This recipe is based on one from Dr. Andrew Weil's book, 8 Weeks to Optimum Health. Use wild salmon for optimum health benefits as it tastes better and is more nutritious, and eating it does not have the environmental impact of eating farmed salmon, nor the health risks associated with it. Cook time doesn't include the 1-3 hours marinating time in the 'fridge. This makes a great meal with rice and a cooked vegetable or salad.

1 cup sake (Japanese rice wine)
1/2 cup natural soy sauce or 1/2 cup tamari, reduced sodium preferred
1 tablespoon fresh gingerroot, grated
2 fresh garlic cloves, smashed
1 tablespoon dark brown sugar
4 salmon fillets (6 ounces per person)
1 lemon, divided into wedges (optional)

Steps:

  • Combine all marinade ingredients.
  • Rinse salmon fillets under cold water, place in a glass or ceramic dish, and pour the marinade over. Cover and place in the refrigerator for 1-3 hours, basting with the marinade once or twice.
  • Prepare the grill or preheat the broiler to high heat.
  • Drain the fish and place on foil on the grill or rack in oven. Cook until desired doneness, but avoid overcooking.
  • Serve at once, with lemon wedges if desired.

From the book "8 Weeks to Optimal Health". I have not made it yet. Posting for safekeeping. Dr Weil says: "Tempeh is a fermented-soybean product, a staple food of Indonesia, with a meaty texture and a bland flavor. You will find packages of it refrigerated or frozen in health-food stores." ETA: Well I tried it. I would say it is for die-hard tempeh fans. I had never tried it before and I will try it another way but probably not this way again.

1 cup red wine
4 tablespoons olive oil
3 large garlic cloves, mashed
2 teaspoons coriander seeds, crushed or 1 teaspoon ground coriander
salt
2 (8 ounce) packages tempeh
8 slices sandwich bread
lettuce
8 slices tomatoes

Steps:

  • Thaw tempeh if frozen. The 8 oz packages that I got were a square shape just the size of a loaf of bread. Cut each cake thru the middle (so it is two thinner pieces but the same size square) using a sharp knife. If you get a 1 pound section and it is rectangular you will want to cut it crosswise first.
  • Marinate the tempeh slices in the combined marinade at least 1 hour at room temperature or 3 hours in the refrigerator.
  • Drain the tempeh and grill or broil until well browned. I used a Foreman grill and I think it took about 7 minutes.
  • Make sandwiches of it on toasted bread with lettuce, tomato and your favorite spread.

This recipe is based on one from Dr. Andrew Weil's book, 8 Weeks to Optimum Health. I use the discarded broccoli stalks bottoms in recipe #135453 (#135453) - waste not want not!

1 lb fresh broccoli
1 tablespoon extra virgin olive oil
salt
4 -6 garlic cloves, chopped
red pepper flakes (optional)

Steps:

  • Prepare broccoli by trimming off the bottoms from the broccoli stalks and discarding (or freezing for later use). Cut off the main stem of each stalk; peel it to beneath the fibrous layer, and cut the flesh into bite-sized chunks. Break the head of the broccoli into bite-size pieces, and peel a bit of the skin from the small stems to make them more tender.
  • Rinse the broccoli in cold water and drain. Place in a pot with ¼ cup cold water, the olive oil, salt to taste, and the garlic. Add a pinch or more of the hot red pepper flakes if you prefer some heat.
  • Bring to a boil, cover tightly, and steam until the broccoli is bright green and crisp-tender, no more than 5 minutes. Remove with a slotted spoon and serve at once. You can also add the broccoli (with any remaining liquid) to cooked pasta (Dr. Weil prefers penne or rigatoni), seasoning with grated Parmesan cheese if you like.
