These cookies are amazing. Sugar cookies take so long to make when you have to chill them for an hour, then roll them, then cut them. These are ready to bake as soon as the mixing is done. They are delish and will disappear in a flash

Ingredients

2 3/4 c all purpose flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 c butter, room temperature
1 cup + 2 Tbsp granulated white sugar
2 Tbsp light brown sugar
1 egg
2 tsp vanilla extract
1/4 c white sugar for rolling the cookie balls

Steps:

1. Preheat oven to 375 degrees. Get your pans ready, lightly spray with cooking spray or use parchment paper
2. Combine flour, baking soda, baking powder and salt in a medium bowl and set aside
3. Cream butter and sugars in a large mixing bowl on medium speed until light and fluffy
4. Add the egg and mix till combined
5. Add the vanilla and mix till combined
6. Add dry ingredients slowly until combined. It will be thick and shouldn't be sticky. You may need to use a rubber spatula to bring it all together
7. I use a tablespoon and make a ball with the dough. roll it in the extra sugar and place on the cookie sheet
8. Bake for 9-11 minutes. They will be puffy, take them out just before they start to brown

Preheat oven to 350°F. Line two baking sheets with parchment paper or spray with non-stick cooking spray.
In the bowl of an electric mixer fitted with the paddle attachment, beat the cold butter and sugar until creamy. Beat in the half and half and almond extract and then the eggs, one at a time, until mixture is well combined. Add the flour, baking powder and salt. Mix on low speed until a thick dough forms. *If the dough seems too wet, add an additional 1/4 cup of flour at a time until it comes together smoothly.
On a floured surface, roll half of the dough out to 1/4-inch thickness. Cut into desired shapes. Repeat with remaining dough until you’ve used it all.
Place cookies about an inch apart on the prepared baking sheets. Bake for about 7-9 minutes, rotating cookie sheets after 5 minutes, or until cookies are just set and starting to turn light brown around the edges. Let cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.
