PRUNE PLUM AND WALNUT BUTTER CAKE

1 tablespoon unsalted butter, at room temperature, plus 8 tablespoons, at room temperature
1 tablespoon unbleached all-purpose flour, plus 1 cup
12 prune plums, halved and pitted
2 tablespoons sugar, plus 1 cup, plus 2 tablespoons
1/4 cup brandy
1 teaspoon grated lemon zest
1/2 teaspoon vanilla extract
1 teaspoon baking powder
1/2 teaspoon kosher salt
2 extra-large eggs, at room temperature
1/4 cup ground toasted walnuts
Confectioners' sugar, for dusting

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-inch springform pan with 1 tablespoon of the butter and dust it with 1 tablespoon of the flour.
  • Toss the plums with 2 tablespoons of the sugar and the brandy; set aside.
  • Cream the remaining 8 tablespoons butter in a large bowl with 1 cup of the sugar, lemon zest, and vanilla until light and fluffy. Sift the remaining 1 cup flour, baking powder, and salt together and beat into the creamed butter.
  • In a separate bowl, beat the eggs until they start to foam. Do not over beat, or the cake will be tough. Add the eggs and ground walnuts to the flour and butter mixture. Mix well.
  • Scrape the batter into the prepared pan. Arrange the plums on top in rings. Sprinkle with any remaining brandy-sugar syrup and the remaining 2 tablespoons sugar.
  • Bake for 1 hour, or until the cake is golden brown on top and a toothpick inserted into the cake (not the plums) comes out clean. Let cool for 10 minutes before removing the sides of the springform pan and serving. Garnish with a dusting of confectioners' sugar.

4 cups pitted dried plums (prunes)
1/2 cup fresh orange juice (from 2 large oranges)
2 teaspoons finely grated lemon zest, plus 1 tablespoon fresh juice
2/3 cup packed light-brown sugar
Pinch of coarse salt
4 cups all-purpose flour, plus more for dusting
2 teaspoons baking powder
3/4 teaspoon coarse salt
1 teaspoon ground cardamom
1/4 teaspoon baking soda
2 sticks unsalted butter, room temperature
3/4 cup granulated sugar
1/2 cup packed light-brown sugar
1 large egg, room temperature
1/2 cup whole milk
Unsweetened lightly whipped cream and ground cinnamon, for serving

Steps:

  • Dried-plum butter: Bring dried plums, orange juice, lemon zest and juice, and 2 cups water to a boil in a covered medium saucepan. Reduce heat to low and simmer, stirring occasionally, until fruit is beginning to break down, 35 to 40 minutes. Stir in 1/4 cup water, brown sugar, and salt, mashing mixture with the back of a spoon until jam-like. Transfer to a medium bowl; let cool completely. Dried-plum butter can be stored in refrigerator, covered, up to 1 week.
  • Cookies: Whisk together flour, baking powder, salt, cardamom, and baking soda in a medium bowl. Beat butter with sugars on medium-high speed until light and fluffy, about 2 minutes. Beat in egg. Reduce speed to low and beat in flour mixture in 2 batches, alternating with milk, until combined. Divide dough into 9 pieces. Shape into disks, wrap each in plastic, and refrigerate at least 1 hour and up to 1 day.
  • Preheat oven to 350 degrees. Working with one dough piece at a time (keep the rest in refrigerator), roll out on a lightly floured surface with a floured rolling pin into a roughly 8 1/2-inch round. Using a paring knife and a cake pan or plate as a guide, cut dough into an 8-inch round. Transfer to a parchment-lined baking sheet; refrigerate while rolling and cutting remaining dough pieces, placing 2 rounds on each sheet.
  • Bake cookies in batches until golden and firm in center, 10 to 12 minutes. Let cool completely on sheets on wire racks.
  • Place 1 cookie on a cake plate and spread with 1/2 cup dried-plum butter, leaving a 1/4-inch border. Top with another cookie and spread with another 1/2 cup dried-plum butter. Continue stacking and spreading until all 9 cookies have been used. (Do not spread filling on top layer.) Wrap in plastic; refrigerate at least 12 hours and up to 1 day.
  • Serve, dolloped with whipped cream and sprinkled with cinnamon.

