Easy Brunswick Stew is a thick and hearty mix of pulled pork, chicken (or turkey), vegetables, seasonings, tomato sauce, and BBQ sauce. It has an ingredient list that is a little on the long side, but it's really just a dump and heat recipe that doesn't take long at all.

Steps:
- Melt butter in a Dutch oven over medium heat. Add onion and garlic and cook 5 minutes.
- Add lima beans and cook 2 minutes.
- Add diced tomatoes, tomato sauce, BBQ sauce, and chicken broth. Simmer 15 minutes.
- Add corn, seasonings and meats and simmer 5 more minutes.

EASY BRUNSWICK STEW (MAKE-AHEAD FREEZER MEAL)
Comforting and full of flavor, this easy stew is the perfect meal for busy winter weeknights. This dish was created as a make-ahead freezer meal, but can easily be made from start to finish at one time (see Notes). Think of this the next time you need to take a meal to a friend-it sure beats a boring casserole! Serve with garlic Texas toast or cornbread.

Steps:
- Combine chicken, pork, tomatoes, corn, lima beans, barbecue sauce, onion, garlic, salt, and pepper in a large, resealable freezer bag. Seal the bag and mix the contents until well combined. Freeze for up to one month.
- When ready to cook, remove bag from the freezer and allow contents to partially thaw until they can be broken apart, about 1 hour.
- Empty the bag into a Dutch oven and add chicken stock; bring to a boil. Reduce heat to a low simmer and cook, uncovered, until the stew has thickened slightly and the meat shreds easily with a fork, about 1 1/2 hours.
- Remove meat and shred with a fork. Return meat to the pot and serve immediately or keep warm until ready to serve.

Got this from our preacher's wife and has got to be, hands down, the best Brunswick stew we have ever eaten. I used this recipe for the Thanksgiving dinner at work and took home first prize in the "other" category and grand prize over all.

Steps:
- Mix all ingredients together and pour into a large crock pot. Cook on low heat for 8 hours stirring occasionally.
- This can be cooked on high for 4 hours but you need to watch it more closely for sticking.
- Goes GREAT with cornbread!

SIMPLE BRUNSWICK STEW
This is no where near an "authentic" Brunswick stew but it is delicious. Some one gave me this recipe and we fell in love with it. I double the recipe and we take it for work lunches. Real Brunswick stew takes 3 days to make and cost an arm and leg. So this is a nice substitute when you can't get the real thing.

Steps:
- 1. Cook onion in small amount of oil, in large 4qt or 8qt if double recipe, pot, till they are clear. Add rest of ingredients. Cook on low heat for 2 hours. The longer you cook it the better it is.
- 2. *Slow Cooker* Put all ingredients in your slow cooker and let it cook on low for 4-6 hours, or longer.
- 3. **Castleberry Meat** This ingredient is not available Nationwide. I have substituted one tub of BBQ meat such as Lloyd's that is sold in the grocery refrigerated meat section usually.

- Heat a stockpot over medium heat. Add the oil and, when it's shimmering, add the onions, celery, and bell pepper. Cook, stirring occasionally, about 5 minutes. Add the garlic and cook for about another minute.
- Add the beans, diced tomatoes, tomato sauce, barbecue sauce, creamed corn, and frozen corn to the pot, then stir well. Turn the heat down to medium-low and simmer for about 20 minutes.
- Stir in the pulled pork and chicken and simmer for a few more minutes to heat it through. Add the salt and pepper, adding more if necessary. Add the hot sauce, adding more if you want a bit more spice (I usually go to 2 tsp but I'm crazy for spice).
