FRIJOLES BORRACHOS (DRUNKEN BEANS)

Frijoles Borrachos (Drunken Beans) image

Slow simmered pinto beans, frijoles borrachos, or "drunken beans" get their flavor from dark Mexican beer and bacon. Juicy and bursting with flavor!

Provided by Rachel Gurk

Categories     Main Dish

Time 2h50m

Number Of Ingredients 15

16 ounces dried pinto beans ((2 cups))
6 slices uncooked center cut bacon, diced
1 cup finely diced yellow onion ( (about 1 medium yellow onion))
2 jalapeño peppers, ribs and seeds removed, finely diced
2 cloves garlic, minced
1 (12-ounce) bottle of dark beer ( (such as Modela Negra))
3 cups low-sodium chicken broth
1 tablespoon brown sugar
1 tablespoon molasses
1 teaspoon dried Mexican oregano
1 teaspoon chili powder
1 teaspoon salt
½ teaspoon ground cumin
2 teaspoons fresh lime juice
1 tablespoon minced fresh cilantro

Steps:

  • Rinse beans (sort out any foreign objects) and place in a large bowl. Cover with cold water and cover. Soak overnight (at least 12 hours). Rinse and drain well.
  • In a large pot over medium heat, add bacon and cook until lightly brown and fat has rendered, 5-7 minutes.
  • Add onion and jalapeño and cook until softened, about 5 minutes, stirring frequently. Add garlic and cook, stirring, for 1 minute or until fragrant.
  • Add beer and scrape any brown bits off the bottom of the pot.
  • Add beans, broth, brown sugar, molasses, oregano, chili powder, salt, and cumin. Stir to combine and bring to a boil. Reduce heat, partially cover pan, and simmer for 2 ½ hours or until most of the liquid is absorbed and beans are tender, stirring occasionally.
  • Before serving, stir in lime juice and cilantro. Serve in bowls. Serving size: 1/2 cup.

DRUNKEN RICE WITH CHICKEN

Drunken Rice with Chicken image

Drunken Rice with Chicken recipe from Pati's Mexican Table Season 4, Episode 11 "Family Favorites"

Provided by Pati Jinich

Categories     Main Course

Time 1h

Number Of Ingredients 18

1/2 teaspoon saffron threads (crumbled)
2 tablespoons boiling water
6 tablespoons safflower or corn oil (divided)
6 skinless boneless chicken thighs
1 1/2 teaspoons kosher or coarse sea salt (divided, or to taste)
freshly ground black pepper (to taste)
2 cups long or extra long white rice
1/2 cup chopped white onion
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1/2 cup chopped tomato
2 garlic cloves (minced or pressed)
Pinch of ground cumin
Pinch of ground cinnamon
2 whole cloves (stems removed and tops crushed)
1 cup beer
3 1/2 cups chicken broth
1/2 cup peas (fresh or thawed from frozen)

Steps:

  • Place the saffron threads in a small mixing bowl along with the boiling water. Mix and let soak for 10 to 15 minutes.
  • Heat the oil in a large and thick casserole over medium-high heat. Season the chicken with 1/2 teaspoon salt and pepper to taste. Once the oil is hot, brown the chicken for 3 to 4 minutes per side. Remove and place in a bowl. Add a couple more tablespoons of oil to the casserole and scrape drippings, don't remove them though.
  • Add the uncooked rice and sauté for 2 to 3 minutes, until its color starts to change to milky white and the grains separate. Incorporate the onion, green and red bell peppers, tomato and garlic and stir. Add the cumin, cinnamon, crushed cloves, 1/2 teaspoon salt and continue to cook for 4 to 5 more minutes, until vegetables have softened. Pour in the beer, and let it cook and reduce until it is almost absorbed and the alcohol has evaporated, a couple minutes.
  • Place the chicken pieces on top of the rice, pour the chicken broth on top and the saffron and its liquid, as well as the remaining 1/2 teaspoon salt, and stir. When liquid starts to boil, add the peas and cover the pot, reduce heat to low, and continue cooking for about 20 more minutes, or until the rice is cooked through and the liquid has been mostly absorbed.
  • If the rice grains don't seem soft and cooked through, add a bit more chicken stock or water and let it cook for another 5 minutes or so. Turn heat off, and let it sit covered for 5 to 10 minutes. Fluff with a fork and serve.

DRUNKEN NOODLES (PAD KEE MAO)

Drunken Noodles (Pad Kee Mao) image

Drunken Noodles (Pad Kee Mao) is a favorite Thai dish made with rice noodles and Thai basil, often eaten in Thailand on late nights after drinking with friends!

