Ground beef combines with bacon to add a delicious flavor to this easy cheeseburger pie - perfect when you want dinner to be ready in 50 minutes.

6 slices bacon
1 lb lean (at least 80%) ground beef
1/4 teaspoon pepper
1 large onion, chopped (1 cup)
1/4 cup ketchup
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick™ mix
1 cup milk
2 eggs

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. In 10-inch skillet, cook bacon over medium-high heat 5 to 7 minutes, turning once, until crisp; drain on paper towels. Crumble bacon; set aside.
  • In same skillet, cook beef, pepper and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in ketchup. Spread in pie plate; sprinkle with cheese and bacon.
  • In medium bowl, stir remaining ingredients with wire whisk or fork until blended. Pour into pie plate.
  • Bake 20 to 25 minutes or until knife inserted in center comes out clean. Serve with additional ketchup if desired.

OLD FASHIONED BACON AND EGG PIE



Old fashioned bacon and egg pie image

This is a recipe that has stood the test of time. An old fashioned bacon and egg pie as made by my Granny. A light as a feather shortcrust pastry, packed full of tasty bacon and whole eggs, baked in a creamy egg custard filling. Hand on heart, this is the best bacon and egg pie you will ever eat!

Number Of Ingredients 11

2 cups (280g) Plain Flour
4.5 ounce (125g) Butter (cubed)
2 large Egg Yolks
½ teaspoon salt
4 tablespoons (60 ml) Ice Cold Water
4¼ ounce (125g) Streaky Bacon
6 large Eggs (don't break the yolks)
2 large Eggs (beaten)
¼ cups (60 ml) Pouring Cream
1 cup (240 ml) Milk
Salt and pepper to taste

Steps:

  • Place the Flour, Butter and Salt into a mixing bowl
  • Rub lightly with the fingertips until the mixture resembles fine breadcrumbs
  • Add the egg yolks and most of the cold water
  • Stir this through the flour with a knife until it comes together in lumps.
  • Now press together until it just comes away from the sides of the bowl and form it into a ball.
  • Flatten the ball of dough, wrap it in clingfilm and allow it to rest in the fridge for at least half an hour.
  • Preheat oven to 180°C / 375°F
  • Fry the bacon until most of the fat has been cooked out and the bacon is almost crispy. Drain on paper towel and allow to cool.
  • Roll ⅔ of the pastry to about ¼ inch thickness and line your pie dish. Let it overlap the edges slightly.
  • Layer the bacon on the bottom of the lined pie dish
  • Break each of the 6 eggs on top of the bacon at roughly evenly spaced intervals.
  • Mix the remaining 2 eggs with the cream and milk, season with salt and pepper (optional)
  • Pour the egg mix slowly over the bacon and eggs in the pie dish allowing it to fill any gaps.
  • Roll the remaining ⅓ of the pastry into a circle and place it on top of the pie.
  • Crimp the edges of the pie to seal and cut off any excess pastry. You could use the trimming to cut leaf shapes to decorate the top of the pie.
  • Pick holes on the top of the pastry with a fork to allow steam to escape whilst cooking and then brush with a little beaten egg and milk to glaze.
  • Place in the oven and bake for approximately 35 minutes until golden brown.
  • Remove from the oven. You can eat this either hot or cold.

  • Heat oven to 400°F. Grease 9-inch glass pie plate. Sprinkle bacon, cheese and onion into pie plate.
  • In medium bowl, beat remaining ingredients until blended; pour into pie plate.
  • Bake 35 to 40 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before serving.

One 9-inch frozen uncooked pie crust, thawed
All-purpose flour, for dusting
1 tablespoon extra-virgin olive oil
4 ounces thinly sliced pancetta, chopped into 1/4-inch pieces
2 medium zucchini, ends trimmed, halved lengthwise, cut into thirds and then 1/4-inch pieces
2 large shallots, chopped (1/2 to 2/3 cup)
1 large clove garlic, finely chopped
4 large eggs, at room temperature
1 cup heavy whipping cream
1 cup (4 ounces) coarsely grated fontina cheese
2 tablespoons chopped fresh basil
1 teaspoon Dijon mustard
3/4 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon freshly grated or ground nutmeg

Steps:

  • Place an oven rack in the center of the oven and preheat to 450 degrees F.
  • Unroll the crust on a lightly floured work surface. Using floured fingertips, seal any tears in the dough. Sprinkle the dough very lightly with flour. Using the bottom paper to lift, turn the dough over into 9-inch-diameter ceramic or glass pie dish. Peel off the remaining sheet of paper. Trim the dough overhang to 3/4 inch. Fold the overhang under and form a smooth top edge. Crimp the edge decoratively. Pierce the bottom and sides of the crust all over with a fork. Chill the crust at least 10 minutes.
  • Bake the crust until deep golden around the top edge and light golden on the bottom, about 10 minutes. Set aside to cool.
  • Reduce the oven temperature to 375 degrees F.
  • Heat the olive oil in a large nonstick skillet over medium-high heat. Add the pancetta cook until brown and crisp. Using a slotted spoon, transfer to paper towels to drain and cool, reserving the pancetta drippings in the skillet.
  • Add the zucchini, shallots and garlic to the skillet. Saute over medium heat until the zucchini is just barely tender, tossing occasionally, 5 to 6 minutes. Cool the zucchini slightly, about 10 minutes.
  • In a medium bowl, whisk the eggs and cream. Add the cheese, basil, cooled pancetta, mustard, salt, pepper, nutmeg and cooled zucchini mixture. Whisk to blend. Pour the custard into the cooled pie crust.
  • Bake the quiche until the sides are slightly puffed and brown and the center is set, 35 to 40 minutes. Cool on a rack 20 to 30 minutes, and then serve warm or let cool completely and serve at room temperature.

Steps:

  • Bake pastry shell according to package directions; cool. Place tomatoes in the crust; sprinkle with bacon. In a small bowl, combine the cheese and mayonnaise. Spoon over bacon in the center of pie, leaving 1 in. around edge. , Bake at 350° for 30-40 minutes or until golden brown (cover edges with foil if necessary to prevent over browning).
