This may not look so pretty, but it was sure gone in a hurry! It's another way that I found to use the Jell-O Cook&Serve Custard that I like to use.

1 frozen pie crust
1 can apple pie filling
1 pkg jell-o cook&serve custard

Steps:

  • 1. Blind bake the frozen pie crust for 5~10min @ 350^
  • 2. Load the full can of pie apples into the crust
  • 3. Make the Custard according to instructions on the box. I cut the milk down a little and do it in the micro-wave.
  • 4. Pour the Custard over the apples and bake about 35~40min @ 350^ or until the Custard is set. Let cool and then into your fridge for a couple hours before you cut. It doesn't get much easier than this! Because I thought the canned apples were too sweet, I plan to poach my own, using a Splenda simple syrup next time. I'm also going to try Pears when they're in season.

5 large Granny Smith apples - peeled, cored and sliced
½ cup white sugar
2 tablespoons all-purpose flour
½ teaspoon ground cinnamon
2 tablespoons lemon juice
½ cup white sugar
½ cup all-purpose flour
½ cup butter
1 recipe pastry for a 9 inch single crust pie

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Combine 1/2 cup sugar, 2 tablespoons flour, and cinnamon. Pour over apples in crust. Sprinkle lemon juice on top.
  • Cut 1/2 cup sugar, 1/2 cup flour, and 1/2 cup butter or margarine together, and top pie with the mixture.
  • Take two 15 inch pieces of parchment paper and enclose pie; fold edges up 3 times. Place on a baking sheet.
  • Bake in preheated oven for 1 hour. Remove from oven, split parchment open and cool pie on wire rack. DO NOT open parchment covering while baking! Serve warm, or at room temperature.

1-1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 cup cold butter
3 cups sliced peeled tart apples, (about 4 medium)
1/3 cup sugar
1 teaspoon ground cinnamon
CUSTARD:
1 cup evaporated milk
1 egg
1/2 cup sugar

Steps:

  • In a small bowl, combine flour and salt; cut in butter until crumbly. Press onto the bottom and up the sides of a 9-in. pie plate. Arrange apples over the crust. Combine sugar and cinnamon; sprinkle over apples. Bake at 375° for 20 minutes. , For custard, whisk milk, egg and sugar in another small bowl until smooth; pour over apples. Bake 25-30 minutes longer or until a knife inserted in the center comes out clean. Cool on a wire rack for 1 hour. Refrigerate for at least 3 hours before serving. Refrigerate leftovers.

I made this for dessert when company was over and I figured if I screwed up, I could always pass it off as apple cobbler with ice cream served over it, but it came out great, looked and tasted like a real apple pie!

2 cups flour
1 cup brown sugar, packed
3/4 cup butter or 3/4 cup margarine, melted
1/2 cup quick-cooking oats
2/3 cup sugar
3 tablespoons cornstarch
1 1/4 cups water
3 cups tart apples, peeled and sliced (I use Granny Smith)
1 teaspoon vanilla extract

Steps:

  • Combine flour, brown sugar, butter/margarine and oats; set aside 1 cup for the topping.
  • Press remaining crumb mixture into an ungreased 9 inch pie plate; set aside.
  • For the pie filling: combine sugar, cornstarch and water in a saucepan until smooth, bring to a boil.
  • Cook and stir for 1 minute or until thickened.
  • Remove from heat and stir in apples and vanilla.
  • Pour filling mixture into crust and top with the 1 cup crumb mixture.
  • Bake at 350 degrees for 45 minutes or until crust is golden brown.

FOR PIE:
1 Single-crust, blind-baked All-Butter Pie Dough shell (see separate recipe)
2 C (263 g) apples, peeled and chopped into 1/2-inch square pieces
1/2 C plus 2 Tbsp (126 g) granulated sugar
2 Tbsp (18 g) all-purpose flour
1/2 tsp kosher salt
1 C (242 g) sour cream
1 large egg
1 tsp (5 g) vanilla paste
FOR WALNUT STREUSEL
1 C (142 g) all-purpose flour
3/4 C (75 g) finely chopped walnuts
1/2 C (100 g) granulated sugar
1/2 C firmly packed dark brown sugar
1 tsp ground cinnamon
Pinch kosher salt
6 Tbsp unsalted butter, melted

Steps:

  • 1. Preheat the oven to 300º F. 2. Spread the apple pieces over the bottom of the pie shell. Place on a baking sheet and set aside. 3. Place the sugar, flour, and salt in a small bowl and whisk until well combined. 4. Whisk together the sour cream, egg, and vanilla paste. 5. Add the dry ingredients and whisk until smooth. Pour into the prepared pie shell, over the apples. With a spatula, submerge any apples that float to the top. 6. Bake 20 to 25 minutes, until the edge of the filling is slightly puffed and the center is dry to the touch. 7. While the pie bakes, prepare the walnut streusel: Combine the flour, walnuts, granulated sugar, cinnamon, and salt in a medium bowl. Pour in the melted butter and mix with your fingers until the mixture resembles coarse meal. 8. When the pie is ready, gently scatter the streusel over the top of the pie and bake 10 to 15 minutes more, until the streusel is crispy. 9. Cool to room temperature, then chill in the refrigerator for at least 1 hour before slicing.

