Veggie French Bread image

This bread gets its zip from convenient bottled dressing that serves as a quick marinade. It's a cinch to whip up, too-I've even made it on camping trips atop a grill.-Janet Twigg, Campbellford, Ontario

2 large tomatoes, chopped
1 medium cucumber, peeled and chopped
4 green onions, sliced
1/2 cup chopped green pepper
3/4 cup Italian or Greek salad dressing
1 unsliced loaf French bread, cut into 1-inch slices

Steps:

  • In a large bowl, combine the first five ingredients. Toast bread until lightly browned; top with the tomato mixture. Serve immediately.

FRENCH HERB VEGGIE LOAF

This is my version of the 1980 Kansas State Fair winner.

Number Of Ingredients 16

1 c buttermilk
1/4 c water
6 Tbsp butter or margarine
3. to 4.5 c all purpose flour
2 Tbsp sugar
1 1/2 tsp salt
2 pkg active dry yeast
1/8 tsp garlic powder
1 Tbsp finely minced fresh parsley
1 tsp dried basil
1/2 tsp dried thyme
1 tsp dried marjoram or tarragon
1/3 c finely minced onion (or sub 1/3 c rehydrated onion flakes)
1/2 c very finely minced vegetables of your choice
I SUGGEST CARROT, CELERY, SWEET PEPPERS (ANY COLOR), RADISHES, SPINACH, BROCCOLI, SUN DRIED TOMATOES. DO NOT SUGGEST USING "WATERY" VEGGIES LIKE ZUCCHINI, MUSHROOMS, CUCUMBERS, FRESH TOMATOES, ETC.)
1/2 c grated parmesano reggiano

Steps:

  • 1. Heat together Water, buttermilk and butter/margarine to 130 degrees.(Very warm) Mix together, 1 1/2 c flour, sugar, salt, yeast and garlic powder in large mixer bowl.
  • 2. Add heated liquid to the dry ingredients and mix at medium speed for 3 minutes. Stir in another 1 1/2 c flour veggies, parsley and herbs to form a sticky dough. Turn out onto well floured counter and knead in as much flour as needed to make it soft, smooth and elastic. Knead in parmesan cheese a little as a time.
  • 3. Place dough in a lightly oiled bowl, cover with plastic wrap and a towel and let rise to double. Punch down, divide into two equal portions and let rest covered for 5 to 10 minutes.
  • 4. Roll each portion into a rectangle, using a little flour if needed to keep from sticking. Form into baguette shapes 12" long x 3" in diameter. Place on greased cookie sheet or parchment lined sheet that is dusted with cornmeal. Cover and let rise til doubled.
  • 5. Preheat oven to 400 degrees and bake loaves for 20-30 minutes until golden brown and hollow sounding when tapped. approx. 200 degrees internal temp. Let cool slightly and turn out of pan to cool on a rack.

GARDEN HERB LOAF

I wanted something different than the usual wheat bread, so I made this recipe with half wheat and half white flour and I am so glad I did. The best part is shaping the bread. I was scared to at first, but it actually turned out to be very simple and fun! The herbs give this bread such a tasty and unique flavor! **Also I didn't use rapid rise yeast, so I had to let the dough rise a lot longer then said here. About an hour for each time**

4 cups all-purpose flour
3 tablespoons sugar
1/2 ounce fast rising yeast
1 1/2 teaspoons salt
3/4 teaspoon dried marjoram
3/4 teaspoon dried thyme leaves
3/4 teaspoon dried rosemary leaves
3/4 cup milk
1/2 cup water
1/4 cup butter or 1/4 cup margarine
1 tablespoon butter or 1 tablespoon margarine
1 egg

Steps:

