6 medium potatoes
1 large onion
1 cup sour cream
1 1/2 cups chopped ham
2 cups grated cheddar cheese

Steps:

  • Slice potatoes into 3/4 inch pieces. Slice onion thinly and split into rings.
  • Combine potatoes and onions and microwave on high for 10 minutes, stirring once during cooking.
  • Remove from microwave, stir through sour cream , ham, and 1/4 cup cheese.
  • Place in greased baking dish and sprinkle remaining cheese over the top.
  • Bake at 350°F for 45 minutes.
  • This dish can be prepared ahead and refrigerated until ready for the oven. Quantities can be adjusted with potatoes and cheese as desired.

8 medium potatoes, peeled and thinly sliced
1 small onion, chopped
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1 cup sour cream
1 teaspoon salt

Steps:

  • Combine all ingredients; mix well. Place in a greased 8-in. square baking dish. Cover and bake at 350° for 70-75 minutes or until the potatoes are tender. Uncover and bake 10-15 minutes longer or until lightly browned.

1/2 cup butter, cubed
1-1/2 teaspoons salt
1 package (32 ounces) frozen cubed hash brown potatoes, thawed
1/2 cup grated Parmesan cheese
Minced fresh parsley, optional

Steps:

  • In a large saucepan, combine cream, butter and salt. Cook and stir over medium heat until butter is melted. Place potatoes in a greased 13-in. x 9-in. baking dish; pour cream mixture over potatoes. Sprinkle with Parmesan cheese., Bake, uncovered, at 350° for 45-55 minutes or until potatoes are tender and top is golden brown. Sprinkle with parsley if desired.

2-1/2 to 3 pounds white potatoes, peeled and cubed
1 teaspoon salt, divided
1 medium onion, finely chopped
1/2 pound fresh mushrooms, chopped
3 tablespoons butter, divided
1/2 cup sour cream
1/4 teaspoon pepper
1/4 cup grated Parmesan cheese

Steps:

  • Place potatoes in a large saucepan and cover with water. Add 1/2 teaspoon salt. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain and mash (do not add butter or milk)., In a large skillet, saute onion and mushrooms in 2 tablespoons butter for 3-4 minutes or until just tender. Stir into potatoes along with sour cream, pepper and remaining salt. , Spoon into a greased 2-qt. baking dish. Sprinkle with cheese; dot with remaining butter. , Bake, uncovered, at 400° for 20-25 minutes or until heated through and golden brown.

A comforting cheesy potato bake is the perfect accompaniment to a hearty meat dish in winter

1½ kg King Edward potato, Desiree, or similar, peeled
1 onion, finely chopped
knob of butter, plus extra for greasing
100ml white wine
300ml milk
400ml double cream
3 sage leaves, finely chopped
50g gruyère, grated

Steps:

  • Heat oven to 190C/170C fan/gas 5. Boil the potatoes for 3 mins to soften a little, then drain. When cool enough to handle, slice into 5mm pieces. Cook the onion in the butter in a pan until softened, about 5 mins, then pour over the wine, milk and cream and heat through. Place the potato slices into a large bowl, pour over the cream mixture, sage leaves and half the cheese. Carefully stir until the potato slices are coated.
  • Grease a large baking dish (about 20 x 30cm) with a little butter, then tip the potatoes in. Smooth over the top, scatter over the remaining cheese and season with black pepper. Cover with foil and cook for 30 mins, then uncover and cook 30-40 mins more until a fork slides in easily and the top is golden brown.

3 cups mashed potatoes
6 slices bacon, cooked & crumbled
1 cup shredded cheddar cheese
8 ounces sour cream
3 green onions, chopped

Steps:

  • Preheat your over to 300°F In a flat bottomed baking dish spread out the mashed potatoes to cover the bottom of the dish. Top these with the sour cream. Sprinkle over the crumbled bacon and the green onion, then top with the shredded Cheddar cheese. Bake for 30 minutes or so.

Steps:

  • peel and slice potatoes. arrange in layers in casserole dish. chop onion and bacon and layer on top. pour in cream and bake on 190 degrees for about 1 hour. place shredded tasty cheese on top about ten minutes before removing from oven.
  • you can change the taste dramatically if using garlic instead of bacon and onion. or just make it on its own. Either way this is great with steak and salad or veges.
  • I make a baking dish full for my family of five and there is no leftovers.
