1 cup white sugar
2 tablespoons all-purpose flour
½ cup butter
3 eggs
1 teaspoon vanilla extract
1 cup milk
1 cup flaked coconut
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Mix flour with sugar. Cream in butter and eggs. Mix in vanilla and milk until well combined. Fold in coconut. Pour into prepared pie crust.
  • Bake at 300 degrees F (150 degrees C) for one hour. Cool completely before cutting.

1/4 cup butter or margarine, softened
2 cups milk
1 1/2 teaspoons vanilla

Steps:

  • Heat oven to 350°F. Grease 9-inch pie plate with shortening or cooking spray.
  • In medium bowl, stir all ingredients until blended. Pour into pie plate.
  • Bake 50 to 55 minutes or until golden brown and knife inserted in the center comes out clean. Cover and refrigerate any remaining pie.

But in all the years I've made this, I've never screwed it up once! It's that easy. Once people have had this, I'm requested to bring it to gatherings from then on.

1 (9 inch) frozen deep-dish pie crust
1 cup white sugar
1 tablespoon all-purpose flour
3 large eggs, lightly beaten
½ cup sweetened flaked coconut
½ cup evaporated milk
⅓ cup unsalted butter, softened
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Bake pie crust in the preheated oven until lightly browned, about 10 minutes. Remove from the oven. Reduce oven temperature to 325 degrees F (165 degrees C).
  • Combine sugar and flour in a large bowl; stir in eggs. Add coconut, evaporated milk, butter, and vanilla. Stir well to combine. Pour filling into the prepared pie crust.
  • Bake in the preheated oven until pie is set, 35 to 40 minutes. Let cool before slicing and serving.

  • Stir in melted margarine.

2 baker's semi-sweet chocolate baking squares, chopped
3/4 cup baker's angel flake coconut, toasted, divided
2 cups thawed Cool Whip Topping, divided
1 honey maid graham cracker pie crust (6 oz.)
1 1/2 cups cold milk
1 (3 1/2 ounce) package jell-o instant coconut cream pudding mix

Steps:

  • MICROWAVE chocolate in medium microwaveable bowl on HIGH 1 min.; stir until chocolate is completely melted. Add 1/4 cup of the coconut and 1 cup of the whipped topping; stir until well blended. Spread onto bottom of crust. Refrigerate while preparing filling.
  • POUR milk into large bowl. Add dry pudding mix. Beat with wire whisk 2 minute or until well blended. Spoon into crust. Top with remaining 1 cup whipped topping; sprinkle with remaining 1/2 cup coconut.
  • REFRIGERATE 4 hours or until ready to serve. Store leftover pie in refrigerator.
