APPLE SLAB PIE

Steps:
- Heat oven to 425°F. Remove 2 of the pie crusts from pouches. On lightly floured surface, unroll and stack crusts one on top of the other. Roll to 18x12-inch rectangle. Fit crust into 15x10x1-inch pan, pressing firmly into corners and sides, stretching dough slightly to fit, if necessary. Do not trim pie crust edges.
- In large bowl, stir apples, sugar, flour, cinnamon, salt, nutmeg, and lemon juice until well mixed. Spoon apple mixture evenly into crust-lined pan.
- On lightly floured surface, unroll and stack remaining 2 pie crusts one on top of the other. Roll into 18x12-inch rectangle. Place on top of apples. Pinch edges of crusts together to seal, tucking extra pie crust under, if necessary. Flute or crimp edges. Cut slits in several places on top crust.
- Bake 30 to 35 minutes or until apples are tender and crust is golden brown. If necessary, loosely cover pie with foil last 10 to 15 minutes of bake time, to prevent over browning. Cool at least 2 hours before serving. Cut into 4 rows by 4 rows.

- Preheat oven to 350 degrees F (175 degrees C). Line 2 baking sheets with parchment paper.
- Beat butter, cream cheese, and vanilla extract together in a large bowl until smooth. Add flour, 5 teaspoons sugar, baking powder, and 1 teaspoon cinnamon; mix until dough comes together.
- Roll dough into a 1/4-inch thick round on a floured work surface. Cut out 48 circles with a cookie cutter.
- Top 24 dough circles with a teaspoon of apple pie filling. Cover with remaining 24 dough circles. Crimp edges with a fork to seal. Arrange cookies on lined baking sheets.
- Bake in the preheated oven until cookies are golden brown, 23 to 29 minutes. Cool for 5 minutes.
- Mix 2 tablespoons sugar and 1 teaspoon cinnamon together in a shallow bowl. Roll warm cookies in sugar and cinnamon mixture until coated. Transfer to a wire rack to cool, about 10 minutes.

Steps:
- Preheat oven to 400 degrees.
- On a lightly floured baking sheet, roll out pastry into a 15-inch round circle.
- In a bowl, toss together the apples, 3 tbsp sugar, the currants, 1 tbsp flour, 1/2 tsp cinnamon and the peel.
- Pile the mixture in a 9-inch mound, in the middle of the pastry shell.
- Fold the edges neatly over filling, (do not fold to the middle, leave space in the center to add more ingredients).
- Brush the pastry edges with cream or egg.
- Bake on a cookie sheet for 25 minutes.
- Meanwhile, in a bowl, mix 2 tbsp EACH of sugar and flour, the remaining cinnamon with the butter, until crumbly; set aside.
- Whisk in the remaining sugar, the sour cream, egg yolks and vanilla.
- Remove pie from oven.
- Pour the mixture over apples.
- Top with reserved cinnamon-sugar mixture.
- Reduce oven to 350.
- Bake the pie for another 35-40 minutes, or until crust is brown.
- Pour over the apples.

MOM'S FLAT APPLE PIE
This is a great pie for a picinic or potluck. You can pick it up and eat it with your hands. No gooey, drippy mess, but super moist!! The picture that I posted is one of the pictures of the pie my "little" brother made. He is such a great cook as well.

Steps:
- 1. Mix ingredients for crust (which are the first 4 ingredients on the list).
- 2. Roll out half of the dough to fit a cookie sheet.
- 3. Sprinkle with cornflakes.
- 4. Place sliced apples on top of cornflakes.
- 5. Mix sugar and cinnamon and sprinkle on top of apples and dot with butter.
- 6. Add top crust to cover.
- 7. Beat egg white and sugar and brush on top of pie. Cut a few slits in the top of the pie crust.
- 8. Bake at 425 degrees F for 25-30 mintues.
- 9. Mix powered sugar, vanilla and enough milk to make a thin frosting. Drizzle over hot pie.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt butter in a saucepan over medium heat. Add apples; toss until coated with butter. Stir in brown sugar, white sugar, lemon juice, 1 1/2 teaspoons cinnamon, 1/2 teaspoon vanilla extract, salt, nutmeg, allspice, and cloves; cook and stir until apples have softened and sugars have melted, about 5 minutes.
