This recipe is a combination of my two favourite meatball recipes. One of them being Recipe #143735. Don't be fooled by the long list of ingredients, these are very easy to make!

1/2 lb ground beef
1/2 lb ground medium Italian sausage
3/4 cup Italian breadcrumbs
1/4 cup parmesan cheese
1/4 cup milk
1/2 teaspoon pepper
1/2 teaspoon Worcestershire sauce
1 egg
1/4 cup onion, chopped
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
1/2 teaspoon garlic, minced

Steps:

  • Preheat oven to 400F.
  • Mix all ingredients together well using your hands.
  • Shape into 15-20 balls.
  • Place balls in an ungreased pan and bake for 20-25 minutes, until the juices run clear.
  • Serve with your favourite pasta sauce, over spaghetti noodles, with a glass of red wine (optional)!

¼ cup olive oil
2 large yellow onions, chopped
10 cloves garlic, minced
kosher salt, to taste
pepper, to taste
½ teaspoon red pepper flakes
12 oz tomato paste
55 oz crushed tomato, 2 cans
1 tablespoon dried basil
1 tablespoon dried oregano
1 tablespoon dried parsley
1 lb ground beef
1 lb ground pork
1 cup bread crumbs
½ cup ricotta cheese
¼ cup fresh parsley, chopped
2 large eggs, beaten
½ cup grated parmesan cheese
¼ cup milk
kosher salt, to taste
black pepper, to taste
1 lb dried spathetti
fresh basil, chopped
grated parmesan cheese, fresh

Steps:

  • Preheat the oven to 425°F (220°C). Set a wire rack over a baking sheet and grease with nonstick spray.
  • Make the marinara sauce: Heat the olive oil in a large saucepan over medium heat. Add the onions and garlic and season with salt, pepper, and the red pepper flakes. Cook until soft and caramelized, about 15 minutes.
  • Set aside ⅓ cup (50 G) of the cooked onions and garlic for the meatballs and let cool.
  • Stir the tomato paste into the onions and cook until browned and aromatic, 3-5 minutes.
  • Add the crushed tomatoes, dried basil, dried oregano, and dried parsley. Stir together and bring to a boil. Reduce the heat to low, cover, and simmer for at least 30 minutes.
  • Make the meatballs: In a large bowl, combine the ground beef, ground pork, reserved onion and garlic mixture, bread crumbs, ricotta, parsley, eggs, Parmesan, milk, salt, and pepper. Mix with your hands until well combined.
  • Shape about 2 ounces (55 G) of meat at a time into balls and set on the prepared wire rack.
  • Bake the meatballs for 20 minutes, until the outsides are browned and the centers are tender and juicy and reach about 155˚F (68˚C).
  • Bring a large pot of water to boil and add a generous pinch of salt. Cook the pasta according to the package instructions, 7-10 minutes, until al dente. Stir occasionally to keep the noodles from sticking together.
  • Drain the pasta and add it directly to the simmering marinara sauce. Reserve some pasta water, in case you need it to loosen the sauce. Stir the pasta into the sauce until fully coated.
  • Add the pasta to serving bowls, top with the meatballs, and garnish with Parmesan, fresh basil, and cracked pepper.
  • Enjoy!

1/4 cup water
1 small onion, finely chopped
1-1/3 cups soft bread crumbs
2/3 cup grated Parmesan cheese
2 garlic cloves, minced
2 teaspoons Italian seasoning
1-1/2 teaspoons salt
1/4 teaspoon pepper
2 pounds ground beef

Steps:

  • Preheat oven to 375°. In a large bowl, combine eggs, water, onion, bread crumbs, Parmesan cheese, garlic and seasonings; mix well. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Place meatballs on greased racks in shallow baking pans. Bake, uncovered, until no longer pink, 15-18 minutes. , Freeze option: Freeze cooled meatballs in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in the microwave.

3 tablespoons olive oil, divided
1 onion, minced
4 cloves garlic, minced
1 tablespoon Italian seasoning
1 pound medium ground beef
1 pound lean ground pork
2 eggs, beaten
1 cup bread crumbs
1 cup freshly grated Parmesan cheese
1 cup milk
1 teaspoon salt
1 teaspoon ground black pepper

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Drizzle a large baking sheet with about 2 tablespoons olive oil.
  • Heat remaining olive oil in a small saute pan over medium heat. Cook and stir onion in the hot oil until translucent, 5 to 7 minutes. Add garlic and Italian seasoning; continue to saute until garlic is softened, 2 to 3 minutes. Remove from heat and allow to cool enough to handle.
  • Combine beef, pork, bread crumbs, Parmesan cheese, milk, onion mixture, salt, and pepper in a large bowl. Mix together using your hands as quickly as possible as overmixing can produce a tough meatball.
  • Form 1 1/2-inch meatballs and place on the prepared sheet.
  • Bake in the preheated oven until browned and no longer pink in the centers, about 30 minutes, turning them over after 15 minutes.

