- Reserve 1/4 cup yogurt for topping. Divide remaining yogurt among 4 (8-oz) glasses or dessert dishes. Spoon 1/2 cup of the apple chunks over yogurt in each glass.
- Top each with 1 tablespoon of the remaining yogurt. Spoon 1 tablespoon caramel topping over yogurt. Sprinkle pecans over each parfait. Serve immediately.

APPLE CINNAMON GREEK YOGURT BREAKFAST PARFAITS
Honey, vanilla, and cinnamon stirred into Greek yogurt and then layered with crisp apples and applesauce. We love this as a fancy fall breakfast, but it passes just as easily for a surprisingly decadent dessert.

- Have two sturdy glasses, mason jars, or mini trifle bowls ready.
- To a medium bowl, add the yogurt, honey, vanilla, and cinnamon. Stir well to combine.
- Grab 1/4 of the apples and sprinkle them at the bottom of the glasses. Add 1/3 of the yogurt, a few spoonfuls each. Depending on the size of your glass, you may need to spread the layers gently with the back of a spoon to distribute to the edge of the glass. Top with more apples (1/4), then more yogurt (1/3). Add all of the applesauce (2 tablespoons per glass), then more apples (1/4). Top with remaining yogurt and sprinkle with remaining apples. Drizzle with a little more honey and sprinkle with cinnamon if desired. Serve.
VEGAN APPLE-YOGURT PARFAIT WITH MACA POWDER
When it comes to presenting dessert to guests, there is nothing like a jaw-dropping, multi-layered parfait. And this low-fat version of the classic, with apple sauce, coconut yogurt, maca powder, and lots of other whole ingredients, is a winner! I am slightly obsessed with coconut yogurt and with making my own carob nutella... so towering these 2 ingredients in a delicious parfait enriched with a hint of Austrian apple strudel was a temptation I couldn't resist.

Steps:
- Combine carob powder and cacao powder in a small bowl. Add coconut milk little by little, mixing well until no lumps remain.
- Mix applesauce and maca powder together in a bowl. Add raisins and 1 teaspoon maple syrup.
- Mix shredded coconut and 2 teaspoons maple syrup together in a bowl.
- Spoon layers of 1 tablespoon each carob mixture, maple coconut flakes, maca applesauce, and coconut yogurt, in that order, into 4 digestif glasses or small wine glasses. Cover the parfaits and refrigerate until very cold, at least 4 hours.
- Decorate parfaits with figs, strawberries, and shaved chocolate.

- Heat a medium nonstick skillet over medium-high heat. Add butter and melt. Stir in apples and brown sugar and cook, stirring frequently, for 5 minutes.
- Add ground cloves and cook about 5 more minutes, stirring frequently, until the apples are golden brown and soft. Watch closely so that the apples do not burn.
