My family loves lasagna, but sometimes I lack the time for the long version. This is easy and satisfies everyone. Try it tonight!

1 pound lean ground beef
1 (32 ounce) jar spaghetti sauce
32 ounces cottage cheese
3 cups shredded mozzarella cheese
2 eggs
½ cup grated Parmesan cheese
2 teaspoons dried parsley
salt to taste
ground black pepper to taste
9 lasagna noodles
½ cup water

Steps:

  • In a large skillet over medium heat brown the ground beef. Drain the grease. Add spaghetti sauce and simmer for 5 minutes.
  • In a large bowl, mix together the cottage cheese, 2 cups of the mozzarella cheese, eggs, half of the grated Parmesan cheese, dried parsley, salt and ground black pepper.
  • To assemble, in the bottom of a 9x13 inch baking dish evenly spread 3/4 cup of the sauce mixture. Cover with 3 uncooked lasagna noodles, 1 3/4 cup of the cheese mixture, and 1/4 cup sauce. Repeat layers once more: top with 3 noodles, remaining sauce, remaining mozzarella and Parmesan cheese. Add 1/2 cup water to the edges of the pan. Cover with aluminum foil.
  • Bake in a preheated 350 degree F(175 degrees C) oven for 45 minutes. Uncover and bake an additional 10 minutes. Let stand 10 minutes before serving.

1 Tbsp olive oil
1 small onion, chopped
1/3 cup green pepper, chopped
1 cup leftover or rotisserie chicken, diced
1/3 lb smoked chorizo sausage, diced
1 pkg (8 oz.) Kraft Santa Fe Blend Cooking Creme, divided
1 pkg (8 oz.) Inn Maid Noodles
1/2 cup sour cream
8 oz sliced pepper jack cheese
1/2 cup chopped fresh cilantro

Steps:

  • Preheat oven to 350 degrees F. Saute onion, and pepper in oil till tender. Add chicken and sausage and warm through. Pour all but 1/4 cup Santa Fe Blend into vegetable mixture. Heat through.
  • Meanwhile, cook noodles in well salted water until just al dente. Drain, reserving 1/2 cup cooking liquid. Mix 1/4 cup Santa Fe Blend into the noodles. Pour reserved liquid into vegetable mixture.
  • Spray 11x7 inch baking pan with cooking spray. Spread 1/3 of veggie sauce on bottom of pan. Add half the noodles. Spread sour cream over hot noodles, top with half of the vegetable mixture, another layer of noodles and rest of vegetable sauce. Top with pepper jack slices.
  • Cover and bake 35-40 minutes till bubbly. Remove foil and bake an additional 5 minutes till slightly brown. Remove from oven and allow to rest 5-10 minutes. Top with chopped fresh cilantro. Serve.

A super easy and fast beef lasagna recipe. It is made with a prepared sauce, and requires no boiling of the noodles.

1 pound lean ground beef
1 onion, chopped
1 (4.5 ounce) can mushrooms, drained
1 (28 ounce) jar spaghetti sauce
1 (16 ounce) package cottage cheese
1 pint part-skim ricotta cheese
¼ cup grated Parmesan cheese
2 eggs
1 (16 ounce) package lasagna noodles
8 ounces shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet, cook and stir ground beef until brown. Add mushrooms and onions; saute until onions are transparent. Stir in pasta sauce, and heat through.
  • In a medium size bowl, combine cottage cheese, ricotta cheese, grated Parmesan cheese, and eggs.
  • Spread a thin layer of the meat sauce in the bottom of a 13x9 inch pan. Layer with uncooked lasagna noodles, cheese mixture, mozzarella cheese, and meat sauce. Continue layering until all ingredients are used, reserving 1/2 cup mozzarella. Cover pan with aluminum foil.
  • Bake in preheated oven for 45 minutes. Uncover, and top with remaining half cup of mozzarella cheese. Bake for an additional 15 minutes. Remove from oven, and let stand 10 to 15 minutes before serving.

12 lasagna noodles, cooked
1 1/4 lbs ground beef
1 onion, diced
1 stalk celery, diced
1 (14 ounce) can crushed tomatoes
2 (7 1/2 ounce) cans tomato sauce
1 (4 ounce) can diced green chilies, with juice
2 tablespoons taco seasoning (I use Bulk Taco Seasoning Mix)
1 teaspoon cumin
2 cups cream-style cottage cheese
2 eggs
1/2 cup cheddar cheese, grated
1/2 cup monterey jack cheese, grated
1 cup cheddar cheese
1 cup monterey jack cheese

Steps:

  • For meat sauce: Scramble fry ground beef, onions, and celery until lightly brown. Stir in remaining ingredients and simmer while making cheese sauce.
  • For Cheese sauce: combine ingredients and mix well.
  • To assemble: put a small amount of meat sauce in a 9X13 inch baking pan. Top with 4 lasagna noodles. Add 1/3 of remaining meat sauce. Top with 1/2 of cheese sauce, 4 additional noodles, then repeat layers, ending with the meat sauce.
  • Sprinkle cheddar and Monterey jack cheese over lasagna.
  • Bake , uncovered, for 60 minutes at 350 degrees. Let stand for 10 minutes before serving.
  • To freeze: Bake, cool, wrap well, and label. freeze up to 2 months.
  • To serve, defrost overnight and then bake until warmed through, or bake from frozen for 1 hour and a half.
