1-1/2 teaspoons garlic powder
1-1/2 teaspoons dried oregano
1-1/2 teaspoons dried basil
1/2 teaspoon salt
1/8 teaspoon pepper
2 beef ribeye steaks (1-1/2 inches thick)
1 tablespoon olive oil
1 tablespoon lemon juice
2 tablespoons crumbled feta cheese
1 tablespoon sliced ripe olives

Steps:

  • In a small bowl, combine the first five ingredients; rub onto both sides of steaks. In a large skillet, cook steaks in oil for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare a thermometer should read 135°; medium, 140°; medium-well, 145°). Sprinkle with lemon juice, cheese and olives. Serve immediately.

2 beef T-Bone or Porterhouse Steaks, cut 1 inch thick (about 1 pound each)
1 medium lemon
1 tablespoon Greek seasoning
1 medium cucumber, cut lengthwise in half, then crosswise into thin slices (about 2 cups)
2 cups halved grape tomatoes
1/3 cup crumbled feta cheese
Salt and pepper

Steps:

  • 1) Grate peel and squeeze 1 tablespoon juice from lemon. Combine Greek seasoning and lemon peel. Reserve 2 teaspoons mixture for salad. Press remaining mixture evenly onto beef steaks. 2) Place steaks on grid over medium, ash-covered coals. Grill, covered, 11 to 16 minutes (over medium heat on preheated gas grill, 15 to 19 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally. 3) Meanwhile, combine reserved 2 teaspoons seasoning mixture, lemon juice, cucumber, tomatoes and cheese in medium bowl, stirring to combine. Season with salt and pepper, as desired. 4) Remove bones; carve steaks into slices. Season with salt, as desired. Serve beef with cucumber and tomato salad. To broil, place steaks on rack in broiler pan so surface of beef is 3 to 4 inches from heat. Broil 15 to 20 minutes for medium rare to medium doneness, turning once.

1 1/4 lbs boneless beef strip steaks, cut 3/4 ",thick
1 1/2 tablespoons cavender all purpose Greek seasoning
1 1/2 tablespoons ground black pepper
1 tablespoon olive oil
8 ounces fresh mushrooms, sliced
2 cloves garlic, minced
12 cherry tomatoes, halved
1/4 cup freshly grated parmesan cheese

Steps:

  • Combine Greek seasoning and pepper.
  • Rub both sides of steaks with seasoning mix; set aside.
  • Heat charcoal 30 min (until coals are covered with light ash) or heat gas grill on High for 10 min with lid closed (alternatively, preheat oven to broil).
  • Meanwhile, heat oil in lg skillet over medium-high heat.
  • Add mushrooms and garlic; cook and stir 8-10 min or until mushrooms are tender.
  • Add tomatoes, toss, and cook 2 minutes more.
  • Remove skillet from heat, stir in cheese and season to taste.
  • Cover skillet to keep warm; set aside.
  • Grill steaks 4" above medium heat for 5-7 min/side or until meat thermometer reads 140F for medium-rare or 155F for medium.
  • Let steaks stand 2 min; serve topped with tomato/mushroom mixture.

1 cup boiling water
1/2 cup sun-dried tomatoes (not packed in oil), julienned
2 teaspoons butter
2 cups whole fresh mushrooms, quartered
1 shallot, chopped
2 garlic cloves, minced
1 beef top sirloin steak (1-1/2 pounds), cut into 4 pieces
1/2 teaspoon pepper
1/4 teaspoon salt
1 tablespoon olive oil
1/2 cup dry red wine or reduced-sodium beef broth
1/4 teaspoon dried thyme
1 to 2 tablespoons all-purpose flour
1-1/4 cups reduced-sodium beef broth

Steps:

  • In a small bowl, pour boiling water over sun-dried tomatoes; let stand 5 minutes. Drain., In a large skillet coated with cooking spray, heat butter over medium-high heat; saute mushrooms and shallots until tender, 3-4 minutes. Add garlic; cook and stir 1 minute. Remove from pan., Sprinkle steaks with pepper and salt. In same skillet, heat oil over medium heat; cook steaks until desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°), 5-7 minutes per side. Remove from pan; keep warm. , Add wine and thyme to skillet; bring to a boil, stirring to loosen browned bits from pan. Cook, uncovered, until liquid is reduced by half.
