This 3-ingredient soup is so easy to make. I use it as a sweet treat on a summer day. I make a batch without the ginger ale and just add 3/4 cup strawberry-yogurt blend to 1/2 cup ginger ale for a single 1 1/4 cup serving.

Ingredients

1 (16 ounce) package frozen unsweetened strawberries
2 cups plain yogurt
1 quart sugar free diet ginger ale, chilled

Steps:

Process strawberries and yogurt in blender until smooth.
Pour in pitcher/container and cover.
Chill until ready to serve.
Add chilled ginger ale, stir and serve. Note: For a thicker soup, add more yogurt.

2 pints strawberries, washed and hulled
1 cup half and half
1 cup sour cream
1/3 cup sugar
2 tablespoons lemon juice

Steps:

In a blender or food processor puree strawberries. Pour into a large bowl and add half and half, sour cream, sugar and lemon juice. Stir until well combined. Chill.
Serve with garnish of mint leaves
