2 cups cooked basmati rice
500 g mixed vegetables (you choose from green beans, peas, sweet peppers, mushrooms, or anything else you fancy in fried ric)
1/2 teaspoon salt
1/2 teaspoon chili powder
1/2 teaspoon cinnamon
1/2 teaspoon garam masala
3 teaspoons ghee
8 -10 garlic cloves, minced
1/4 cup cashews

Steps:

  • Cut all the vegetables into long pieces.
  • Pour the ghee in the frying pan and add the garlic and cashews, stirring until slightly browned.
  • Add the vegetables and fry until they are fully cooked.
  • Add the spices, adjusting to your taste.
  • Add rice, stirring well to coat with the spices, and fry until heated through and well mixed.

Easy Indian Flavored Fried Rice image

This is a super quick and easy way to use left over rice and veggies. My kids used to love this for breakfast, too. You can use any vegetables you like. I can't remember where I found the original recipe -- but I adapted it and have used it for at least 20 years now!

1 1/2 cups left over cooked rice (you can use more)
1 onion, coarsely chopped
1 -2 garlic clove, minced
2 tablespoons indian curry powder (increase to 3 Tbs. if using a common American brand)
1/2 cup frozen peas (or other vegetable you have on hand)
2 eggs
1 tablespoon vegetable oil
1/4 teaspoon cayenne pepper

Steps:

  • In a large stir-fry pan or wok saute onions and garlic in about 1 Tbs. oil over medium to medium-high heat until onions are translucent.
  • Mix in curry powder and cayenne.
  • Gently stir in the left over rice.
  • When the rice is thoroughly mixed with the onions and spices, push the rice to the side of the pan, creating a "hole". Add the two eggs to the pan.
  • When the bottom of the eggs have begun to set, start stirring the egg to keep it from sticking. Some of the rice will start to fall into the egg mixture, that's OK.
  • Thoroughly but gently stir the rice and eggs until the eggs are completely cooked.
  • Serve immediately.
  • My kids especially enjoyed this with a spoonful of plain yogurt.

This is a savory Indian style rice dish flavored with whole spices and fried onions. Soaking the basmati rice before cooking makes all the difference. Serve with your favorite Indian curry or dal (lentils). Make sure you warn people not to bite into the whole spices!

1 ½ cups basmati rice
2 tablespoons vegetable oil
1 (2 inch) piece cinnamon stick
2 pods green cardamom
2 whole cloves
1 tablespoon cumin seed
1 teaspoon salt, or to taste
2 ½ cups water
1 small onion, thinly sliced

Steps:

  • Place rice into a bowl with enough water to cover. Set aside to soak for 20 minutes.
  • Heat the oil in a large pot or saucepan over medium heat. Add the cinnamon stick, cardamom pods, cloves, and cumin seed. Cook and stir for about a minute, then add the onion to the pot. Saute the onion until a rich golden brown, about 10 minutes. Drain the water from the rice, and stir into the pot. Cook and stir the rice for a few minutes, until lightly toasted. Add salt and water to the pot, and bring to a boil. Cover, and reduce heat to low. Simmer for about 15 minutes, or until all of the water has been absorbed. Let stand for 5 minutes, then fluff with a fork before serving.

  • Heat a broad pan with oil. When its hot, add the veggies with sugar and fry for 2 minutes in high flame or until its cooked, but retains its crunchiness. Toss if you know the knack so that the flame gives the veggies a smokey flavour. For this, you need more oil.
  • Lastly add pepper, spring onion and give it a fry. Add cooked, rice and stir till it gets heated up. All should be done in high flame. You should hear rice crackling sound that's the right stage.
