Lemonade Stand Pie is a quick ice cream pie that gets it's tart, lemony flavor from Country Time Lemonade Drink mix. If you are short on time a store bought graham cracker crust can be used. However, a homemade one would taste even better!

2/3 cup Country Time Lemonade Drink mix
1/2 cup water
1 pint (2 cups) vanilla ice cream, softened
8 oz. Cool Whip, thawed
1-9 inch graham cracker pie crust

Steps:

  • Stir drink mix and water until dissolved.
  • Beat lemonade mixture and ice cream in a large bowl with hand mixer or using stand mixer, on low speed until blended.
  • Gently fold in cool whip until smooth.
  • Poor into pie crust and freeze until firm, about 4 hours.

1 1/2 cups finely crushed graham crackers (20 squares)
1/3 cup margarine or butter, melted
3 tablespoons sugar
1 quart (4 cups) vanilla ice cream, softened
1 can (6 ounces) frozen lemonade concentrate, thawed
Few drops yellow food color, if desired
Grated lemon or lime peel, if desired

Steps:

  • Heat oven to 375°F. In medium bowl, mix all Graham Cracker Crust ingredients. Press mixture firmly against bottom and side of pie plate, 9x1 1/4 inches. Bake about 10 minutes or until light brown. Cool 30 minutes.
  • In large bowl, mix ice cream, lemonade concentrate and food color. Mound ice-cream mixture in crust.
  • Freeze about 4 hours or until firm. Let stand at room temperature a few minutes before cutting. Garnish with grated lemon peel. Store covered in freezer.

1 package (3.4 ounces) instant lemon pudding mix
1 carton (8 ounces) frozen whipped topping, thawed
1 graham cracker crust (9 inches)
Optional: Additional whipped topping and fresh strawberries

Steps:

  • In a large bowl, combine strawberries (with juices) and pudding mix; let stand until slightly thickened, about 5 minutes. Fold in whipped topping. Spread into crust., Freeze at least 8 hours or overnight. Let stand 5-10 minutes before serving. If desired, serve with additional whipped topping and strawberries.

1/3 cup COUNTRY TIME Lemonade Flavor Drink Mix
2 cups vanilla ice cream, softened
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1 ready-to-use graham cracker crumb crust (6 oz.)
1 cup mixed berries (blueberries, blackberries and raspberries)

Steps:

  • Add water to drink mix in large bowl; stir until dissolved. Add ice cream; beat with mixer until blended. Whisk in COOL WHIP. Freeze, if necessary, until mixture is thick enough to mound.
  • Spoon into crust.
  • Freeze 4 hours or until firm. Remove from freezer 15 min. before serving. Let stand at room temperature until pie can easily be cut. Serve with berries.

2-3/4 cups coarsely crushed saltines (about 60 crackers)
1 cup sugar, divided
1/2 cup butter, melted
2 cups sliced fresh or frozen sliced strawberries, thawed
1 teaspoon lemon juice
1 teaspoon grated lemon zest
1/4 cup cold water
1 envelope unflavored gelatin
2 packages (8 ounces each) cream cheese, softened
1/2 cup heavy whipping cream
Lemon slices, optional

Steps:

  • Preheat oven to 350°. Combine crushed crackers and 1/4 cup sugar with melted butter. Using the bottom of a glass, press cracker mixture onto bottom and up the sides of a greased 9-in. deep-dish pie plate. Bake until set, 15-18 minutes. Cool completely on a wire rack., Combine strawberries, 1/2 cup sugar, lemon juice and zest; let stand 10 minutes. Meanwhile, sprinkle gelatin over cold water; let stand 5 minutes. Transfer strawberry mixture to a food processor or blender; pulse until smooth. Microwave gelatin on high until melted, about 10 seconds; stir into strawberry mixture., Beat cream cheese and remaining sugar until smooth. Gradually beat in cream and strawberry mixture.
