amount of Chai Mix, sweetener of choice, and 2 tsp water to a mug (or small blender). Use a spoon to mix spices into water (or skip this step if blending). Then add warmed dairy-free milk of choice to your mug (or blender) and stir (or blend) to combine. The spice mix can settle to the bottom, but blending really helps! Keep a spoon handy to give it a stir when drinking if the spices need to be dispersed.
  • To make an ICED chai latte, add suggested amount of Chai Mix, sweetener of choice, and 2 tsp water to a serving glass. Use a spoon to mix into a loose paste (you want as few clumps as possible). Then add several big ice cubes and top with dairy-free milk of choice. Stir to combine.
  • In addition to being used to make chai lattes, we also think it would make a delicious spice mix for cookies, vegetables, smoothies, and more!
