EASY GLUTEN FREE CEREAL
I wanted cereal one morning but didn't have any gluten free granola prepared so I came up with this and darn tooting it tastes like cereal - great texture and very yummy!

Steps:
- Place walnuts in a ziploc bag then use a heavy item like a mug to smash the walnuts into very small granola size pieces.
- Place walnuts in a cereal bowl.
- Scoop yogurt over walnuts.
- Top with fresh or defrosted blueberries.
- Note: I highly recommend using Brown Cow Brand Yogurt it tastes amazing, and try it with their plain yogurt too - it will make you automatically go mmm - it's so creamy and delicious! MMMMM!

- Using a spoon, stir together all the ingredients in a small serving bowl. Add 1/2 cup boiling water, mix and let stand 2-3 minutes. Top with your favorite toppings (or eat as-is) and enjoy!
- Larger Batch:If you want to make a larger batch and store ahead for an even quicker breakfast, multiply the ingredients by the number of servings you want and store in an airtight container in the refrigerator. For example, if I want to make enough for eight servings, I would multiply each ingredient by eight.
- When you are ready to make your hot cereal. Measure out a lose 1/3 cup (5 tablespoons), add your 1/2 cup boiling water, mix and let stand 2-3 minutes before enjoying.

- Place a rack in the center of your oven, and preheat to 350 degrees F. For the easiest clean up, line a large, rimmed baking sheet with parchment paper.
- In a large mixing bowl, combine the oats, nuts, flaxseed, salt, cinnamon, and pumpkin pie spice. Stir to combine.
- Pour in the maple syrup, oil, whisked egg white, and vanilla (do not add any of the coconut, dried fruit, or chocolate chips yet). Stir well until every part of the mixture is lightly moistened. Pour the granola onto the prepared baking sheet. With a large spoon or the back of a rubber spatula, spread it in an even layer, and lightly press it down.
- Bake for 12 minutes, then remove the pan from the oven. Stir in the coconut flakes. With the back of your spatula, spread the granola back into an even layer, and lightly press it down. Return to the oven, and bake 10 to 12 additional minutes, until it is very lightly golden and smells irresistible.