Pinch salt
1 large egg, beaten
1/2 teaspoon vanilla extract
1 cup sour cream

STREUSEL TOPPING:
1/3 cup all-purpose flour
1/3 cup packed brown sugar
2 tablespoons cold butter

Steps:

  • In a large bowl, combine the sugar, flour and salt. Stir in the egg, vanilla and sour cream; stir until smooth. Add apples; mix well. Pour into pie crust. Bake at 375° for 15 minutes. Reduce heat to 325° and bake for 30 minutes more. , For topping, combine flour and sugar in a small bowl. Cut in butter until crumbly. Sprinkle topping over pie; bake 20 minutes longer or until filling is bubbly and topping is browned. Cool on a wire rack. Serve warm or chilled. Store in the refrigerator.

I found this recipe when I was looking for an alternative to double crusted apple pie but a little fancier than the Dutch version. This actually calls for peaches instead of apples, but having none on hand and "baker's itch" I substituted apples,added the cinnamon,and it turned out so well that I have yet to try it with peaches. I like it best served a little warm.

5 -6 large golden delicious apples
8 ounces sour cream
3 large egg yolks
1 cup sugar
1/4 cup all-purpose flour

Steps:

  • Preheat oven to 425.
  • Core, peel and slice apples to 1/4" thick.

  • Beat sour cream, egg yolks, sugar, flour, vanilla and cinnamon with wire whisk until just blended; pour over apples.

This recipe is for the traditional dutch apple pie, found on a Belgian website. It can be served both warm or cold, usually with whipped cream (but ice cream tastes great as well :D ). You will need a *springform* cake pan, or a lot of patience, or you will not be able to get the pie out! Because Dutch recipes generally use grams instead of cups for dry ingredients, I have included the measurements in grams as well. The dough is shortbread-like and may take a lot of time to get right. It took me ages to get it to form a ball, but it worked out fine in the end. If you're getting tired of it, add a little milk, but don't despair for with or without the milk, it *will* from a ball in the end. If you want, you can prepare the apple mixture the previous day and keep it in the fridge, the flavors will blend wonderfully. If you want to prepare the dough in advance, take it out of the fridge in time, because it's really hard to work with when it's just been in the fridge for a whole night. The preparation time is a rough estimate and assumes that you peel the apples while the dough is in the fridge. I'm quite slow at preparing so it could be anywhere between 1 and 2 hours for you. Last but not least, *do* make sure you have a bit of dough left over for the third to last step - you deserve a little something for all that hard work! :D

3/4 cup butter (180g) or 3/4 cup margarine (180g)

3/4 cup raisins (washed and dried, 100g)
1/4 cup granulated sugar (40g)
3 teaspoons cinnamon (or more to taste)
2 1/2 teaspoons lemon juice (or more to taste)
1 egg
3 tablespoons semolina (to absorb the juices)

Steps:

  • For the dough:.
  • Sieve the flour, brown sugar, vanilla and the salt into a bowl.
  • Cut the butter or margarine into small cubes and add these to the flour mixture.
  • Beat the egg and add 3/4 of it to the flour mixture (you will need the rest for the top).
  • Using two knives, mix the butter/margarine and the flour mixture.
  • Using one hand, kneed it to form the dough - you should be able to form it into a ball (this may take quite long).
  • Put the ball of dough in the fridge for about an hour, in the meantime, make the filling.
  • For the filling:.
  • Peel the apples and cut them in cubes (allow the sizes to vary--it'll taste better).
  • In a (large) bowl, combine apple, raisins, (granulated) sugar, cinnamon, the lemon juice and half of the semolina.
  • Mix well and allow the flavors to blend, stirring occasionally.
  • Then:.
  • Butter a 9-inch round springform cake pan, or spray it with a non-stick spray.
  • Line the pan (bottom and sides) with about 3/4 of the dough - as long as the pan is covered, the layer need not be very thick.
  • Cover the bottom with the remaining semolina.
  • Add the filling, but try to leave the juices out.
  • On a lightly floured surface, roll out the remaining dough until it's less than 1/4 inch (1/2 cm) thick.
  • Cut the dough into strips and layer them over the apple pie to form a raster, covering no more than one third of the surface--you should be able to see quite a bit of the apple pieces (see picture).
  • If necessary, use (some of) the remaining dough to make the edges a bit higher.
  • Use the remaining egg to coat the dough strips.
  • Bake the pie at 175°C / 340°F, just below the middle of your oven, for about 75 minutes.
  • If you have any dough left, roll it out, sprinkle with sugar and cinnamon (or left-over apple mixture) and bake it on baking paper for a few minutes.
  • Remove the springform only *after* the pie has cooled.
  • Serve warm (reheat in oven or microwave) or cold, with whipped or ice cream, or freeze.
