Pancakes for four without griddle gridlock? Impress family and friends with a puffy oven pancake that holds all the berries you want.

2 tablespoons butter or margarine
2 eggs
1/2 cup Gold Medal™ all-purpose flour
1/2 cup milk
1/4 teaspoon salt
2 cups assorted fresh berries
Powdered sugar, if desired

Steps:

  • Heat oven to 400°F. In 9-inch glass pie plate, melt butter in oven; brush butter over bottom and side of pie plate.
  • In medium bowl, beat eggs slightly with wire whisk or hand beater. Beat in flour, milk and salt just until mixed (do not overbeat). Pour into pie plate.
  • Bake 25 to 30 minutes or until puffy and deep golden brown. Serve pancake immediately topped with berries. Sprinkle with powdered sugar.

Number Of Ingredients 18

1/2 pint raspberries
1/2 pint blueberries
1/2 cup sugar
1 cinnamon stick
Zest and juice of 1/2 lemon
6 to 7 strawberries, sliced
2 tablespoons sugar
1/2 teaspoon orange zest
1/2 cup all-purpose flour
1/2 cup milk
3 tablespoons unsalted butter, melted, plus 1 tablespoon cold for the pans
2 tablespoons sugar
1 teaspoon vanilla extract
3 large eggs
Pinch salt
Whipped cream, for serving
1 tablespoon fresh mint leaves, sliced into thin ribbons, for serving
1 tablespoon shaved bittersweet chocolate, for serving

Steps:

  • For the berry compote: Combine the raspberries, blueberries, sugar, cinnamon stick, lemon zest and juice and a splash of water to a small pot. Turn the heat to medium and bring to a boil. Reduce to a simmer and cook until the mixture has thickened and the berries have burst, about 7 minutes. Remove the cinnamon stick and keep the compote warm.
  • For the strawberry topping: Meanwhile, toss together the strawberries, sugar and orange zest in a small bowl. Allow the berries to sit and release their juices and for the sugar to dissolve.
  • For the Dutch babies: Preheat the oven to 425 degrees F. Place 2 cast-iron pans in the oven while preheating, about 20 minutes.
  • Add the flour, milk, melted butter, sugar, vanilla, eggs and salt to a large bowl. Whisk to combine; the batter should be smooth but small lumps are OK.
  • Remove the pans from the oven. Divide the remaining cold butter between the pans and let it melt to coat. Add half the batter (about 1/2 cup) to each pan and place immediately in the oven. Cook until golden brown on the sides and puffed, 10 to 12 minutes.
  • Serve the Dutch babies right out of the cast-iron pans topped with compote, strawberries, whipped cream, mint and chocolate shavings. YUM!

1 cup whole milk
1 cup all-purpose flour
2 tablespoons white sugar
¼ teaspoon salt
2 tablespoons margarine
2 medium ripe bananas, cut into 1/2-inch pieces
1 cup sliced fresh strawberries, or more to taste
1 cup blueberries, or more to taste
1 tablespoon white sugar
1 tablespoon lemon juice
1 (8 ounce) container frozen whipped topping, thawed

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Place a 10-inch ovenproof skillet in the oven to heat up.
  • Combine eggs, milk, flour, 2 tablespoons sugar, and salt in a blender; blend until batter is very smooth.
  • Remove hot skillet from the oven. Add margarine and swirl until melted. Pour batter into the hot skillet.
  • Bake in the preheated oven until puffy and golden, about 15 minutes.
  • Meanwhile, toss bananas, strawberries, blueberries, 1 tablespoon sugar, and lemon juice together in a bowl. Spoon compote onto hot pancake and top with a dollop of frozen whipped topping. Cut into wedges and serve immediately.

  • While the oven preheats, place the eggs in a blender or food processor and process until foamy. Add the almond milk, maple syrup, orange zest, 1 teaspoon of the vanilla, flour and salt, and process until well combined. Let stand at room temperature until the oven has preheated.
  • Once the oven has preheated, pulse the pancake batter 2-3 times to redistribute the ingredients. Pour the batter into the skillet evenly and bake 15-20 minutes until golden brown and puffed. Remove from heat -- the pancake will deflate as it cools.
  • While the pancake bakes, whip the cream. Place the heavy whipping cream, granulated sugar and remaining vanilla extract in the bowl of a stand mixer fitted with the whisk attachment. Beat on medium high speed until medium peaks begin to form. Whisk the cream by hand from there until it reaches the desired consistency (be careful not to over whip or the cream will turn into butter).
