GOURMET CHICKEN BUNDLES RECIPE
These Gourmet Chicken Bundles are all the deliciousness without the hard gourmet work. They are the perfect dish for busy nights and full of delicious flavor.

Steps:
- In a large skillet combine butter, onion, mushrooms and sausage. Cook until sausage is lightly browned. Place mixture in a large bowl and add sage, marjoram, allspice, egg yolk, and chicken. Lightly toss together.
- Combine 2-3 rolls together (depending on how big of bundles you want- we just used 2 rolls per bundle) and flatten into a circle. Repeat with remaining rolls. Divide chicken mixture equally between the circles. Moisten edges of dough with water and fold over mixture to completely enclose. Place folded side down on a sprayed baking sheet. Brush with beaten egg white. Place 3 whole sage leaves on top, if desired, and brush again. Cover with plastic wrap and let rise 15 minutes (I actually skipped this step and they turned out fine). Remove wrap and bake at 350 degrees for 30-35 minutes or until golden brown.
- We dipped our bundles in marinara sauce and it was delicious!

CHICKEN PARMESAN BUNDLES
Juicy chicken stuffed with a cream cheese and spinach filling and topped with marinara.

Steps:
- Preheat oven to 375 degrees F.
- In a mixing bowl. Combine softened cream cheese, drained spinach, 1 cup Mozzarella, and Parmesan cheese.
- Season with salt and pepper, to taste.
- Cut each chicken breast in half to make them around 1/4-inch thick.
- Place a few tablespoons of spinach mixture on the widest end of each chicken breast.
- Roll up and secure closed with toothpicks; set aside.
- In a small mixing bowl, whisk eggs; set aside.
- Crush Ritz crackers in a small resealable bag, pour into a small mixing bowl and set aside.
- Dip each chicken bundle in egg until coated, then roll in cracker crumbs and place seam side down in a
- 9 x 13 inch baking dish sprayed with nonstick cooking spray.
- Bake for 30 minutes.
- Remove from oven, carefully remove all toothpicks, and spoon 2 tablespoons of marinara on top of each chicken bundle and top with a sprinkle of the remaining mozzarella cheese.
- Return to the oven and bake for an additional 10 minutes.

- Preheat oven to 400°. Cut a lengthwise slit in each chicken breast half to within 1/2 in. of the other side; open meat so it lies flat. Cover with plastic wrap; pound with a meat mallet to 1/8-in. thickness. Remove plastic wrap. Sprinkle with salt and pepper., Place five spinach leaves on each chicken breast half. Spoon a scant 2 tablespoons of cream cheese down the center of each chicken breast half; sprinkle with 1 tablespoon walnuts. Roll up chicken; tuck in ends. , Unfold puff pastry; cut into eight portions. Roll each into a 7-in. square. Place chicken on one half of each square; fold other half of pastry over chicken. CHEESY CHICKEN BUNDLES
This is one of my husband's favorites, which is good because I love it too and it is so easy to make! I love recipes that can easily be adapted, and this one is perfect because there are so many different things you could do with it. Try it and I promise you will love it! For me the best thing about this recipe is LOTS of filling -- so if you feel like there is not enough, go ahead and double the recipe.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 9x12-inch baking dish.
- Place a chicken breast between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the chicken breast with the smooth side of a meat mallet to a thickness of 1/4 inch. Repeat with the other chicken breasts.
- Melt the butter in a small skillet, and cook the mushrooms until they begin to brown, about 8 minutes. Set aside. Beat egg in a shallow bowl. Place the cracker crumbs in another shallow bowl.
- In a bowl, mix together the mushrooms, cream cheese, 1 cup of Cheddar cheese, and Parmesan cheese; spread the mixture generously over the chicken. Roll the chicken breasts up, dip each into beaten egg, and roll the bundles in cracker crumbs. Place into the prepared baking dish. Sprinkle the bundles with the remaining 1/4 cup of Cheddar cheese.
- Bake in the preheated oven until the chicken is cooked through, the filling has melted, and the crumbs are golden brown, about 30 minutes. An instant-read thermometer inserted into the center of a roll should read at least 165 degrees F (74 degrees C).

This is a simple -- yet tasty -- recipe that can be tweaked to individual taste, just by changing the flavor of cheese spread used!

Steps:
- In large skillet, melt butter, Sprinkle chicken breasts with pepper and add to skillet.
- Cook 8 to 10 minutes or until well browned on all sides. Set aside to cool slightly.
- Unroll both cans of the dough and separate into 8 rectangles.
- Press each into 6x4-inch rectangle, firmly pressing perforations to seal
- Spread cheese evenly in center of each dough rectangle and place chicken over cheese.
- Bring corners of dough together over chicken and press to seal; place on cookie sheet that has been sprayed with cooking spray.
- Bake at 375 degrees for 18 to 22 minutes or until deep golden brown. If you would like, brush lightly with egg during last 5 minutes of baking time.
- Variations: Try different cheese spreads such as swiss, cheddar, etc. to get different flavors. Also, try adding a thin slice of ham and using swiss spread for a different take on Cordon Bleu.

- Preheat oven to 350°. Beat cream cheese, 2 tablespoons butter, chives, milk, salt and pepper until blended. Stir in chicken., Unroll crescent roll dough and separate into eight rectangles; press perforations together. Spoon about 1/2 cup chicken mixture in the center of each rectangle. Bring edges up to the center and pinch to seal. Brush with remaining butter. Sprinkle with crushed stuffing, lightly pressing down., Transfer to ungreased baking sheets.
