CHOCOLATE APRICOT BITES (FRUCHOCS)
Super rich in both fruit and chocolate, these tasty Chocolate and Apricot Bites are a sweet treat.

Steps:
- Preheat the oven to 350 degrees F (180 degrees C).
- In a bowl combine the flour, sugar, and cocoa powder.
- Mix the butter into the bowl with the dry ingredients. Stir until well combined, the mixture is dry, and doesn't form a dough.
- Lightly grease the small slice tray then add the base and press down so it is flat.
- Bake the base in the oven for 8 minutes then remove and let cool.
- In a bowl add the condensed milk and orange food coloring. This step is done here so you can easily mix and adjust the color. Often food colors are bought in packs of four and the orange color requires 1 drop of red to 3 of yellow. Check packets for specific instructions.
- Add the apricots and coconut and stir well so well distributed.
- Add the apricot mixture to the slice pan on top of the chocolate base. Smooth and press down to create an even layer.
- Bake in the oven for 20 minutes, it will look slightly dry but will not brown. Leave aside to cool for at least 30 minutes before adding the chocolate layer.
- Place the chocolate and butter in a heatproof bowl over a pot with about 1 inch of water. Slowly heat the water which will heat the chocolate. Stir occasionally and monitor so it doesn't overheat.
- Using a butter knife drizzle the chocolate back and forth over the top of the apricot slice. This can be in parallel lines, crisscrossed, or similar. Continue to add until all the chocolate is gone. Leave for 30 minutes for the chocolate to set.
- Cut the slice to serve. This is a very rich slice so small bite-sized pieces work best, but if desired it can also be cut into more generous serving proportions as a dessert slice.

The biscuits/cookies I use are Arnott's Granita biscuits but any plain sweet biscuit/cookie can be used here

Steps:
- Grease 19 cms square tin.
- Line with baking paper.
- Place chocolate in microwave bowl.
- Microwave on medium for 2 minutes, stirring every 30 seconds till melted.
- Add biscuits, apricots, raisins and coconut.
- Stir to combine.
- Press mixture into prepared pan.
- Refrigerate, covered for 2 hours or till set.

CHOC-BIT APRICOT SLICE
Another recipe my my favourite paper.......... The Weekly Times. Jeremy Vincent has some fantastic recipes that he has published in this paper. I have been making so many of his recipe's just lately. This recipe is just another one of his recipes that I have made, one of which this family just loved. I did use the option of Lemon icing and these were just so easy and yet so scrumptious!

- Melt the butter, stir in the condensed milk, then cool.
- Add remaining ingredients.
- Press the mixture into a slice pan, about 26 x17 cm and refrigerate.
- Top with lemon icing when cool.

HONEY, DATE AND APRICOT SLICE
A yummy, crunchy slice with (surprisingly) as much flavour as traditional slices high in butter and sugar. This was originally a recipe in Too Good To Be True but I've made changes to remove all butter and further reduce the amount of sugar used. Also low GI.

- In a medium mixing bowl beat the egg white, apple juice concentrate and sugar using an electric mixer. Add the honey and oil to the mixture and beat for 2 minutes.
- With a wooden spoon stir in the coconut, cinnamon, apricots and dates, oats, rice flakes, flour and baking powder. Mix well.
- Pour mixture into a lined slice tin and press down firmly with a metal spoon dipped in hot water.
- Bake in a moderate to hot oven for 20-25 minutes or until golden and brown. Allow to cool before cutting.

Steps:
- Place apricots and sultanas in saucepan with water and honey, simmer til half liquid evaporated. Do not drain.
- Add remaining ingredients except coconut; mix well.
- Divide mixture into 3.
- Shape into logs, 15 cm long.
- Roll in coconut (easier don on plastic wrap and logs wrapped in plastic wrap).
- Chill 2 hours before slicing.