Provided by Bill

Categories     Noodles and Pasta

Time 30m

Number Of Ingredients 21

2 tablespoons water
12 ounces sliced chicken thighs or chicken breast ((340g))
1 teaspoon soy sauce
1 teaspoon oil
2 teaspoons cornstarch
8 ounces wide dried rice noodles ((225g))
1 1/2 teaspoons brown sugar ((dissolved in 1 tablespoon hot water))
2 teaspoons soy sauce ((Thai soy sauce preferred))
1 teaspoon dark soy sauce
1 tablespoon fish sauce
2 teaspoons oyster sauce
pinch ground white pepper
3 tablespoons vegetable or canola oil ((divided))
3 cloves garlic ((sliced))
¼ teaspoon fresh grated ginger
2 shallots ((sliced, about 1/3 cups))
1 scallion ((julienned into 3-inch pieces))
4 Thai red chili peppers ((deseeded and julienned))
1 cup holy basil or Thai basil ((loosely packed))
5 to 6 pieces baby corn ((split in half, optional))
2 teaspoons Shaoxing wine

Steps:

  • Work the 2 tablespoons of water into the sliced chicken with your hands until the chicken absorbs the liquid. Add 1 teaspoon soy sauce, 1 teaspoon oil, and 2 teaspoons cornstarch, and mix until the chicken is evenly coated. Set aside for 20 minutes.
  • Follow the directions on the rice noodle package to prepare your noodles. What we usually do is prepare a stainless steel bowl with hot tap water to soak the noodles for about 15 minutes. Then we just drain them and set aside for cooking.
  • Stir together the dissolved brown sugar mixture, soy sauces, fish sauce, oyster sauce, and white pepper in a small bowl and set aside.
  • Heat your wok until it's close to smoking, and spread 2 tablespoons of oil around the perimeter of the wok. Add the chicken and let it sear for 1 minute on each side until it's about 90% cooked. Remove from the wok and set aside. If the heat was high enough and you seared the meat correctly, your wok should be still clean with nothing sticking to it. If not, you can wash the wok to prevent the rice noodles from sticking.
  • Continue with the wok on high heat and add 1 tablespoon of oil, along with the garlic and grated ginger.
  • After a few seconds, add the shallots. Stir fry for 20 seconds and add the scallions, chili peppers, basil, baby corn and shaoxing wine. Stir-fry for another 20 seconds and add in the rice noodles. Use a scooping motion to mix everything for another minute until the noodles warm up.
  • Next, add the prepared sauce mixture and stir-fry at the highest heat for about 1 minute until the noodles are uniform in color. Take care to use your metal spatula to scrape the bottom of the wok to prevent sticking.
  • Add the seared chicken and stir-fry for another 1 to 2 minutes.
  • Serve!

MEXICAN DRUNKEN BEANS

Mexican Drunken Beans image

Freshly cooked beans with bacon, ham, tomato, and Mexican beer. A recipe courtesy of my good friend Pepe from Tequila, Jalisco.

Provided by gem

Categories     Side Dish

Time 10h20m

Yield 8

Number Of Ingredients 12

1 pound dry mayocoba beans
2 teaspoons vegetable oil
1 white onion, chopped
4 Roma (plum) tomatoes, chopped
1 serrano chile pepper, minced
½ pound bacon, chopped
2 thick slices fully cooked ham, cut into cubes
1 (12 fluid ounce) can or bottle Mexican beer
1 (7 ounce) can pickled jalapeno pepper slices, undrained
½ bunch fresh cilantro, chopped
1 tablespoon chicken bouillon granules
sea salt to taste

Steps:

  • Put mayocoba beans into a large container with enough cool water to cover by several inches. Let beans soak 8 hours to overnight.
  • Drain mayocoba beans and rinse thoroughly; put into a large stockpot. Pour enough water into the pot to cover beans by a few inches; bring to a boil, reduce heat to medium-low and place a cover on the pot, and cook at a simmer until beans are soft in the center, about 90 minutes.
  • While the beans simmer, heat oil in a large skillet over medium heat. Cook and stir onion in hot oil until tender, about 5 minutes; add tomatoes and serrano pepper and simmer until the tomatoes have softened slightly, about 5 minutes. Reduce heat to medium-low and continue cooking until the liquid begins to thicken, about 10 minutes more. Remove from heat.
  • Cook and stir bacon in a large, deep skillet over medium-high heat until very crispy, about 10 minutes; remove bacon from skillet with a slotted spoon and drain on a plate lined with paper towel.
  • Cook ham cubes in the bacon fat in the skillet until browned, about 5 minutes; remove with slotted spoon to the plate with the bacon to drain.
  • Once the beans have cooked, stir the tomato mixture, bacon, ham, beer, jalapeno peppers, cilantro, and chicken bouillon granules into the beans; season with sea salt. Bring the mixture to a simmer and cook until the beans are completely softened, about 30 minutes.
