I created this with ingredients I had in the pantry, and it turned into a family favorite!

1 pound ziti pasta
1 tablespoon vegetable oil
1 onion, sliced
1 green bell pepper, sliced
1 pound boneless chicken breast, cubed
1 (16 ounce) jar salsa
2 (8 ounce) packages cream cheese, softened
1 (1 ounce) package taco seasoning
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can corn, drained
1 (16 ounce) package shredded Cheddar cheese, divided

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil. Stir in ziti and return to a boil. Cook pasta uncovered, stirring occasionally, until tender yet firm to the bite, about 10 minutes. Drain.
  • Heat oil in a skillet over medium heat; add onion and green pepper. Cook and stir until soft, 5 to 7 minutes; remove from skillet. Place chicken into the skillet; cook and stir until no longer pink, 7 to 10 minutes.
  • Combine salsa, cream cheese, and taco seasoning in a saucepan over low heat: cook until cream cheese is melted, about 5 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine ziti, chicken, salsa mixture, black beans, corn, and onion mixture in a large bowl. Add 8 ounces Cheddar cheese; mix until combined. Pour into a baking pan.
  • Bake in the preheated oven for 20 minutes. Remove from oven; top with remaining Cheddar cheese. Bake until cheese is melted, about 10 minutes.

1 yellow bell pepper, seeded and sliced
1 green bell pepper, seeded and sliced
1 red bell pepper, seeded and sliced
2 ½ cups mushroom, sliced
1 medium yellow onion, diced
1 tablespoon chili powder
1 tablespoon paprika
1 tablespoon garlic powder
1 tablespoon cumin
1 teaspoon salt
1 teaspoon pepper
3 tablespoons olive oil
4 cups penne pasta, uncooked
1 ½ cups sour cream
3 cups shredded pepper jack cheese
fresh parsley, chopped. for garnish

Steps:

  • Preheat the oven to 400°F (200°C).
  • In a nonstick baking dish, add the bell peppers, mushrooms, and onion.
  • In a small bowl, combine the chili powder, paprika, garlic powder, cumin, salt, and pepper.
  • Pour the olive oil and half of the spice mix over the vegetables and toss well to coat.
  • Bake the vegetables for about 30 minutes, stirring occasionally, until tender.
  • In a large pot of boiling water, cook the pasta according to the package instructions, until tender.
  • Drain the pasta, reserving about 1 cup (240 ml) of cooking water.
  • Return the drained pasta to the pot and add the roasted vegetables. Add the rest of the spice mix, the reserved pasta water, and the sour cream and mix to combine.
  • Transfer the pasta mixture to the baking dish used for roasting the vegetables and spread evenly. Sprinkle the cheese over the top.
  • Bake for about 15 minutes, until the cheese is golden brown.
  • Let cool for about 5 minutes, then serve. Garnish with parsley, if desired.
  • Enjoy!

3 chicken breasts, sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 onion, sliced
1 teaspoon salt
1 teaspoon pepper
1 tablespoon chili powder
1 tablespoon cumin
1 tablespoon garlic powder
5 cups milk
4 cups penne pasta
1 cup pepper jack cheese, shredded

Steps:

  • Heat oil in a large pot over high heat
  • Add chicken and cook until no pink is visible, about 5-6 minutes, then take the chicken out.
  • Add the bell peppers and onion, cooking until the onion is translucent, about 6 minutes.
  • Add the chicken back to the pot with salt, pepper, chili powder, cumin, and garlic powder, stirring until evenly coated, about 30 seconds.
  • Add the milk and the penne, stirring constantly to prevent any pasta from sticking.
  • Cook for about 20 minutes until pasta is cooked and the milk has reduced to a thick sauce that coats the pasta.
  • Add the cheese and mix until melted.

1 pound boneless skinless chicken breasts, cut into thin strips
2 tablespoons fajita seasoning mix, divided
2 tablespoons canola oil, divided
8 ounces uncooked penne pasta
1 each medium green, sweet red and yellow pepper, sliced
1 medium onion, sliced
1 jar (16 ounces) salsa
1/2 cup water
1/4 cup shredded cheddar cheese
1 tablespoon minced fresh cilantro
Sour cream, optional

Steps:

  • Sprinkle chicken with 1 tablespoon fajita seasoning. In a large skillet over medium heat, cook chicken in 1 tablespoon oil for 6-8 minutes or until juices run clear. Meanwhile, cook pasta according to package directions., Remove chicken and keep warm. In the same skillet, saute peppers and onion in remaining oil. Sprinkle with remaining fajita seasoning; stir until blended. Add the salsa, water and chicken; heat through. , Drain pasta; toss with chicken mixture. Sprinkle with cheese and cilantro. Serve with sour cream if desired.

2 pounds boneless chicken breasts, diced
1 tablespoon vegetable oil
1 large tomato, diced
1 green bell pepper, cut into strips
½ large onion, cut into strips
¾ cup water
2 (1.27 ounce) packets fajita seasoning
10 (6 inch) corn tortillas, cut in quarters
1 (16 ounce) can pinto beans, rinsed and drained
2 cups shredded Cheddar cheese
1 (16 ounce) can black beans, rinsed and drained
¼ cup green onions, chopped
¼ cup chopped cilantro

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Grease a 9x13-inch baking pan.
  • Heat a skillet over medium heat. Add chicken; cook and stir until browned on all sides, about 6 minutes. Transfer chicken to a plate.
  • Heat oil in the hot skillet. Add tomato, bell pepper, and onion; cook and stir until softened, 5 to 7 minutes. Mix in cooked chicken, water, and fajita seasoning.
  • Line the bottom of the prepared pan with 5 tortillas; pour pinto beans on top. Spread 1/2 of the chicken mixture over the beans; cover with Cheddar cheese. Layer the remaining tortillas, black beans, and chicken mixture on top. Cover with aluminum foil.
  • Bake in the preheated oven until tortillas are lightly browned and chicken juices run clear, 25 to 30 minutes. Top with green onions and cilantro.

Steps:

  • Heat oven to 425°F. In 13x9-inch (3-quart) baking dish, melt butter in oven.
  • Stir together Bisquick™, paprika, salt and pepper; coat chicken. Place skin sides down in dish (dish and butter should be hot).
  • Bake 35 minutes; turn chicken. Bake about 15 minutes longer or until juice of chicken is clear when thickest pieces are cut to bone (at least 165°F).
