1-1/4 pounds extra-lean ground turkey
1 package (16 ounces) frozen stir-fry vegetable blend, thawed
1/3 cup reduced-sodium teriyaki sauce
1/4 cup hoisin sauce
3 tablespoons reduced-fat creamy peanut butter
2 tablespoons minced fresh gingerroot
1 tablespoon rice vinegar
1 tablespoon sesame oil
3 garlic cloves, minced
4 green onions, chopped
10 Boston lettuce leaves
Additional hoisin sauce, optional

Steps:

  • In a large nonstick skillet coated with cooking spray, cook turkey over medium heat until no longer pink., Coarsely chop stir-fry vegetables; add to the pan. Stir in the teriyaki sauce, hoisin sauce, peanut butter, ginger, vinegar and oil. Stir-fry over medium-high heat for 5 minutes. Add garlic; cook 1 minute longer., Remove from the heat; stir in onions. Place a scant 1/2 cup turkey mixture on each lettuce leaf; fold lettuce over filling. Serve with additional hoisin sauce if desired.

1/4 cup shredded carrots
6 ounce mushrooms ((coarsely chopped))
1 can sliced water chestnuts ((8 ounce, drained and coarsely chopped))
2 green onions ((chopped))
1 clove garlic ((minced))
3 Tablespoons hoisin sauce
2 Tablespoons low sodium soy sauce
1 Tablespoon rice wine vinegar
2 teaspoons red chili paste
12 butter lettuce leaves ((Boston and Iceberg lettuce will also work!))

Steps:

  • In a medium-sized skillet over medium-high heat, add the ground turkey. Cook and crumble until it is almost cooked throughout. Add carrots, mushrooms, water chestnuts, green onions, and garlic. Continue to cook for 1-2 minutes until turkey is cooked and veggies are tender.
  • Add the hoisin sauce, soy sauce, rice wine vinegar, and chili paste. Stir and let simmer for 1-2 minutes. Serve on butter lettuce leaves.

2 teaspoons sugar
2 teaspoons sesame oil
1 teaspoon Thai chili sauce, optional
1 pound lean ground turkey
1 celery rib, chopped
1 tablespoon minced fresh gingerroot
1 garlic clove, minced
1 can (8 ounces) water chestnuts, drained and chopped
1 medium carrot, shredded
2 cups cooked brown rice
8 Bibb or Boston lettuce leaves

  • In a small bowl, whisk soy sauce, sugar, sesame oil and, if desired, chili sauce until blended. 1/2 cup hoisin sauce
1/4 cup crunchy peanut butter
1/4 cup MIRACLE WHIP Dressing
1/2 tsp. crushed red pepper
1 lb. ground turkey
1 Tbsp. peanut oil
1 bunch green onions, chopped
1 head Boston lettuce, leaves separated

Steps:

  • Mix first 4 ingredients until blended; set aside.
  • Cook turkey in hot oil in large skillet on medium-high heat until turkey is no longer pink, stirring occasionally. Reduce heat to medium. Stir in hoisin sauce mixture and onions until blended. Cook 3 min. or until heated through, stirring frequently.
  • Spoon evenly down centers of lettuce leaves; roll up. Serve immediately.

1 medium yellow onion, diced
2 tablespoons soy sauce
2 cloves garlic, minced
1 pound ground turkey
1 tablespoon soy sauce
1 tablespoon rice vinegar

1 teaspoon sesame oil
¼ teaspoon red pepper flakes
¼ teaspoon ground ginger
1 head lettuce, separated into leaves

Steps:

  • Heat olive oil in a pan over medium-high heat. Add onion and soy sauce; cook until tender, about 5 minutes. Stir in garlic; cook until fragrant, about 1 minute. Add turkey and cook, breaking into smaller pieces, until no longer pink, about 5 minutes.

2 teaspoons vegetable oil
8 ounces white mushrooms, chopped
3 scallions, chopped
2 cloves garlic, minced
One 6-ounce can water chestnuts, chopped
1/4 cup soy sauce
1 tablespoon brown sugar
1 tablespoon rice wine vinegar
3 tablespoons soy sauce
2 tablespoons rice wine vinegar
1 tablespoon honey
1 tablespoon Dijon mustard or spicy mustard
1 tablespoon Sriracha sauce
1/2 teaspoon sesame oil
8 to 12 large iceberg lettuce leaves, cleaned and dry
Shredded carrots, for serving
Bean sprouts, for serving
Chopped fresh cilantro, for serving

Steps:

  • For the filling: Brown the turkey in the oil in a large saute pan over medium-high heat until no longer pink. Add the mushrooms, scallions, garlic and water chestnuts, and cook until the mushrooms soften. In a small bowl, mix the soy sauce, brown sugar and vinegar, pour over the turkey mixture and cook 1 minute. Remove from the heat.
  • For the drizzling sauce: In a small bowl, whisk together the soy sauce, vinegar, honey, mustard, Sriracha, sesame oil and 1/4 cup water.
  • Serve the turkey mixture with the lettuce leaves, drizzling sauce and vegetables for lettuce wrap assembly.

  • Heat 2 T oil in a large skillet.
  • Add turkey and cook about 5 minutes, stirring to break up the meat; remove from skillet.

1/2 cup apricot preserves
1/3 cup fresh lime juice
2 tablespoons lite soy sauce
2 garlic cloves, minced
1 teaspoon cornstarch
1 tablespoon dark sesame oil or vegetable oil
2 boneless skinless chicken breast halves, finely chopped
1/2 cup chopped seeded cucumber
1/2 cup grated carrot
2 tablespoons chopped peanuts
1 teaspoon grated gingerroot
1 teaspoon chopped garlic
16 leaves (about 2 heads) butterhead (Bibb or Boston) lettuce

Steps:

  • In small bowl, combine preserves, lime juice, soy sauce and garlic; mix well. Spoon 1/4 cup sauce into 1-cup measuring cup. Stir in cornstarch until smooth; set aside. Refrigerate remaining sauce in bowl until serving time.
  • Heat oil in medium skillet over medium-high heat until hot. Add chicken; cook 5 to 7 minutes or until browned, stirring frequently. Stir in cucumber, carrot, peanuts, gingerroot and garlic. Stir in reserved sauce with cornstarch. Cook 2 to 3 minutes or until bubbly and thickened, stirring constantly. Spoon mixture into shallow dish. Cover; refrigerate 30 minutes or until cooled.
  • Spoon 2 tablespoons chicken mixture onto center of each lettuce leaf. Fold sides of lettuce in toward center; roll up like burrito. Secure with toothpicks. Place seam side down on serving platter. Serve immediately, or cover and refrigerate until serving time. Serve wraps with sauce.