  • In large bowl, combine 1 1/2 cups flour, sugar, undissolved yeast, salt, marjoram, thyme, and rosemary.
  • Heat milk, water, and 1/4 cup butter until very warm (120° to 130°F); stir into dry ingredients.
  • Stir in egg and enough remaining flour to make soft dough.
  • Knead on lightly floured surface until smooth and elastic, about 4 to 6 minutes.
  • Cover; let rest on floured surface 10 minutes.
  • Divide dough into 3 equal pieces.
  • Roll each piece to 30-inch rope.
  • Braid ropes; pinch ends to seal.
  • Tie knot in center of braid; wrap ends around knot, in opposite directions, and tuck under to make round loaf.
  • Place on greased baking sheet.
  • Cover; let rise in warm, draft-free place until doubled in size, about 20 to 40 minutes.
  • Bake at 375°F for 30 to 35 minutes or until done, covering with foil during last 10 minutes to prevent excess browning.
  • Melt remaining butter; brush over loaf.
  • If desired, sprinkle with additional marjoram, thyme, and rosemary.
  • Remove from sheet; let cool on wire rack.

I found this recipe on another website, tried it and loved it! It was submitted by Aronna Palmer and she says it is an authentic French recipe. Either way, it is FABULOUS!! I hope you love it as much as we did!

1 tablespoon active dry yeast
2 tablespoons white sugar
1 teaspoon salt
3 1/2 cups all-purpose flour
1 cup milk
1 tablespoon distilled white vinegar
1/4 cup water
1/4 cup margarine
1/2 cup minced onion
1 garlic clove, minced
1/2 teaspoon salt
1 tablespoon minced parsley
2 tablespoons margarine

Steps:

  • In a large bowl combine the yeast, sugar, 1 teaspoon of the salt and 1 1/2 cups of the flour.
  • In a sauce pan combine the milk, water and 1/4 cup of the butter or margarine until 110 degrees F. Add milk mixture and vinegar to the flour mixture and blend at low speed of the mixer until moistened. Beat at medium speed for 3 minutes.
  • Stir in 1 1/2 cups additional flour to form a sticky dough. Turn dough out onto a floured surface and knead adding 1/2 to 1 cup more of flour until dough is smooth and pliable. Place dough in a greased bowl and let rise in a warm place until doubled in volume.
  • Punch down dough and roll into a rectangle shape about 16x8 inches.
  • In a saucepan heat the onion, garlic, 1/2 teaspoon salt, parsley and 2 tablespoons butter or margarine until butter or margarine is melted. Spread over the dough rectangle and starting from the 16 inch side roll the dough up tightly like a jelly roll.
  • Place the bread seam side down onto a greased cookie sheet and let rise until doubled in sized.
  • Preheat oven to 400 degrees F).
  • Bake bread until golden brown about 20 to 30 minutes. Brush hot bread with melted butter and sprinkle with chopped parsley.

HERBED FRENCH BREAD



Herbed French Bread image

6 cups flour, approximately
2 packages rapid-rise yeast
2 teaspoons salt if desired
1 teaspoon finely chopped fresh or dried rosemary
4 tablespoons finely chopped parsley
2 tablespoons finely chopped fresh basil or half the amount dried
2 tablespoons finely chopped fresh chives
2 1/4 cups hot water (120 to 130 degrees)

Steps:

  • Put 5 cups flour into the container of a food processor. Add yeast, salt, rosemary, parsley, basil and chives and start processing while gradually adding the water.
  • Add remaining cup of flour, or enough to make nonsticky dough that comes loose from container sides.
  • Turn dough out onto a lightly floured board and knead while shaping the dough into a nonsticky ball.
  • Lightly flour inside of a mixing bowl and add the dough. Cover with clean cloth and place in a warm (not hot) draft-free place to rise.
  • Let stand until double in bulk, about 30 to 40 minutes. (It is not essential to let dough rise a second time, but it is preferable.) Turn dough out onto a lightly floured surface and punch down. Knead briefly and return the dough to lightly floured bowl. Let stand until double in bulk, about 30 minutes.
  • Meanwhile, preheat the oven to 400 degrees.
  • Turn out dough onto lightly floured board and knead briefly. Divide dough in half and shape it into two loaves, each about 15 inches long. Place loaves side by side on baking sheet and cover with clean cloth. Let stand 15 minutes or until they rise slightly (but not double in bulk).
  • Remove cloth and, using razor blade, cut three uniform diagonal, parallel gashes over the top of each loaf. Place in oven on bottom rack and, if crisper crust is desired, place two ice cubes on bottom of oven. This will create steam. Bake 45 minutes or until golden brown all over.
