3 tablespoons canola oil
1 red onion, minced
1 jalapeno, seeded, minced
1 green bell pepper, minced
1 red bell pepper, minced
2 tablespoons garlic, minced
1 cup Roma tomatoes, diced
3/4 pound ground beef or turkey
2 cups long-grain rice
8 ounces kidney beans
2 cups chicken stock
1 1/2 cups water
1 teaspoon paprika
1 tablespoon chili powder
1 tablespoon salt
1 teaspoon freshly ground black pepper
3 tablespoons green onion, sliced, for garnish

Steps:

  • In medium stock pot over medium heat, add oil, onions and peppers and saute until translucent. Add the garlic, tomatoes and ground beef. Cook until meat is browned.
  • Add rice to mixture and cook over low heat for 3 minutes, coating rice with the oils from the pan. Add beans, chicken stock, water and seasonings, bring to a simmer, then cover and cook on low for 20 minutes.
  • Fluff with fork and garnish with green onions.

This Easy Green Chili Rice Casserole recipe is one of the easiest side dish recipes you can make for dinnertime! You will only need 4 ingredients: rice, green chiles, shredded cheese, and sour cream. Simply mix, bake, and serve for a comforting addition to dinnertime.

3 cups cooked white rice
7-8 ounces diced mild green chiles (either two 4 ounce cans or one 7 ounce can - depending on what's available in your store; mostly drained if packed in water - see note below)
8 ounces cheddar cheese, shredded and divided
16 ounce container sour cream

Steps:

  • Preheat the oven to 350 degrees F. Grease a 2-quart casserole baking dish (we use cooking spray).
  • Combine all ingredients, except about 1/2 cup of cheese, together in a large bowl. Spread the mixture into prepared dish. Sprinkle remaining cheese on top of mixture. Place in oven and bake for about 35 minutes and the cheese has melted and begun to brown.

3 tablespoons vegetable oil
1 large onion, finely chopped
2 teaspoons chopped garlic
2 jalapeno peppers, seeds and stems removed and chopped (use gloves, avoid breathing fumes, and protect your eyes when handling these and all hot peppers)
2 pounds ground beef
2 teaspoons ground cumin
1 tablespoon chili powder
2 teaspoons salt
1 teaspoon black pepper
2 tablespoons tomato paste
2 tablespoons hot sauce (recommended: Tabasco)
2 (16 ounce) cans kidney beans
1( 29 to 32-ounce) can diced tomatoes
1 tablespoon finely minced fresh parsley leaves, plus 8 small sprigs for garnish
1 tablespoon finely minced fresh cilantro leaves, plus 8 small sprigs for garnish
4 cups beef consomme
2 cups brown rice
2 tablespoons butter

Steps:

  • Heat oil in a skillet and saute onions until translucent. Add garlic and saute until it begins to turn golden brown, being careful not to burn it. Stir in hot peppers and cook until they begin to soften. Add ground beef and cook until browned. Drain off any fat. Season with cumin, chili powder, salt, and pepper. Add tomato paste, hot sauce, beans, tomatoes, parsley and cilantro and simmer 30 minutes.
  • While chili is simmering, bring consomme to a boil in a large saucepan. Stir in rice and butter and return to a boil. Reduce heat to low, cover and simmer 20 minutes without removing lid. Remove from heat and let sit 5 minutes.
  • Spoon rice onto serving plate and top with chili and garnish with parsley and cilantro.

GREEN CHILE CILANTRO RICE WITH PEPITAS



Green Chile Cilantro Rice with Pepitas image

3 1/3 cups chicken stock
1 1/2 cups Green Chile Sauce, recipe follows
3 tablespoons canola oil
1/2 cup small-diced onions
1/2 serrano chile, seeds removed and minced
2 cups Arborio rice, or medium grain rice
1 tablespoon minced garlic
1 teaspoon sea salt
1 teaspoon fresh cracked black pepper
1 to 2 tablespoons fresh squeezed lime juice
1/2 cup chopped fresh cilantro
1/4 cup pepitas, toasted and lightly salted
2 tablespoons canola oil
3/4 cup finely diced Spanish onion
1/2 large jalapeno, seeded and minced
1 clove garlic, chopped
4 tablespoons flour
1 (27-ounce) can roasted green chiles, chopped, juices reserved
1/2 cup white vinegar
2 teaspoons sea salt
1 teaspoon fresh cracked black pepper
2 tablespoons fresh lime juice

Steps:

  • In a small saucepan over medium heat, bring the chicken stock and the Green Chile Sauce to a simmer. Hold warm.
  • In a large, enameled cast-iron Dutch oven over medium-high heat, add the oil. When hot, add the onions and serrano chiles and saute until the onion is just starting to color, 4 to 5 minutes.
  • Add the rice and stir to coat, Cook for 3 to 4 minutes, stirring constantly, to toast the rice a bit. Add the garlic, salt and pepper and stir to combine.
  • Ladle in the chicken stock and green chile mix, about 1 cup at a time, stirring and allowing the rice to absorb the liquid. Do this 3 to 4 times, and then add the rest of the liquid. Stir, cover tightly and cook for 12 to 16 minutes, stirring twice during this time.
  • Add the lime juice and cilantro and stir to combine. Place in serving bowl and garnish with the pepitas.
  • In a small Dutch oven over medium-high heat, add the oil. When hot, add the onions and jalapeno and saute until just starting to caramelize, 4 to 5 minutes. Add the garlic and cook 1 minute more.
  • Reduce the heat to medium, sprinkle the onion mixture with the flour and stir constantly until lightly browned, about 2 minutes. Add the reserved liquid from the chiles, 1 cup water, the vinegar and salt and stir until the liquid is smooth and all the flour is dissolved.
  • Add the chiles and pepper and simmer for 5 to 6 minutes. Puree in a blender, or with a stick blender, and add the lime juice. Adjust to taste for salt and pepper. Refrigerate for up to 1 week. Yield: 4 1/2 cups

CHILI-GARLIC SHRIMP WITH GINGER RICE



Chili-Garlic Shrimp With Ginger Rice image

4 thin slices peeled fresh ginger, plus 2 tablespoons minced
1 1/2 cups jasmine rice
1/2 cup low-sodium chicken broth
1/3 cup ketchup
2 tablespoons chili-garlic sauce
1 tablespoon plus 2 teaspoons oyster sauce
1 tablespoon cornstarch
1/4 cup vegetable oil
1 1/4 pounds large shrimp, peeled and deveined
1 12-ounce bag broccoli florets (about 6 cups)

Steps:

  • Bring 2 1/4 cups water and the ginger slices to a boil in a medium saucepan over high heat. Stir in the rice and return to a boil. Cover, reduce the heat to low and cook until the water is absorbed and the rice is tender, about 18 minutes. Fluff with a fork, cover and set aside.
  • Meanwhile, mix the chicken broth, ketchup, chili-garlic sauce, oyster sauce, cornstarch and 1/2 cup water in a measuring cup; set aside. Heat 2 tablespoons vegetable oil in a large nonstick skillet over medium-high heat. Add the shrimp in two batches and cook until no longer translucent, 1 to 2 minutes per side; remove to a large bowl.
  • Add the broccoli and 1/2 cup water to the skillet and cook, stirring occasionally, until crisp-tender and the water has evaporated, about 3 minutes. Add to the bowl with the shrimp.
  • Add the remaining 2 tablespoons vegetable oil to the skillet. Add the minced ginger and stir-fry until golden, 30 seconds to 1 minute. Pour in the prepared sauce and simmer until thickened, about 2 minutes. Add the shrimp and broccoli and toss to coat, adding a splash of water to loosen, if needed. Serve with the rice.

1 cup water
1 cup uncooked white rice
1 ½ pounds ground beef
1 cup diced onion
½ cup chopped green bell pepper
1 (28 ounce) can diced tomatoes, undrained
1 (14 ounce) can tomato sauce
1 (4 ounce) can chopped green chile peppers
1 (1.25 ounce) package dry taco seasoning mix
1 tablespoon chili powder
½ teaspoon garlic powder
1 teaspoon cayenne pepper
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can whole kernel corn, drained

Steps:

  • Bring water and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and water has been absorbed, 20 to 25 minutes. Set aside.
  • At the same time, heat a large pot over medium-high heat. Cook and stir ground beef, onion, and bell pepper in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Add diced tomatoes, tomato sauce, taco seasoning, chile peppers, chili powder, garlic powder, and cayenne pepper; bring to a boil. Reduce heat and let simmer for 20 minutes.
  • Add beans and corn, and simmer for 10 minutes longer. Add cooked rice and serve.

1 medium onion, chopped
1/2 cup chopped green pepper
1 garlic clove, minced
2 to 3 cups tomato juice
1/2 cup uncooked long grain rice

1 can (16 ounces) kidney beans, rinsed and drained
1 cup frozen corn
1 can (2-1/4 ounces) sliced ripe olives, drained
1/2 cup shredded cheddar cheese or Monterey Jack cheese

Steps:

  • In a large saucepan, cook the beef, onion, green pepper and garlic over medium heat until meat is no longer pink; drain. Add the tomato juice, rice, chili powder, salt and oregano.