1 onion, peeled and halved
28 oz crushed tomato, 1 can
½ cup unsalted butter
1 teaspoon salt
1 lb ground pork
1 lb ground beef
1 onion, finely chopped

1 cup shredded parmesan cheese
1 cup panko breadcrumbs
¾ cup fresh parsley, finely chopped
2 tablespoons worcestershire
1 egg
2 teaspoons salt

1 lb spaghetti
parmesan cheese, to serve

Steps:

  • Preheat the oven to 400˚F (200˚C).
  • Add the crushed tomatoes, butter, onion, and salt to a pot and bring to a simmer over medium heat.
  • Lower the heat and cook for 45 minutes, until the onions are soft and starting to break apart. Remove onion.
  • In a bowl, mix the ground beef, ground pork, panko, Parmesan, egg, garlic, onion, Worcestershire, salt, pepper, and parsley until fully combined.
  • Take a golf ball-sized handful of the meat mixture and roll it into a ball. Transfer to a baking sheet. Repeat with the remaining meat.
  • Bake the meatballs for 16 minutes.
  • Bring a pot of water to a boil, and cook the spaghetti according to the packaging instructions.
  • Drain pasta and toss lightly in about a tablespoon of oil (optional).
  • Pour the sauce over the pasta. Transfer the cooked meatballs and top with Parmesan.
  • Enjoy!

I make Italian food often casually and from memory, but rarely record the recipes. When I made meatballs using this recipe my family instantly asked if I had recorded the steps. I got up from the table and wrote it down while it was fresh in my mind. It has become a favorite treat for everyone. On the down side, my family became "meatball snobs" and no longer order them at restaurants because they will constantly compare my meatballs favorably.

1 lb lean ground beef
1 lb ground sausage, Country style
1 garlic clove, crushed
1 tablespoon garlic salt
1 teaspoon fresh coarse ground black pepper
1 teaspoon johnny's seasoning salt
1 egg
1 1/2 cups breadcrumbs
1 tablespoon italian seasoning
1/4 cup water

Steps:

  • 1.Add all ingredients into a large bowl.
  • 2.Knead / Mix all ingredients together with clean hands.
  • 3.Chill mixture for 30 minutes or until firm.
  • 4.Build meatballs using a 1 TBSP cookie dough scooper, and Hand-roll into balls.
  • 5.Place into cast-iron frying pan (you can snugly fit them in if needed).
  • 6.Set heat to medium, add 1/4 cup of water and cover. Simmer for 10 minutes.
  • 7.Remove cover and begin turning meatballs. As the remaining water evaporates, the edges of the meatballs will become crispy and brown. Turn frequently until all sides are seared.
  • 8.This is the best part - As the cook you are responsible to ensure the meat is cooked through. So pop one out and cut it in half. If there is ANY pink showing then it isn't ready. If not, then do a "quality control check" with a bit of red sauce you may have simmering at the same time. Be careful though - they taste best out of the pan and multiple checks will draw attention from the family.

1 lb ground beef (or any ground meat)
1 cup breadcrumbs
1 egg
1/2 teaspoon thyme (fresh or dried)
2 tablespoons fresh flat-leaf Italian parsley
1 teaspoon extra virgin olive oil (extra virgin olive oil)
1 tablespoon minced garlic
salt and pepper

Steps:

  • Preheat your oven on BROIL to 300* F.
  • First, you start off by getting your ingredients ready to go.
  • Take the ground beef ( or whatever you are using), and put it in a medium size mixing bowl.
  • Then, add your bread crumbs, thyme, and parsley with your ground meat and mix together with your hands.(it gets messy).
  • Now, mince your garlic and add that to the meat as well as add your salt and pepper (if you desire).
  • Last, add 1 teaspoons of EVOO (Extra-Virgin olive oil) and mix all together.
  • Make sure your oven is ready to go and make sure the temp (300 degrees) and your broiler is on.
  • Make 9 evenly sized meatballs and place them on your cooking sheet.
  • Broil for about 25-30 minutes.
  • Enjoy!
