DU JOUR DOUGHNUTS
This classic yeast doughnut is a specialty of T. J. and Vera Obias, the husband-and-wife team of pastry chefs at Du Jour Bakery, in Park Slope, Brooklyn. The dough is light and airy, and the sugar crystals add crunch. After cutting out the doughnuts, test whether they have risen enough by touching them with a fingertip; if they spring back slowly, they are sufficiently proofed. Springing back fast means they need more time, and not springing back means they are overproofed.

Yield 8 4-inch doughnuts and 8 doughnut holes
Number Of Ingredients 7
Steps:
- Oil a large bowl. Combine the flour, 1/4 cup sugar, salt and yeast in the bowl of a stand mixer fitted with the dough hook attachment. Turn mixer to speed 1 and stir the ingredients together. Add the eggs and continue to mix on speed 1, scraping bowl and dough hook as necessary, until dough forms, about 2 minutes. Increase speed to 2, then add the butter in 3 additions, making sure butter is completely emulsified before adding more and scraping the bowl and dough hook as necessary, about 10 minutes total. The dough should be smooth and stretchy. Place finished dough in the prepared bowl, cover with plastic wrap and refrigerate overnight.
- Line a baking sheet with parchment paper. Turn the dough out onto a well-floured surface and use a floured rolling pin to roll it to a 1/2-inch thickness. Using a round doughnut or cookie cutter, cut out 4-inch diameter rounds with 1-inch-diameter holes. Arrange the doughnuts on the prepared baking sheet, cover loosely with plastic wrap and let proof at room temperature until visibly puffy and airy, about 1 hour.
- Set a wire rack over a baking sheet and place the remaining 2 cups of sugar in a shallow bowl. In a heavy-bottom large pot or deep fryer, heat at least 2 inches of oil until a deep-fry thermometer registers 350 degrees. Working in batches, use a slotted metal spoon or spatula to carefully place the doughnuts and holes in the hot oil. Fry, flipping once, until light golden brown, about 1 minute per side. When done, transfer each to the wire rack and return oil to 350 degrees between batches. While still warm, roll doughnuts and holes in sugar and serve immediately.

Estimated Reading Time 6 mins
- Maple Bacon Doughnut Bars. When you can't decide whether you're in the mood for sweet or savory, one of these doughnut bars topped with a maple glaze and crumbled bacon will hit the spot.
- German Fastnacht Doughnuts. Fastnacht is Pennsylvania Dutch for fasting night, or the last night of revelry before Ash Wednesday. Traditionally, these pillowy deep-fried doughnuts appear on the table that day to use up the last of the sugar and lard before Lent, but you can enjoy them any time.
- Malasadas. If you've ever visited Hawaii, you've probably had malasadas, a deep-fried doughnut tossed in granulated sugar. Leonard's Bakery makes the most famous ones, but you can give them a run for their money at home with this recipe.
- Apple Cider Doughnuts. Enjoy the taste of autumn any time by whipping up a batch of these light, crispy apple cider doughnuts. You probably have a lot of the ingredients on hand already.
- Deep-Fried Apple Fritters. Technically, apple fritters live in a category all their own. But because they often appear in the case along with doughnuts, we consider them one of that family, too.
- Plain Cake Doughnuts. Despite their name, these simple cake doughnuts taste anything, but boring. Before you get started, spread out some brown paper covered in paper towels to drain the doughnuts.
- Homemade Raised Doughnuts. Because the dough does need to rise, these homemade doughnuts take some time. But their slightly sweet dough, sugar-crusted coating, and tender interior make it a worthy project to impress a special someone or pull out all the stops for a holiday brunch.
- Top Pot Old-Fashioned Doughnuts. Frying these old-fashioned doughnuts at a lower temperature and turning them twice gives them plenty of nooks and crannies for holding a sweet, sticky glaze.
- Homemade Pączki. Traditionally, deep-fried pączki appear on Fat Tuesday, the day before Lent begins. These pillowy Polish doughnuts come filled with rosehip, prune, apricot, strawberry, or sweet cheese filling, or sometimes not filled at all and rolled in sugar instead.
- S'Mores Doughnuts. Made with a sweet marshmallow filling, chocolate glaze, and graham cracker crumbs, these delicious doughnuts taste just like everyone's favorite campfire treat.
