1/2 pound fresh green beans, trimmed
1 tablespoon olive oil
1-1/2 teaspoons cider vinegar
1/4 to 1/2 teaspoon Italian seasoning
1/4 teaspoon onion salt
1/8 teaspoon lemon-pepper seasoning

Steps:

  • Place beans in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 8-10 minutes or until crisp-tender. , Meanwhile, in a small bowl, whisk the oil, vinegar and seasonings until blended. Transfer beans to a serving bowl; drizzle with seasoning mixture and toss to coat.

A great foil for the richer dishes of the Thanksgiving table, these brightly flavored beans can be served warm or cold as a salad. With minty yogurt sauce on the side for dipping, they make a delicious, modern replacement for your traditional green bean casserole.

Kosher salt and freshly ground pepper
2 pounds green beans, trimmed
Extra-virgin olive oil, for drizzling
1 1/2 teaspoons finely grated lemon zest
Minty Yogurt Sauce, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add beans and return to a boil, then cook until beans are crisp-tender and a consistent color throughout, 3 to 4 minutes. Drain; run under cold water to stop cooking. Pat completely dry. Beans can be made ahead to this point and refrigerated in an airtight container up to 2 days.
  • Drizzle beans with oil; toss to coat. Stir together 2 teaspoons salt, lemon zest, and 1/2 teaspoon pepper. Sprinkle over beans. Serve, with yogurt sauce.

1 pound fresh green beans, rinsed and trimmed
2 tablespoons butter
¼ cup sliced almonds
2 teaspoons lemon pepper

Steps:

  • Place green beans in a steamer over 1 inch of boiling water. Cover, and cook until tender but still firm, about 10 minutes; drain.
  • Meanwhile, melt butter in a skillet over medium heat. Saute almonds until lightly browned. Season with lemon pepper. Stir in green beans, and toss to coat.

Sunny's Easy Garlicky Lemon Butter Green Beans image

Kosher salt and freshly ground black pepper
12 to 16 ounces fresh green beans, trimmed
3 tablespoons butter
2 cloves garlic, grated on a rasp grater or finely minced
Zest of 1 lemon plus 2 teaspoons fresh lemon juice
1/4 cup slivered almonds

Steps:

  • Bring a pot of salted water to a boil. Prepare an ice bath. Blanch the green beans briefly in the boiling water, then transfer to the ice bath to stop the cooking process. Drain and set aside.
  • In a large pan on medium-high heat, add the butter, garlic and lemon juice. When the butter is melted and the garlic is fragrant, add the green beans and toss until just heated through. Taste a green bean and season with salt and pepper if needed. Remove to a serving plate and wipe the pan clean. Add the almonds and lemon zest and quickly toast a minute or two. Sprinkle the toasted almonds and zest over the green beans and serve.

These green beans will put a pucker on your face! They definitely have a whang to them. My uncle Don is a very VERY picky eater and he ate half the pan, so they must be pretty good. You can also adjust the heat to these babies and if you happen to catch canned vegetables on sale (if you're not into canning your own), it's a great way to serve an alternative to plain ole green beans or that mushroom casserole everyone makes at the holidays.

2 lemons, quartered
black pepper, to taste
1 quart green beans (or a commercial can)
salt, to taste

Steps:

  • Drain the water off of the green beans.
  • Over medium heat, place the green beans in a large enough saucepan. Add just enough water to cover half the beans.
  • Squeeze the juice from all the lemon quarters, getting as much as the juice and pulp out as possible. Place 4 quarters in the pan with the beans.
  • Season with black pepper to your taste. You can make these as spicy as you like. Salt to taste.
  • Cook on med-low heat until beans are heated and tender.

1 tablespoon extra-virgin olive oil
3 tablespoons butter
2 large garlic cloves, minced
1 teaspoon red pepper flakes
1 tablespoon lemon zest

Steps:

  • Blanch green beans in a large stock pot of well salted boiling water until bright green in color and tender crisp, roughly 2 minutes. Drain and shock in a bowl of ice water to stop from cooking.
  • Heat a large heavy skillet over medium heat. Add the oil and the butter. Add the garlic and red pepper flakes and saute until fragrant, about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Add lemon zest and season with salt and pepper.