CAKE INGREDIENTS
1/2 c vegetable shortening
1/2 c sugar
1/2 c buttermilk
1/3 c molasses
1 large egg, slightly beaten
1 tsp vanilla extract
3 1/2 c all purpose flour
1 tsp ground ginger
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
pinch of nutmeg
powdered sugar for dusting
APPALACHIAN APPLE BUTTER FILLING
4 c roughly chopped dried apples
3/4 c dark brown sugar, firmly packed
1 tsp ground ginger
1 tsp cinnamon, ground
6 c apple cider (not juice)

Steps:

  • 1. Preheat oven to 350 degrees. Spray 6 (9-inch) cake pans with nonstick cooking spray. Line bottoms of pans with parchment paper, and spray parchment paper with cooking spray.
  • 2. In a medium bowl, beat shortening and sugar at medium speed with a mixer until creamy. Add buttermilk, molasses, egg and vanilla, beating well. In a large bowl, combine flour, ginger, baking soda, salt, cinnamon and nutmeg. Make a well in center of flour mixture. Add shortening mixture, stirring just until combined.
  • 3. On a lightly floured surface, form dough into a log; cut into six equal portions. Place one portion in each prepared pan, and use fingers to lightly pat dough to edges of pans. Bake for 10 to 12 minutes or until lightly browned. Remove from pans and cool completely on wire racks. Cake will have the consistency of a gingerbread cookie.
  • 4. Cook time: Depends on how big you want your stack. This recipe makes one 9-inch cake with six stacks. Three stacks were baked simultaneously for 10 to 12 minutes The filling (recipe below) takes about an hour. Allow 24 hours for the cake to chill in the refrigerator.
  • 5. Make filling: In large saucepan, combine dried fruit and all dry ingredients. Add enough liquid to cover. Bring to a low boil and cook, stirring often, for 45 minutes. Remove from heat, and let stand for 10 minutes or until cooled slightly. Transfer to the work bowl of a food processor or container of a blender; process until smooth. Use while still warm.
  • 6. To put cake together, place one cake layer on a serving plate or cake stand; spread with about 3/4 cup warm fruit butter filling. Repeat procedure with remaining layers and fruit butter filling, stacking each on previous layer. Do not spread fruit butter filling on top layer. Cover and refrigerate cake for at least 24 hours. Just before serving, dust with confectioners' sugar.

Steps:

  • Preheat oven to 375 degrees. Butter an 8-by-2-inch or a 9-inch cake pan and line bottom with a round of parchment. In a large bowl, whisk together 1 1/2 cups flour, baking soda, and salt.
  • Using an electric mixer, beat butter and sugars until light and fluffy. With mixer on low, beat in eggs, one at a time, until incorporated; beat in vanilla and lemon zest. Beat in half the flour mixture, then sour cream. Add remaining flour mixture; mix just until combined.
  • Spread batter into pan and smooth top with a knife. In a bowl, toss plums with 2 tablespoons flour and sprinkle over batter.
  • Bake until cake is golden, about 30 minutes; loosely tent with foil and bake until cake pulls away from side of pan and a cake tester inserted in center comes out clean, about 35 minutes more. Let cake cool completely in pan. Run knife around cake edge and remove cake from pan. Dust with confectioners' sugar before serving.

½ cup white sugar
1 teaspoon lemon zest
1 cup all-purpose flour

1 ¼ cups plums, pitted and quartered

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease and flour one 9-inch tube pan.
  • Separate the eggs. In a small bowl, beat the egg whites until stiff peaks form, and set aside.
  • In a large bowl, cream the butter and sugar. Beat in the egg yolks and the lemon zest.
  • Stir together the flour and baking powder and then blend the flour mixture into the creamed mixture. Gently fold in the egg whites. Spread the batter evenly into the prepared pan. There will only be a little over an inch of batter. Arrange the plums, skin side down, attractively over the batter.
  • Bake in preheated oven until a tester inserted in the center comes out clean, about 40 minutes. Transfer to a cooling rack and allow to cool before serving.
