ALL-BUTTER EASY PIE DOUGH

Steps:
- In the bowl of a food processor fitted with the blade attachment, pulse together the flour, salt, sugar and butter until the mixture resembles cornmeal with some pea-size pieces of butter remaining.
- In a small bowl, stir together the ice water and the lemon juice. Slowly add the liquid to the flour mixture, pulsing, until the dough just comes together. Squeeze a small piece of dough between your thumb and index finger to make sure it holds its shape.
- Turn the dough out onto a lightly floured surface and divide it in half. Gently turn over each piece of dough a few times so that any dry bits are incorporated. Form each piece into a loose disk, wrap in plastic, and refrigerate for at least 20 minutes.

- Add flour, eggs, yolks, olive oil, and salt to the bowl of a food processor. Process until dough comes around the blade of the processor, and continue to blend. Add additional flour, a half tablespoon at a time, until dough is smooth and still slightly tacky, about 1 minute. If dough is dry, add water, one teaspoon at a time.
- Wrap dough in plastic wrap and let rest at least 1 hour at room temperature. If resting longer than 4 hours, transfer to refrigerator, where dough can rest up to 12 hours. Remove from the refrigerator 1 hour before rolling.
- Unwrap dough and divide into 6 roughly equal portions. On a lightly floured surface, press into a rectangular shape with your palms, and then roll to a dimension of 9" x 12". Dough should be very thin.
- With the long side perpendicular to you, fold pasta sheet at 3″ intervals to form a flat roll. Use a sharp knife to cut into ½-inch wide noodles. Gently use unfurl the pasta, toss lightly with flour if necessary to keep from sticking, and place on a baking sheet, lightly covered with a clean kitchen towel, until ready to cook. Repeat with remaining dough.
- To boil noodles, bring a large pot of generously salted water to a boil. Add noodles, gently stir, and cook, 2 minutes. Drain and serve with your favorite sauce.

SIMPLE PASTA DOUGH
This is a very traditional fresh egg pasta dough. It does not contain olive oil or water. When you cook it, it will be very light. In the cook time I said 2 minutes, but it really depends on what you are going to do with the dough. You could make lasagne sheets, or you could make fettucini, so these cooking times will be different.

- In food processor, or by hand if you don't have a food processor, mix the flour and salt.
- Add eggs, and process (mix) until just starting to come together.
- Turn out onto a floured bench and knead until satiny, smooth and a bit springy.
- This will take 5-10 minutes.
- It should not be sticky.
- If it's sticky, knead in a little more flour.
- Wrap with plastic wrap and leave it on the counter to rest for an hour.
- The dough will then be ready to roll either by hand or in a machine.
EASY HOMEMADE PASTA DOUGH
Consistently great and easy pasta dough. This makes really great homemade linguine or ravioli for a manual pasta machine. If its too sticky, just roll a bit in flour. This recipe makes enough pasta for 24 small raviolis or 4 servings of linguine. Whatever pasta you make should take no more than 4 to 6 minutes to boil.

- Turn dough out onto a work surface and knead for 10 minutes. Let dough rest for 5 to 10 minutes. Divide dough into 8 balls and use a pasta machine to roll and cut dough into desired pasta shape.

- Preheat oven to 400 degrees F (200 degrees C).
- Place all ingredients in 9 inch pie pan. Stir together with fork. Pat mixture into bottom and up the sides of the pan. Poke holes in bottom and side of crust.
- Bake for 15 minutes in the preheated oven, or until light brown. Use as directed in favorite pie recipe.

EASY SPAGHETTI PIE
This was a recipe that I learned from a neighbor in Ohio. There are other recipes out there like this one, but this is the easiest one I've found, and in my opinion, the best tasting...I always make 2 of these at a time and share the 2nd with friends who in turn share a dish with my family...Or you could make it all in one big 9 x 13" rectangular pan...It's a keeper for sure! (And quite the ice-breaker, I must say!)

- Brown ground beef and garlic in skillet. Drain well.
- Mix cooked and drained ground beef/garlic mixture with the Prego spaghetti sauce in a large skillet. Cook on medium/low until heated through.
- Beat eggs and add parmesan cheese in a large bowl.
- Add cooked and drained pasta (cooled slightly so as not to "scramble" the eggs) and toss well to coat.
- Spread pasta mixture on bottom and up sides of 2- 9" glass deep dish pie plates. (Press it down firmly with a spoon to resemble the shape of a pie crust.).
- Sprinkle 1/2 tablespoons Italian Seasoning evenly on pasta mixture on each 9" pie.
- Spread 1/2 Ricotta cheese evenly on EACH pie, over the pasta mixture.
- Top each pie with 1/2 the meat mixture.
- Sprinkle each pie with 1 cup mozzerella cheese. (I sprinkle a little bit more Parmesan cheese on top -- ).
- Bake in a preheated 350 degree oven for 20 minutes, until the cheese melts and is SLIGHTLY crispy on top.
- Let stand and cool for 5 minutes, and then cut into wedges.
- YUMMMMY!
