EASY LOW FAT STRAWBERRY TIRAMISU
I got this recipe off of a jell-o flyer from the grocery store. I tried it out and substituted some things to take to a picnic. It went over really well -- even to those who had no idea how low fat it was!

Steps:
- Mix sliced strawberries with water in a bowl, cover with plastic wrap and put in the refrigerator until strawberries are chilled and have softened and have given up their juices, about an hour.
- Beat cream cheese in a large bowl with an electric mixer until creamy.
- Gradually add milk and beat until well blended.
- Add pudding mix and beat on low speed for about a minute or until blended.
- Line the bottom of a 13x9 inch pan with half of the lady fingers.
- Lightly brush the tops of the lady fingers with some of the juice from the strawberry mixture.
- Top with layers of half each of the pudding mixture, whipped topping and strawberries.
- Repeat all layers, arranging the strawberries on top.
- Refrigerate at least 3 hours or until ready to serve.

Steps:
- Using an electric beater, beat together egg yolks and sugar until pale and thick.
- Beat in mascarpone.
- Whisk egg whites to soft peaks.
- Fold cream then egg whites into mascarpone mixture.
- Fold in strawberries.
- Combine coffee and rum or brandy.
- Dip half the sponge fingers briefly in the mixture to moisten the outside.
- (Do not soak fingers in mixture, they will fall apart) Line the base of a serving bowl with the sponge fingers.
- Spoon half the mascarpone mixture into the bowl.
- Cover with remaining sponge fingers that have been dipped in the coffee mixture.
- Spoon over remaining mascarpone mixture.
- Cover and refrigerate for at least 4 hours.
- Just before serving, sift a little cocoa over the tiramisu.
- Garnish with strawberry halves.

Another Tiramisu recipe. I decided to post it because it is a little different. Very easy and quickly put together. The majority of the time spent on this is the chilling time, but this is needed to let the flavors meld. Very light and refreshing.

Steps:
- Rinse, hull and half strawberries into a bowl(leave a few whole for decoration).
- Fold in brown sugar and make sure strawberries are well coated.
- Set aside.
- Place lady finger in bottom of each desert bowl or line the bottom of an casserole dish (8x8).
- In a small bowl mix the Orange liquior and the orange juice and drizzle over the ladyfingers.
- In a separate medium bowl add mascarpone with fresh egg yolks, vanilla extract and sugar.
- Mix well.
- Fold in the strawberries.
- Spoon on top of the lady fingers.
- In a food processor coarsely chop pistachio nuts.
- Sprinkle on top of Masdcarpone cream and strawberries.
- Top with a whole strawberry.
- Refrigerate at least 1 hrs to let the flavours meld.
- The longer the better the flavor.
- Enjoy.

LOW-FAT, EASY TIRAMISU
Light, easy and delicious! Truly tastes gourmet, and no one ever notices that it's a healthier version. In some recipes the ladyfingers have to be split in half (messy and time consuming) - in this recipe the ladyfingers are used whole. Has less of that artificial taste then recipes with the artificial whipped topping. Also, this recipe has no egg, which when uncooked and at room temperature, can be unsafe. You can also completely or partially replace the sugar with Splenda or Equal if you like; if not use all sugar. You may want to use decaf. coffee if you are eating this as a night time dessert!

Steps:
- Mix first four ingredients in mixer or food processor at higher speed until creamy smooth.
- Brew coffee and mix with alcohol.
- Lay half of ladyfingers in a 7 x 11 inch pan that's at least 2 inches deep. Drizzle half of coffee mixture evenly over the lady fingers.
- Put half of cheese mixture evenly over the lady fingers.
- Lay the remaining ladyfingers over the first layer.
- Drizzle the remaining coffee over the ladyfingers and spread the rest of the cheese mixture over top.
- Lightly sprinkle top with cocoa powder through a strainer or sifter.
- Cover with saran wrap and refrigerate for at least 6 - 8 hours. If preparing the day before, decrease the coffee amount by 1/4 to 1/8 cup.

- Combine coffee and liquer in dish; COOL.
- BEAT eggwhites until soft peaks.
- In separate bowl, BEAT custard, ricotta, icing sugar until smooth.
- FOLD in eggwhites.
- Dip sponge fingers into coffee mix one at a time and place in 6 cm x 18 cm square dish; I used pryex.
- SPREAD half the mixture on top of biscuits and place another layer of sponge fingers on top;.
- REFRIDGERATE for minimum of 6 hours or overnight.
- SPRINKLE sifted cocoa on top before serving.
- NOTE: Strong brewed coffee is suggested.
- NOTE: Can use Marsala liquer or Kahlua or no liquer at all.
- NOTE: Can add 200g strawberries or raspberries to custard mixture.

Steps:
- Prepare an 8-inch square baking dish.
- In a small bowl, combine the water and the instant coffee granules; stir to dissolve the coffee; set aside 1 tbsp of the coffee mixture.
- In a large bowl, beat the pudding mix with the skim milk until thickened; stir in the larger part of the coffee mixture.
- Add in the softened cream cheese, beat until smooth.
- Split the ladyfingers apart, and line the bottom of the baking dish with half of the package of ladyfingers.
- Drizzle the ladyfingers with the 1 tbsp of reserved coffee mixture (try to get a little on each finger).
- Spoon the pudding mixture evenly over the ladyfingers.
- Place the remaining ladyfingers on top of the pudding, and top with whipped topping.
- Sprinkle top with grated chocolate.
- Cover and chill for 4 hours or more until ready to serve.
SIMPLY SENSATIONAL LOW FAT STRAWBERRY SHORTCAKE
I wanted to make my father a nice dessert for Father's Day this year. My father loves home made cakes and fresh fruit, my girlfriend LOVES strawberries, and my mom, (whose lost over 75 pounds!) can't have high calorie/fat desserts. This was my attempt to make something to that everyone could enjoy! I adapted this from Kraft Food and Family magazine to make it a bit more figure friendly.

- Preheat oven to 425°F.
- Mix 1/2 cup of the skim milk, sour cream and 3 tbsp sugar in a large bowl.
- Stir in the dry biscuit mix until well blended.
- Spread evenly into a greased 9-inch round cake pan.
- Bake 12-15 minutes or until top is golden.
- Remove from pan and cool completely on wire rack.
- Mix strawberry slices and 1/3 cup Splenda in a bowl and set aside.
- Combine the dry pudding mix and remaining 1/2 cup skim milk adn mix well.
- Gently stir in half of the whipped topping until well blended.
- When cake has cooled, carefully slice in half horizontally to make 2 layers.
- Place bottom of cake on a serving plate, and top evenly with half of the strawberry mixture.
- Spread top of strawberries with the pudding mixture and top with the top cake layer.
- Spread remaining whipped topping on top of cake and top with remaining strawberries.
- Serve immediately!
- Please store cake leftovers in refrigerator.
