Steps:
- Add the butter to a large skillet over medium heat. Cook the shallot for 3-4 minutes until softened, then add the frozen peas to the skillet. Toss the peas to combine with the butter, then add the cooked bacon, fresh thyme and chicken broth.
- Cover the skillet and let the peas steam for 5 minutes until warmed through. Stir and taste for seasonings, adding salt and pepper to taste.

PEA SALAD

- Remove peas from freezer and place in a colander and allow to slightly thaw while preparing the dressing.
- In a large bowl, whisk together mayonnaise, sour cream, sugar, apple cider vinegar, salt, and black pepper.
- Add the peas, bacon, cheddar cheese, and red onion and fold/stir to combine.
- Chill the salad for at least one hour before serving. The salad can be made up to 3 days in advance.

- In a large skillet, cook bacon over medium, stirring occasionally, until fat is rendered and bacon is crispy, 5 to 7 minutes. With a slotted spoon, transfer bacon to a paper-towel-lined plate, leaving fat in skillet.
- Add peas to skillet. Cook, stirring frequently, until heated through, 4 to 6 minutes. Remove from heat; stir in vinegar, and season with salt and pepper. Serve peas topped with bacon.
GREEN PEAS WITH BACON

- Add raw bacon to a skillet and cook until browned and crisp. Remove the bacon from the pan, reserving the fat.
- Add the onion to the bacon fat and cook 3-4 minutes or until tender. Stir in garlic and cook just until fragrant, about 1 minute.
- Add frozen peas and 2 tablespoons water. Cover and cook over medium heat until peas are tender, about 4-5 minutes. Remove lid and cook until liquid evaporates.
- Season to taste with salt and pepper and garnish with crispy bacon.

- Cook peas as directed.
- Place in a serving bowl.
- Cook the bacon and onion together until the bacon is crisp.
- Remove bacon and onion from the skillet and set aside.
- Stir the flour into the bacon drippings.
- Add the vinegar and sugar.
- Cook til bubbly and thickened, stirring constantly.
- Pour the sauce over the peas; top with bacon and onion and serve.
