1/3 cup olive oi
1 head garlic
2 tablespoons red wine vinegar
2 teaspoons Dijon mustard
3 tablespoons freshly grated Parmesan
1/3 cup olive oil
1/2 teaspoon kosher salt, and pepper to taste
2 tablespoons each of honey, Dijon mustard, white vinegar
1/2 teaspoon kosher salt and pepper to taste
1/4 cup olive oil
2 teaspoon black poppy seeds
3 tablespoons apple cider vinegar
1 tablespoon honey
1 teaspoon Dijon mustard
1/2 teaspoon kosher sal

2 tablespoons sesame oil
1/3 cup vegetable oil (or other neutral oil

2 tablespoons water
juice of one lime
1 tablespoon each rice or white vinegar, chopped peeled ginger, soy sauce, and honey
1/4 cup each butter milk and sour cream
1/2 cup crumbled blue cheese
1/2 a lemon
and salt and hot sauce to taste

Steps:

  • Classic Ranch: whisk 1/3 cup buttermilk, 1/3 cup mayonnaise, 2 tablespoons each chopped parsley and chives, 1 teaspoon dried dill weed, 1/4 teaspoon each kosher salt, black pepper, and garlic powder. (You can sub 1 tablespoon each of dried parsley and chives for the fresh) Once you start making homemade ranch, you'll never go back to the store-bought stuff again. SO GOOD! This is perfect for cob salads, to dip fries in, over chicken salads, and most any other salads with romaine and other leaf lettuces as the base.
  • Creamy Italian: Blend 1/4 cup mayonnaise, 2 tablespoons red wine vinegar, 2 tablespoon each sour cream and olive oil, 1 teaspoon Italian seasoning, 1 clove garlic, and 1/4 teaspoon kosher salt in a blender. Stir in 1 tablespoon chopped parsley.
  • Classic Vinaigrette: Whisk 2 tablespoons red wine vinegar, 2 teaspoons Dijon mustard, 1/2 teaspoon kosher salt, and pepper to taste. Gradually whisk in 1/3 cup olive oil.
  • Roasted Garlic: Slice the top off 1 head garlic; drizzle with olive oil, wrap in aluminum foil and roast at 400 degree until tender, about 35 minutes. Cool and then squeeze out the cloves. Blend the roasted garlic cloves, 2 tablespoons red wine vinegar, 2 teaspoons Dijon mustard, 3 tablespoons freshly grated Parmesan, 1/3 cup olive oil, 1/2 teaspoon kosher salt, and pepper to taste in a blender. I'm obsessed with this one. SO good! Make a double batch and use part of it for a marinade for chicken breast. It's also amazing on roasted vegetables. I made my freezer to slow cooker Spaghetti and Meatballs and served it with a simple side salad and this dressing last night and I couldn't get enough. Super easy, healthy, delicious, whole food meal the whole family loves.
  • Honey Mustard: Whisk 2 tablespoons each of honey, Dijon mustard, and white vinegar and 1/2 teaspoon kosher salt and pepper to taste. Gradually whisk in 1/4 cup olive oil. So easy, super classic, I love honey mustard dressing on all the things.
  • Honey Poppy Seed: Whisk 2 teaspoon black poppy seeds, 3 tablespoons apple cider vinegar, 1 tablespoon honey, 1 teaspoon Dijon mustard and 1/2 teaspoon kosher salt. Gradually whisk in 1/3 cup olive oil. This one I have around most of the time because it always hits the spot. This is great on salads with berries and other sweet fruits in them, it compliments them nicely.
  • Asian Sesame: Whisk 2 tablespoons cider vinegar, 1 tablespoon honey, 1 1/2 teaspoons grated peeled ginger, 2 tablespoons sesame oil, 1/3 cup vegetable oil (or other neutral oil), 1/2 teaspoon kosher salt, and pepper to taste, and 1/4 teaspoon garlic powder. This dressing is also excellent on Asian inspired noodle recipes and chicken salads.
  • Peanut-Lime: Blend 1/4 cup creamy peanut butter, 2 tablespoons water, the juice of one lime, 1 tablespoon each rice or white vinegar, chopped peeled ginger, soy sauce, and honey in a blender. This dressing is awesome on "quinoa" bowls (roasted veggies/protein/quinoa) and it's also excellent on fish.
  • Creamy Blue Cheese: Whisk 1/4 cup each butter milk and sour cream, 1/2 cup crumbled blue cheese, the juice of 1/2 a lemon, and salt and hot sauce to taste. Here's a little secret, if blue cheese is too strong for you, you can actually make this with crumbled feta for a more mild dressing that is still wonderfully creamy and cheesy. Dip everything in this including hot wings.

