PIEROGI CASSEROLE

My husband never tries of this hearty casserole, no matter how many times I serve it. It's great for potlucks, too!-Margaret Popou, Kaslo, British Columbia

Number Of Ingredients 10

1 cup finely chopped onion
1/4 cup butter, cubed
2 cups 4% cottage cheese, drained
1 large egg
1/4 teaspoon onion salt
2 cups mashed potatoes (with added milk and butter)
1 cup shredded cheddar cheese, divided
1/4 teaspoon salt
1/8 teaspoon pepper
9 lasagna noodles, cooked and drained

Steps:

  • In a skillet, saute onion in butter until tender; set aside. In a bowl, combine cottage cheese, egg and onion salt. In another bowl, combine potatoes, 2/3 cup cheddar cheese, salt and pepper. Place 3 noodles in a greased 13x9-in. baking dish. Top with cottage cheese mixture and 3 more noodles. Top with potato mixture, remaining noodles and sauteed onion. Top with remaining 1/3 cup cheese. Cover and bake at 350° until heated through, 25-30 minutes. Let stand 10 minutes before serving.

16 -20 frozen pierogies, Cheemo
1 tablespoon butter or 1 tablespoon margarine
1 onion, chopped
1 green pepper, chopped
1/2 cup cooked ham, chopped
1/4 cup milk
1 (10 1/2 ounce) can cream of mushroom soup
1/4 cheddar cheese, grated

Steps:

  • Saute butter, onion, and pepper in a skillet for five minutes.
  • In a medium casserole dish, combine perogies, onion, pepper and ham.
  • Mix milk and soup in a separate dish.
  • Pour over casserole.
  • Top with shredded cheese.
  • Bake for 35 minutes at 350 degrees Fahrenheit.

Easier Than Perogy Casserole image

I love perogies but not all the work it takes to make them. I decided there had to be an easier way and this is what I came up with.

Number Of Ingredients 8

8 ounces lasagna noodles
2 cups cheddar cheese, shredded
4 cups mashed potatoes
1/2 teaspoon salt
1/2 teaspoon onion salt
1/4 teaspoon pepper
1/2 cup butter
1 whole onion, sliced

Steps:

  • Cook noodles as directed on package. Drain.
  • Mix cheese, mashed potatoes, salt, onion salt and pepper together.
  • Line bottom of 9x13 pan with one third of the noodles. Next layer one half of the cheese/potato mixture, then another layer of noodles, another layer of cheese/potatoes and ending with a layer of noodles.
  • Melt butter in frying pan and saute onions slowly until clear and soft. Pour over noodles. Cover. Bake 30 minutes in 350 degree oven. Let stand 10 minutes before cutting. Serve with sour cream.

Steps:

  • Melt butter, saute onion for 5 minutes. In casserole combine perogies, onions, and ham. Combine milk and soup and pour over casserole. Top with cheese. Bake 35 mins at 350 until heated throughout.
