- Preheat oven to 350 degrees F (175 degrees C). Place pizza crust on baking sheet.
- In a small bowl, mix together olive oil and sesame oil. Brush onto pre-baked pizza crust, covering entire surface. Stack the spinach leaves, then cut lengthwise into 1/2 inch strips; scatter evenly over crust. Cover pizza with shredded mozzarella, and top with sliced mushrooms.
- Bake in preheated oven for 8 to 10 minutes, or until cheese is melted and edges are crisp.

- Preheat oven to 375°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., Wipe mushrooms clean with a damp tea towel. Trim stems; quarter or slice large mushrooms., In a large skillet, heat 1 tablespoon butter over medium-high heat. Add leek; cook and stir 2-3 minutes or until tender. Remove from pan., In same pan, heat remaining butter over medium-high heat. Add mushrooms; cook 4-6 minutes or until tender and liquid has evaporated. Stir in leek, salt and pepper. Cool slightly., Sprinkle 1/2 cup cheese onto bottom of crust. Top with mushroom mixture; sprinkle with remaining cheese. In a large bowl, whisk eggs and cream until blended; pour over top., Bake on a lower oven rack until a knife inserted in the center comes out clean, 30-35 minutes. If desired, sprinkle with parsley before serving.

- 1. Preheat oven to 400 degrees F. Make your pizza dough and spread it out onto your pizza-baking pan (or stone) of choice. I like curling up the edges of the dough for extra crunch.
- 2. Gently brush the entire crust with olive oil. Then spread the minced garlic over the crust.
- 3. Add the sliced tomato and mushrooms, spreading them out over the dough. Sprinkle with the cheese.
- 4. Bake for 15-18 minutes, or until crust is browned to your preference.

- Preheat oven to 400 degrees F.
- Mix uncooked beef, bread crumbs, oregano, salt and egg.
- Press mixture evenly against bottom and side of ungreased 9 inch pie plate. Spread mushrooms, bell pepper, pepperoni and olives and then a thin layer of cheese on top of beef mixture. Repeat the layer without the cheese. This should fill up the pie.
- Pour tomato sauce over toppings.

- Saute the onions in butter in a large skillet.
- When the onions are soft and translucent, add the mushrooms and thyme and suate for a few more minutes, until the mushrooms release their juices.
- Add the seasonings.
- Cut the cream cheese into small pieces and stir it into the mushrooms until it melts.
- Remove from the heat and set aside until crust is ready.
- Preheat oven to 400°F.
- For the crust, combine the flour, baking powder and salt in a large mixing bowl.
- Cut in the butter just enough to achieve a crumbly mix.
- Stir in the sour cream to form a soft dough.
- Generously dust the dough with flour and form into a ball.
- On a heavily floured surface, roll out 2/3 of the dough to fit a 10 inch pie plate.
- Trim the edges.
- Fill with the mushroom mixture.
- Roll out the remaining dough about 1/4 inch thick (Thicker than normal pie crust) and cut into strips 1 inch wide.
- Weave the strips into a lattice over the filling.
- Fold the ends of the lattice strips under the bottom crust, pinch the edges together, and flute.
- For the glaze, beat the egg and milk.
- With a pastry brush, thoroughly coat the pie crust. (You will have more glaze than you will need).
- Bake the pie for 25-35 minutes, until the crust is puffy and golden.
EASY MUSHROOM PIZZA
This is the easiest lunchtime pizza. I adapted it from a recipe of Elie Kriegers and we eat it at least once a week! Hope you enjoy!

- Heat the olive oil in a skillet, toss in mushrooms and onions. Saute to your liking.
- Add Spinach leaves, drizzle olive oil and salt and pepper. Saute until leaves are wilted. Take off heat.
- Lay your tortillas out on a pizza stone, or cookie sheet. I prefer the pizza stone.
- Divide mixture in skillet evenly between the tortillas.
- Add feta cheese, and chicken (if desired).
- Toss in a preheated 400 degree oven.
- Bake about 7 minutes or until tortillas are browned around the edges.

- Put the butter or olive oil in a medium frying or saucepan and heat over medium heat, using a spatula to coat the bottom of the pan. Add the garlic and saute just briefly until fragrant, then add the mushrooms. Stir and season with salt, pepper and your favorite salt-free seasoning blend. Stir, then cover and cook for several minutes, stirring occasionally, until the mushrooms are tender.
- Add the spinach, a handful at a time, covering and cooking until wilted, then adding more until all the spinach is incorporated. Remove the cover, reduce heat and let cook a few minutes to let the extra moisture evaporates. Remove from heat and push a clean towel down over the mixture to sop up most of the moisture.
- Meanwhile, preheat the oven to 450 F and roll out the pizza dough to your desired thickness. If you want it thin and it resists rolling, cover it and let it rest for 10 – 15 minutes, then roll it out thinner. Lightly oil the bottom of your cast iron pan, then place the dough in cast iron pan so it covers the bottom and rises up the sides of the pan. Push the dough up the sides a bit to make a good lip. Bake at 450 F for 5 – 8 minutes or until cooked but not brown. Remove from oven.
- While the crust is cooking, in a small bowl, mix together the ricotta filling ingredients. Stir the ricotta mixture into the spinach mushroom mixture. Keep this mixture warm until the crust is ready.
