CHIPOTLE BBQ SAUCE

1 tablespoon canola oil
2 cups diced yellow onion
7 cloves garlic, minced
1 cup ketchup
1 cup chipotle Red Chile Paste, recipe follows
1/2 cup Worcestershire sauce
1/2 cup strong coffee
1/3 cup packed brown sugar
1/4 cup cider vinegar
1/4 cup freshly squeezed lemon juice
1 1/2 teaspoons Dijon mustard
2 teaspoons kosher salt
4 ancho chiles, seeded and stems removed
4 Mexican dried chiles, seeded and stems removed
3 cups chicken stock
1/2 white onion, diced
3 cloves garlic, minced
2 chipotle peppers, seeded and stems removed

Steps:

  • In a large, heavy saucepan heat the oil over medium heat and add the onion and garlic. Saute until they begin to wilt. Add the ketchup and chile paste and saute for 4 minutes. Add all of the remaining ingredients stir and let simmer for 30 to 40 minutes. As the sauce thickens, stir more often so it does not scorch. Remove the sauce from the heat and allow it to cool. Place the sauce in a blender and puree. Store in the refrigerator.
  • Place the ancho and Mexican chiles in a large saucepan and cover them with the chicken stock. Add the onion and garlic. Bring the stock to a boil over high heat, reduce heat and allow to simmer for about 15 minutes or until the peppers have absorbed some liquid and have become soft. Put the pepper mixture, cooking liquid, and chipotle peppers into a blender. Blend on low speed, increasing to high speed as the puree combines.

This is so tasty, it is addictive. I use it on broiled steaks, broiled pork chops, salads, cottage cheese or vanilla ice cream. It is hot and smoky but, can be made less intense in pepper heat.

6 tablespoons dark brown sugar (I use Splenda Blend Brown Sugar)
1/2 cup cider vinegar
1/4 cup molasses
1/4 cup Worcestershire sauce
2 tablespoons dark rum (can substitute a lessor amount of rum extract)
2 tablespoons yellow mustard
1 tablespoon chili powder
2 teaspoons black pepper, freshly ground
2 teaspoons garlic powder
1 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 cup chipotle chile in adobo, finely chopped
2 cups ketchup
2 cups marionberry jam (I use preserves with no sugar added or you can use the Costco brand with sugar)

Steps:

  • In large saucepan, combine sugar, vinegar, molasses, Worcestershire, rum, mustard, chili powder, pepper, garlic powder, allspice and cloves.
  • Bring to simmer over medium heat. Cook, uncovered, until all ingredients are dissolved, stirring constantly, about 5 minutes.
  • Stir in ketchup and bring to boil, stirring constantly.
  • Add salt to taste.
  • Reduce heat slightly, add raspberry jam and 1/4 cup chipotles** and gently simmer sauce, uncovered, until dark and thick, about 30 minutes, stirring often.
  • Use right away or transfer to jars, cover, cool to room temperature and then refrigerate. Sauce will keep several months.
  • Makes 5 cups or 20 servings.
  • Notes:.
  • ** Add the chipotle peppers to taste. Since simmering will bring out the heat in the peppers, start by adding 1/4 cup of chipotles and cook for 30 minutes THEN taste again and add additional peppers if you like it REALLY HOT.
  • As with any recipe you can vary many of the ingredients to taste. Some items that you might want adjusting are the amount of allspice, and/or cloves or the type of preserves. Marion berry, blackberry, raspberry, strawberry, or blueberry, etc.

½ cup diced onions
3 cloves garlic, minced
½ cup ketchup
½ cup beer
⅓ cup distilled white vinegar
2 tablespoons prepared jalapeno pepper jelly
2 tablespoons brown sugar
1 teaspoon dry mustard
1 teaspoon ground cumin
2 teaspoons ground dried chipotle pepper
1 teaspoon paprika
1 teaspoon salt

Steps:

  • Melt the butter in a saucepan over medium heat. Stir in the onion and garlic; cook until the onion has softened and turned translucent, about 5 minutes. Stir in the ketchup, beer, vinegar, jelly, brown sugar, mustard, cumin, chipotle pepper, paprika, and salt. Bring to a simmer, and cook a few minutes until slightly thickened.
