PRIZE WINNING BANANA NUT BREAD

Prize Winning Banana Nut Bread image

I have won ribbons with this recipe which I received from my grandmother. The only thing I do that is different from my grandmothers is I just throw the bananas in the freezer whole and unpeeled. Then I let them thaw and squeeze them into the batter when the recipe calls for them. I think that is the secret to the moist, denseness that my banana bread has. This bread CAN NOT be doubled. I know because I have tried 3 times and the bread won't rise. Cool COMPLETELY on a rack before wrapping and refrigerating. Or it will be icky and sticky in the middle. Enjoy!

THE BEST BANANA BREAD

The Best Banana Bread image

We have a lot of requirements when it comes to banana bread and we finally created a recipe that ticks all the boxes. It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

Time 1h30m

Yield 1 loaf

Number Of Ingredients 13

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

A WINNING BANANA NUT BREAD

A Winning Banana Nut Bread image

This is my standard recipe for banana bread, been making it for years, it describes itself as so easy that your children can try their hand at it! It always turns out well for me, and I am not much of a baker. It comes from "The Best Of Winning Recipes", a compilation of recipes from a popular South African magazine, "Huisgenoot". This recipe is accredited to Mrs H van der Berg of Brits.

Time 1h10m

Yield 1 loaf, 8 serving(s)

Number Of Ingredients 10

6 ripe medium bananas
1 teaspoon lemon juice
275 g cake flour
15 ml baking powder
2 ml salt
200 g sugar
150 g peanuts, chopped
2 eggs, separated
50 g butter or 50 g margarine, melted
5 ml grated lemon rind

Steps:

  • Preheat the oven to 180C/350°F Grease a 23x13x7 cm loaf tin. Peel and mash the bananas and mix them with the lemon juice.
  • Sift together the cake flour, baking powder and salt, in a fairly large mixing bowl. Add the sugar and nuts and mix. Beat the egg yolks and add them to the flour mixture with the butter or margarine. Mix lightly.
  • Add the banana pulp and lemon rind and mix well.
  • Beat the egg whites until just stiff, and fold them lightly into the batter with a metal spoon.
  • Spoon the batter into the tin, level it off, and sprinkle more nuts on top if desired. (I sprinkle some brown sugar on top).
  • Bake on the middle shelf of the oven for 60 minutes. Test with a skewer to see if done: if the skewer comes out clean, the loaf is ready; if it does not, bake for a further 10 to 15 minutes.
  • Allow the loaf to cool slightly in the tin. Turn it out onto a wire rack to cool completely.
