TUNA STEAK ON FETTUCCINE
For something new to do with tuna, I suggest this tangy dish. Although I prefer the marinade on tuna or mahi mahi, it's scrumptious on any fish, grilled, baked or broiled. -Caren Stearns, Austin, Texas

- In a shallow bowl, combine 2 tablespoons wine, 2 tablespoons oil, 1/4 teaspoon basil, 1/4 teaspoon oregano, and half the salt and pepper; add tuna. Turn to coat; cover and refrigerate 1 hour., In a large skillet, saute onion in remaining oil until tender. Add tomatoes, brown sugar and remaining wine, basil, oregano, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, until bubbly and slightly thickened, 4-6 minutes. Meanwhile, cook fettuccine according to package directions., Drain tuna, discarding marinade. Place tuna over tomato mixture; return to a boil. Reduce heat; simmer, covered, until fish just begins to flake easily with a fork, about 6 minutes. Remove tuna and keep warm. Drain fettuccine; add to tomato mixture and toss to coat. Divide between two plates; top with tuna.

PASTA WITH SPINACH, CHICKPEAS, TUNA, AND FETA
This is another "throw-together" pasta that is easy and delicious. I always use wholemeal spiral pasta, but you can use any medium shape pasta you like. Leave out the tuna for a vegetarian version. Inspired by a recipe in Cooking Light, June 1998.

- Cook pasta according to instructions.
- Place washed and chopped spinach in a strainer, strain hot pasta over spinach.
- Combine all other ingredients in a large serving bowl, stirring to combine.
- Pour pasta and spinach into bowl, mix thoroughly.

Steps:
- Cook fettuccine or noodles according to package directions. Drain well; keep fettuccine warm by placing in colander over a pot of warm water and cover.
- Meanwhile, in a medium saucepan cook onion in butter or margarine until tender but not brown.
- Stir in flour. Add milk all at once. Cook and stir over medium heat until thickened and bubbly. Cook and stir for 1 minute more.
- Gently stir in tuna and 1/4 cup of the cheese.
- Spoon tuna mixture over the hot cooked fettucine or noodles. Sprinkle with remaining cheese and olives.
- Serve immediately.

Steps:
- Heat the olive oil in a large skillet over medium-high heat. Add the garlic and cook for about 30 seconds, until fragrant.
- Add the sun-dried tomatoes and lemon juice and cook for 1-2 minutes, until fragrant.
- Add the tuna, salt, and pepper, and mix until thoroughly combined.
- Add the pasta and spinach and cook for about 1 minute, until spinach starts to wilt.
- Remove the pasta from the heat and serve.

- In a medium saucepan heat up 2 tablespoons of oil, add the bay leaf, garlic and onion and saute on a low heat for 3-4 minutes, stirring occasionally. Add the tomatoes, tomato paste, brine from 1 tuna tin, season, cover and simmer for 7 minutes.
- In the meantime in a large pan heat up 2 tablespoons of oil and fry the squash cubes on a high heat for about 7-8 minutes stirring often until softened and lightly browned. Remove from the heat and place in your oven dish.
- In the same frying pan heat up the spinach and cook over a fairly high heat until reduced in size, for about 1 minute, stirring all the time. Stir the spinach mixture into the tomato sauce. Adjust the seasoning if necessary.
