Original recipe is a twist on my Mom's version. Fast and easy dessert, great for fall season when apples are freshest and the cranberries come in. I have made it without the apples or using frozen cranberries. I enjoy it as a dessert and as a breakfast treat around the Thanks-Mas season. Loaded with antioxidants! I have also made a wheat-free version using nut flour. Serve plain or topped with ice cream, whipped cream, or a drizzle of heavy cream.

1 (12 ounce) package fresh cranberries
2 apples, or more to taste, cut into 1-inch pieces
½ cup raisins
¼ cup walnuts
1 ¼ cups white sugar, divided
ground cinnamon
1 cup all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 egg
¼ cup butter, melted

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Butter a 9x9-inch glass baking pan.
  • Mix cranberries, apples, raisins, and walnuts gently in the baking pan. Sprinkle with 1/4 cup sugar and cinnamon.
  • Combine remaining sugar with flour, baking powder, salt, egg, and butter in a medium bowl. Mix until crumbly. Spread topping over the apple mixture.
  • Bake in the preheated oven until topping is golden and inside is bubbling, about 50 minutes. Remove from oven and let cool for 5 to 10 minutes.

2 cups fresh or frozen cranberries, chopped
1-3/4 cups sliced peeled tart apples
1/2 cup slivered almonds, toasted
1 tablespoon grated orange zest
1-3/4 cups sugar
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/8 teaspoon salt
Pastry for double-crust pie (9 inches)
2 tablespoons butter, melted

Steps:

  • Preheat oven to 400°. Combine cranberries, apples, almonds and orange zest. In another bowl, mix sugar, flour, cinnamon, nutmeg and salt; add to fruit mixture and toss gently., On a lightly floured surface, roll one half of dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust even with rim. Add filling. Drizzle with butter. Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edge. Cut slits in top., Bake until crust is golden brown and filling is bubbly, 45-50 minutes. Cool on a wire rack.

3/4 pound bulk Italian sausage
2 celery ribs, finely chopped
1 small onion, finely chopped
6 garlic cloves, minced
1 can (14-1/2 ounces) chicken broth
1/2 cup butter, cubed
1 package (12 ounces) seasoned stuffing cubes
1-1/2 cups chopped apples
1 cup dried cranberries
1/2 cup slivered almonds
1-1/2 teaspoons dried sage leaves
1-1/2 teaspoons dried thyme
1/8 teaspoon pepper
Dash salt
1 to 1-1/2 cups apple cider or juice

Steps:

  • Preheat oven to 350°. In a Dutch oven, cook sausage, celery, onion and garlic over medium heat until sausage is no longer pink; drain. Add broth, stirring to loosen browned bits from pan. Add butter; cook and stir until butter is melted. Remove from the heat., Stir in stuffing cubes, apples, cranberries, almonds, sage, thyme, pepper, salt and enough cider to reach desired moistness. Transfer to a greased 13x9-in. baking dish., Cover and bake 25 minutes. Uncover; bake until lightly browned, 5-10 minutes.

1 1/2 cups quick-cooking oats
1 cup packed brown sugar
1 cup cold butter or margarine
1/2 cup chopped pecans
8 cups thinly sliced peeled apples (about 5 large)
1 bag (6 oz) sweetened dried cranberries
1/2 cup granulated sugar
1 tablespoon ground cinnamon
1 container (8 oz) sour cream
3 eggs
1/2 gallon vanilla ice cream

Steps:

  • Heat oven to 375°F. Spray 15x10-inch pan with cooking spray.
  • In large bowl, mix Bisquick mix, oats and brown sugar. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture is crumbly. Remove 1 1/2 cups crumb mixture to small bowl; stir in pecans. Set aside for topping. Pat remaining crumb mixture into bottom of pan.
  • In large bowl, toss apples, cranberries, granulated sugar and cinnamon. In small bowl, whisk together sour cream and eggs. Pour over apple mixture; toss to coat. Spoon filling over crust; sprinkle reserved crumb/nut mixture over filling.
  • Bake 45 to 55 minutes or until topping is golden brown and apples are tender. Cool 30 minutes. Cut into 8 rows by 4 rows. Serve warm with ice cream.

2 pounds Granny Smith apples - peeled, cored and thinly sliced
¾ cup cranberries
¼ cup white sugar
3 teaspoons ground cinnamon
1 teaspoon ground nutmeg
⅓ cup quick-cooking oats
⅓ cup all-purpose flour
½ cup packed light brown sugar
¼ cup butter, cut into pieces
½ cup chopped pecans

Steps:

  • Preheat oven to 375 degrees F (190 degrees C.) Butter an 8 inch square baking dish.
  • In a large bowl, mix together apples, cranberries, white sugar, cinnamon and nutmeg. Place evenly into baking dish.

1/2 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped fresh or frozen cranberries
1/2 cup chopped walnuts

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Stir in cranberries and walnuts., Spread into a greased 13-in. x 9-in. baking pan. My boss makes this bread every holiday season, and it is soooo good. I couldn't believe my life was devoid of cranberry bread before I met my boss! :) *note - this makes 2 loaves of bread *note2 - the bread requires 2 days of refrigeration before serving. (and it freezes really really well)

3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups sugar
1/2 cup shortening
2 eggs
1/2 cup orange juice
1/2 cup sour cream
1 cup chopped nuts (I use pecans, but walnuts would also work)
1 1/2 cups coarsely chopped fresh cranberries
1 cup apple, peeled,cored &,shredded

Steps:

  • Heat oven to 350*.
  • Grease& flour two 9x5 loaf pans.
  • Combine flour, salt& soda- sift together in medium bowl, and set aside.
  • In large mixing bowl, cream sugar and shortening.
  • Add eggs, sour cream& orange juice.
  • Stir flour in until just moistened.
  • Fold in cranberries, shredded apple and nuts.
  • Divide mixture between prepared loaf pans; bake 50 minutes, or until a tester comes out clean.
  • Bread should be golden brown.
  • Cool 10 minutes in pans, then cool on rack until cool.
  • Wrap each loaf tightly and store in refrigerator for 2 days before slicing, or freeze.
