CILANTRO LIME SAUCE
Vibrant, tangy, and easy to whiz together in a blender or food processor, this cilantro lime sauce is perfect with fish, shrimp, fish tacos, as a chicken marinade or super flavorful shredded chicken. Plus it's easy enough to whip up any night of the week!

Steps:
- Add the oil, garlic, cumin, salt, lime juice, honey and cilantro to a blender or food processor. Blend on low until just combined.
- Use as a drizzle sauce, dipping sauce, dressing, or marinade.
- Make the sauce according to the instructions above. Add half the sauce to a zip-top bag or shallow baking dish along with 2 pounds boneless, skinless chicken thighs or breasts, tossing to coat. Set the other half of the sauce aside.
- Cover and marinate in the refrigerator for at least 30 minutes, or up to 8 hours.
- Uncover and discard the marinade. Shake any excess marinade off the chicken.
- Grill over medium heat, flipping halfway through. Cook until the chicken thighs register 185F to 190F degrees or chicken breasts register 165F.
- Remove from the grill and allow to rest for 5-10 minutes, tented with foil. When ready to serve, slice against the grain and serve with remaining sauce for drizzling or dipping.

MACERATED DRIED FRUITS AND NUTS
I have been making this winter fruit salad from the time I first started looking at cookbooks and well remember the original Claudia Roden recipe (in her wonderful classic A Book of Middle Eastern Food). My version, honed by experience and travel, is a little different. If you use water, you will probably need to add a bit of sugar; start with 1/2 cup and see how that tastes. This recipe produces a lovely syrup of its own, but you can serve it with yogurt or fresh or sour cream if you like. If you're in a hurry, you may cook the mixture, gently, until the fruit softens. The texture will be mushier, the fruits less distinctive, but the taste will still be great.
Yield makes 6 to 8 servings

- Mix all the ingredients together; add more water if necessary, enough to cover the fruit by an inch or two. Cover and put aside (if your house is very warm, refrigerate).
- Stir every few hours, for 12 to 24 hours. Serve when the fruits are tender.
SPICY CILANTRO SAUCE

- Have ready a bowl of ice water. In a small saucepan of boiling water blanch cilantro and parsley 10 seconds and drain in a sieve. Refresh herbs in ice water and drain in sieve. Chop shallots and garlic.
- In a small nonstick skillet cook shallots, garlic, gingerroot, cumin, and red pepper flakes in 1 tablespoon water and oil over moderately low heat, stirring, until shallots are softened. In a blender purée shallot mixture, herbs, remaining 1/4 cup water, and soy sauce until smooth, about 1 minute, and season with salt and pepper. Sauce may be made 1 day ahead and chilled, covered. Bring sauce to room temperature before serving.
- Just before serving, stir in lemon juice.

- Pulse nuts and seeds until finely chopped and add to dried fruit with a dash of cinnamon and a pinch of salt.
