My mom used to make this so it's a comfort food to me. I make it fairly often because it is the quickest easiest recipe that I have. You can have a hot dinner on the table in about 20 minutes.

6 small boneless skinless chicken breast halves (if breast are large, cut in half horizontally)
1 (10 1/2 ounce) can chicken gravy
1 (6 ounce) package chicken flavor stuffing mix
1 1/2 cups hot water

Steps:

  • Spray large nonstick skillet with cooking spray. Add chicken and cook on medium heat for 3 minutes on each side. Add gravy to skillet and cook for 5 minutes or until chicken is cooked through.
  • In bowl, combine stuffing mix and water. Spoon stuffing over chicken in skillet. Cover and cook for 5 minutes or until heated.

Simple & easy, but comforting dinner that smells wonderful cooking. Stove top stuffing (2 boxes) works very well. You may want an extra small jar of gravy for serving.

6 boneless chicken breasts
12 ounces chicken flavor stuffing mix
12 ounces chicken gravy
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/8 teaspoon paprika

Steps:

  • Pre-heat oven to 375.
  • Prepare stuffing according to package directions.
  • Spray a 9 x 13 baking dish with cooking spray.
  • Spoon a small amount of stuffing into underside of each chicken breasts and place into pan.
  • Combine salt, pepper, garlic powder, onion powder and paprika into a small bowl.
  • Sprinkle onto each chicken breast.
  • Spoon remaining stuffing into baking dish around chicken breasts.
  • Cover dish with foil and bake for 30 minutes.
  • Remove from oven
  • Pour gravy over chicken and stuffing.
  • Re-cover with the foil and bake for 15-30 minutes until done.

1/3 cup BREAKSTONE'S or KNUDSEN Sour Cream

Steps:

  • Mix hot water, butter and stuffing mix.
  • Cook chicken in large nonstick skillet sprayed with cooking spray on medium heat 5 min. on each side.
  • Mix soup and sour cream until blended; pour over chicken. Top with stuffing; cover. Cook on low heat 10 min. or until chicken is done (165ºF).

  • Shred or tear the chicken into bite size pieces. Try to get most off the whole chicken as possible, or as much as you think you can handle.
