Cheesy Garlic Sweet Potatoes are the perfect side dish OR snack! Mozzarella cheese and parmesan top these tender garlic butter smothered sweet potatoes!

4 small or medium sized sweet potatoes (halved lengthwise (ends trimmed))
1/4 cup Garlic Butter (melted)
Sea salt (to taste)
Black pepper (to taste)
3/4 cup shredded Mozzarella cheese
1/2 cup Parmesan cheese (fresh grated)
2 tablespoons dried or fresh chopped parsley

Steps:

  • Heat oven to 220°C | 425°F. Brush the potatoes with the garlic butter and season each potato with salt and pepper. Arrange cut-side down on a lightly greased baking sheet until golden brown and the flesh is tender (about 20-30 minutes, depending on your oven).
  • Remove them from the oven, flip them cut-side up (skin side down) and top with the mozzarella, parmesan and parsley.
  • Change oven settings to broil on low or medium heat and broil until the cheese is golden and melted (about 2 minutes). Sprinkle with more salt and pepper, if desired. Serve warm.

2 each sweet potatoes
½ pound ground beef
½ cup chopped onion
½ cup chopped green bell pepper
½ cup salsa
1 teaspoon taco seasoning mix
½ (8 ounce) package cream cheese
2 tablespoons milk
1 pinch salt and ground black pepper to taste
¼ cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Prick potatoes several times with a fork and place onto a baking sheet.
  • Bake in the preheated oven until potatoes are tender, about 50 minutes.
  • Heat a skillet over medium-high heat. Cook and stir ground beef, onion, and bell pepper until beef is no longer pink, 5 to 7 minutes. Stir in salsa and taco seasoning.
  • Halve potatoes lengthwise and spoon flesh into a bowl. Stir in cream cheese, milk, salt, and pepper; mash to combine, then spoon into the potato skins. Top with beef mixture and Cheddar cheese.

These Cheesy Sweet Potatoes only require 6 ingredients and are the perfect mix of sweet and savory. A cheesy and buttery outside combines with a soft and sweet inside that will tantalize your tastebuds.

2 medium to large sweet potatoes
3-4 tbsp butter, melted
2 cloves garlic, crushed
1 tsp Italian seasoning
1 tsp paprika
Salt and pepper, to taste
1/3 cup shredded cheese + 1-2 tbsp for topping (I used cheddar)

Steps:

  • Preheat oven to 350. Cook sweet potatoes until they are tender. You can microwave them for 5-7 minutes, or bake for 25-30 minutes.
  • While sweet potatoes are cooking, melt butter and mix with garlic and spices.
  • Cut sweet potato into coin shapes, smash with a fork and arrange on your baking sheet.
  • Pour mixture over sweet potatoes and top with shredded cheese. Bake for 15 minutes, garnish with some more cheese, and broil on low for 2 more minutes.

3 lb. sweet potatoes (4 large or 6 small), scrubbed, halved lengthwise
3 Tbsp. extra-virgin olive oil, divided
1 1/2 tsp. kosher salt
1/2 tsp. freshly ground black pepper
1 1/2 cups shredded Monterey Jack or cheddar cheese
Sour cream or plain yogurt, sliced avocado, thinly sliced radishes, thinly sliced scallions, cilantro leaves, Pickled Red Onions, lime wedges, and/or hot sauce (for serving; optional)

Steps:

  • Fill a large pot with 1" water. Place potatoes in a steamer basket and lower into pot. Cover pot and bring to a boil. Steam until potatoes are fork-tender, 25-30 minutes.
  • Place an oven rack about 8" from broiler; preheat broiler. Coat a rimmed baking sheet with 1 Tbsp. oil. Arrange potatoes skin side down on prepared pan. Score or lightly mash flesh with a fork; season all over with salt and pepper. Drizzle with remaining 2 Tbsp. oil, then top with cheese (taking care to keep it on the potatoes, not the pan). Broil potatoes, watching carefully to make sure they don't burn, until cheese is bubbling and golden brown, 3-5 minutes.
  • Transfer potatoes to a platter. Serve with sour cream, avocado, radishes, scallions, cilantro, pickled onion, lime wedges, and hot sauce for topping alongside, if desired.
  • Do Ahead: Potatoes can be steamed 5 days ahead. Transfer to an airtight container and chill.
