This Chocolate Chip Cookie Brittle is insanely addictive. It's just like getting the perfect buttery, crispy and salty edge of the cookie in every bite! Plus, it's a super simple dessert recipe!

14 tablespoons butter, cubed
1 cup Turbinado Sugar (Sugar in the Raw)
2 teaspoons vanilla
1 teaspoon kosher salt
2 cups all purpose flour
1/2 cup chopped pecans
1 cup semi sweet chocolate chips

Steps:

  • Preheat your oven to 350°F/175°C.
  • Set aside a large (12×17) rimmed baking sheet.
  • In a medium saucepan on medium heat combine the butter and sugar, stirring constantly. Once butter is melted, cook for one more minute and remove it immediately from the heat, being careful not to bring the mixture to a boil. Alternatively place butter and sugar in a large heat-safe bowl and heat in the microwave for 90-120 seconds until the butter is melted and sugar has dissolved slightly. Whisk mixture until it is combined.
  • Let the mixture cool for 5 minutes and then whisk mixture again for 1 minute.
  • Whisk in the vanilla and the salt.
  • Stir int he flour until the dough forms and then stir in the pecans and chocolate chips.
  • Press the dough onto the ungreased pan spreading it out all the way to the edges, you want the brittle to be thin.
  • Bake for 22-25 minutes, rotating the pan every 7-8 minutes until it's lightly golden and firm to the touch in the center.
  • Let the brittle cool in the pan for 3 minutes and then line a counter or second baking sheet with parchment paper and invert the first pan onto the second, and allow it to cool completely.
  • Break the brittle into pieces and enjoy!

1 cup butter, softened
1 cup sugar
2 cups all-purpose flour
1-1/4 cups peanut butter chips
1/2 cup coarsely chopped pecans

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Gradually add flour and mix well. Stir in peanut butter chips. , Line a 15x10x1-in. baking pan with foil; coat with cooking spray. Gently press dough into the pan; sprinkle with pecans and press into dough. , Bake at 350° for 20-25 minutes or until golden brown. Cool on a wire rack. Invert pan and remove foil. Break brittle into pieces; store in an airtight container.

1 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup butter, melted, cooled slightly
1/2 cup granulated sugar
1/3 cup packed light brown sugar
1 teaspoon vanilla
1 cup miniature semisweet chocolate chips
1 cup broken pecans, toasted
1/2 cup flaked coconut, toasted

Steps:

  • Heat oven to 350°F. Lightly grease 15x10x1-inch pan with shortening.
  • In small bowl, mix flour, baking powder, baking soda and salt. In large bowl, mix butter, both sugars and vanilla; add flour mixture, stirring until smooth. Stir in chocolate chips, pecans and coconut (dough will look crumbly). Press dough evenly into pan, pressing almost to edges.
  • Bake 18 to 20 minutes or until lightly browned and crisp. Cool completely in pan, about 30 minutes. Break cookie into pieces.

2 cups unsalted butter, room temperature
1 cup sugar
1 teaspoon kosher salt
2 teaspoons vanilla extract
3 cups flour
1 1/4 cups chopped pecans
1 1/4 cups semisweet chocolate chunks

Steps:

  • Preheat oven to 375 degrees.
  • Add the butter and sugar to large bowl and, with the electric beaters, blend the two.
  • Blend in salt and vanilla and then slowly blend in the flour.
  • Blend in the nuts and chocolate.
  • Press dough into rimmed baking sheet that has been sprayed with cooking spray.
  • Place sheet on center rack of oven and bake 15-20 minutes, or until evenly browned.
  • You may turn tray halfway through.
  • Remove sheet and let cool to room temperature.
  • At this point brittle can be broken into chunks.

⅓ cup chocolate chips
⅓ cup brownie mix

1 ½ (8 ounce) packages thin round wheat crackers (such as Dare Breton®) Original Crackers)
1 cup butter
1 cup brown sugar
1 cup chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with heavy-duty aluminum foil.
  • Place the crackers on the foil-lined baking sheet in a single layer, so they overlap like shingles. Melt the butter with brown sugar in a saucepan over medium heat, bring to a boil, and boil for 3 minutes. Pour the butter mixture evenly over the crackers.
  • Bake in the preheated oven for 15 minutes; remove from oven, and sprinkle crackers with chocolate chips.
  • Let stand about 2 minutes, until the chips are melted, and spread them over the crackers with a spreader or kitchen knife. Sprinkle with nuts, if desired. Allow to cool completely, about 1 hour; break into chunks, and store in airtight sealed container.