1-3/4 cups unseasoned stuffing cubes

Steps:

  • In a microwave-safe dish, beat egg and milk. Stir in the celery, onion and seasonings. Add stuffing cubes; mix well. Let stand for 5 minutes. , Cover and microwave on high for 1 minute; stir. Cook for 1 minute; stir. Cook 30 seconds longer or until heated through.

Sometimes when I am in a hurry - I make a batch of this dressing - keep it in the 'fridge and vary the flavours according to the meal I am serving - today its Roasted Chicken and a leg of Lamb - the dressing is easy peasy!

30 ml all purpose flour
15 ml sugar
3 ml salt
3 ml dry mustard powder
190 ml milk
1 egg yolk
45 ml vinegar
15 ml butter

Steps:

  • 1. Mix flour, sugar, salt and dry mustard in a Large casserole. Slowly stir in the milk. Microwave on 100% for 2 1/2 to 4 1/2 minutes - stirring every minute until the mixture thickens.
  • 2. Slowly stir half the hot mixture into the egg yolk then blend this into the remaining hot mixture. Microwave for 1 to 1 1/2 minuts, stirring ever 30 seconds - the mixture will start to thicken.
  • 3. Stir in the vinegar and the butter - let the mixture cool then store in the refridgerator.
  • 4. Here are some variations to turn your salad into something special - BLUE CHEESE DRESSING: While mixture is hot stir 70gr crumbled blue cheese, 3ml Worcesterchire sauce and 50ml cream - mix well.
  • 5. HERBED DRESSING: While mixture is still warm add chopped fresh herbs of your choice - such as parsley, dill and thyme or parsley, tarragon and spring onions. Mix well into dressing and refridgerate.
  • 6. 1000 ISLAND DRESSING: To the cooled Dressing add 60ml Tomato Sauce (ketchup), 2 small finely chopped gherkins, 30ml chopped onion, 1 chopped hard boiled egg, 5ml Sugar and 5ml white vinegar. Mix well and refridgerate - this is a tangy dressing! NOTE: YOU CAN DOUBLE THE QUANTITY

  • Spoon the mustard into a bowl and slowly whisk in the oil with a small whisk. Gradually add the vinegar and 1 tsp of water to make a creamy looking dressing. Season with the sugar and a generous pinch of salt. Will keep in a sealed jar for up to a month, but must be whisked again before serving.

This is my grandmother's recipe for the salad dressing she used instead of mayonaise. (I never tasted mayo until I was a teenager). We used it in pasta salads, egg and tuna salads and sandwiches. I still don't eat BLTs without the tang of this dressing. Grandma made hers on the stovetop and had to stir constantly to avoid scorching. I now do mine in the microwave and no longer have to worry about that.

1/2 cup sugar
1 tablespoon cornstarch
1/2 teaspoon salt
1 egg
1/4 cup vinegar (either white or cider )
1/2 cup hot water
2 tablespoons prepared yellow mustard (Dijon, Honey Mustard or other flavors will work)
1 tablespoon butter

Steps:

  • In microwave safe bowl mix sugar, cornstarch and salt.
  • Whisk in the egg, vinegar, water and mustard.
  • Microwave on high for 3 minutes then stir.
  • Microwave again on high for 1 minute then stir and repeat in 1 minute increments until dressing comes to a boil and thickens - about 5 - 6 minutes total cook time. (It will continue to thicken as it cools).
  • Add butter.
  • Store in refrigerator.
