EASY, HEALTHY, AND AMAZING TURKEY "STEAK"
This easy meal idea is good for servings of all sizes and could even be used for party food. Only 5 ingredients and so good my picky eater wife likes it! This recipe was created after thinking of a healthier way to make sliders, with or without bread, since I am on a very strict diet that I won't give up on - over 60 lbs lost so far. ***NOTE*** The Recipe could be used with rolls or bread to make more of a slider like meal. Also I feel this recipe would be great by adding BBQ sauce when almost done, but I have not tried this...yet. This Is also my first posted recipe.

Steps:
- Mix the ground turkey, black pepper, and seasoning salt in a medium sized bowl.
- On a flat baking pan (like a cookie sheet with sides) spread the seasoned meat to cover the entire pan.
- Use a spatula, rolling pin, or similar item, to flatten/spread the meat evenly helps.
- Make a "break line" in the portion size you would like by pressing into the meat using a knife or pizza cutter. (I use 3 x 3 lines to make 16 one ounce portions).
- Place the pan with the meat in the freezer until fully frozen.
- Once frozen break apart and separate the pieces of meat.
- If not cooking all of the meat, the extra can be wrapped and stored in freezer paper to ensure easy separation.
- Cook the diced onion in a preheated skillet until it gets some color. (optional). Add black pepper and seasoning salt to taste while browning the onions.
- Add enough water to slightly cover the onions; bring to a simmer over medium heat.
- Once the onions and water start to simmer, place the pieces of frozen seasoned turkey on top of the onions and water, adding more water as needed to prevent sticking or burning.
- Simmer until bottom of meat is browned; flip to cook the other side.
- Check your meat to make sure it is fully cooked.
- When fully cooked, serve topped with the onions they were cooked inches
- Place the meat on rolls, biscuits, or other small bread (optional).

TURKEY STEAKS WITH CITRUS & GINGER SAUCE
Use quick-cook turkey steaks for this recipe as they cook in a few minutes, and make a change from chicken

- Sprinkle a teaspoon cornflour onto a plate, then press the turkey steaks into the cornflour to dust them lightly. Heat the oil in a large non-stick frying pan, until it is really hot. Add the turkey and fry for 3-4 minutes, turning once until golden on both sides - cook in batches if need be. Transfer to a plate.
- Add the orange juice, ginger and honey to the pan. Gently bring to the boil. Mix the remaining cornflour with 1 tbsp cold water and stir into the sauce. Keep stirring on a gentle heat until thickened and syrupy, like a sweet and sour sauce. Season.
- Return the turkey to the pan. Add the orange and grapefruit segments and heat through gently. Scatter over chives or parsley and serve straight away with rice and broccoli.

LEMONY CRUMBED TURKEY WITH BROCCOLI-BEAN SMASH

- Heat oven to 180C/ 160C fan/gas 4. Put the flour into a wide, shallow bowl with a little seasoning. Whisk the egg in a second shallow bowl with 1 tbsp water. Add the breadcrumbs, lemon zest and parsley to a third shallow bowl.
- Get the kids to dip each turkey steak into the flour, shaking off any excess, then into the egg, and finally into the breadcrumbs - press the crumbs into the turkey to make sure they really stick. Put the steaks on a large baking tray, drizzle with oil and bake for 20 mins. Add the cherry tomatoes to the tray and bake for a further 5 mins.
- Meanwhile, boil a pan of water, then add the broccoli and cook for 5 mins. Add the butter beans and cook for 2 mins more until broccoli is really tender. Drain well and leave to steam-dry for 1-2 mins. Tip back into the pan, add the pesto and get the kids to mash everything up with a potato masher. Divide the turkey smash and tomatoes between plates - adding lemon wedges for those who want to squeeze some over.

- In a large bowl, combine 1/3 cup bread crumbs, onion, Worcestershire sauce, steak sauce, garlic and seasonings. Add turkey; mix lightly but thoroughly. Shape into four 1/2-in.-thick oval patties. Place remaining bread crumbs in a shallow bowl. Press patties into crumbs, patting to help coating adhere., In a large nonstick skillet, heat 1-1/2 teaspoons oil over medium heat. Add patties; cook 3-4 minutes on each side or until a thermometer reads 165°. Remove from pan., In same pan, heat 2 tablespoons oil over medium heat. Stir in flour until smooth; gradually whisk in broth, Worcestershire sauce and steak sauce. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Stir in mushrooms. Return patties to pan. Reduce heat; simmer, covered, 2-3 minutes or until heated through.
