Swiss 'n' Crab Supper Pie image

Though some parts of Alaska are suitable for farming, we're on the Gulf, where commercial fishing is the main industry. Crab is plentiful here, and so is salmon, halibut, shrimp and sea herring. You don't need fresh crab for this delicious, easy-to-make supper pie, though-with canned crabmeat, it becomes a great "off-the-shelf" meal. Hope your family enjoys it as much as mine does!

Number Of Ingredients 11

1 refrigerated pie pastry
1 can (6 ounces) lump crabmeat, drained
1 cup shredded Swiss cheese
2 green onions, thinly sliced
3 large eggs, beaten
1 cup half-and-half cream
1/2 teaspoon salt
1/2 teaspoon grated lemon zest
1/4 teaspoon ground mustard
Dash mace
1/4 cup sliced almonds

Steps:

  • Line a 9-in. tart pan with unpricked pastry shell; line pastry with heavy-duty foil. Bake at 450° for 5 minutes. Remove foil. , Arrange crab evenly in baked crust. Top with cheese and green onions. Combine remaining ingredients except almonds; pour into tart shell. Top with almonds. , Bake at 325° for 45 minutes or until set. Let stand for 10 minutes before serving.

7 1/2 ounces crab meat
1 cup finely chopped celery
2 tablespoon grated onion
2 tablespoon chopped green pepper
2 eggs, beaten
1 cup mayonnaise
1/2 cup bread crumbs
1/2 cup shredded Cheddar
1/4 teaspoon salt
1 tablespoon lemon juice
Unbaked pie shell

Steps:

  • Combine crab meat, celery, salt, onion, green pepper, mayonnaise, lemon juice, eggs and all but 2 tablespoons bread crumbs. Mix lightly. Turn into unbaked pie shell, sprinkle with reserved crumbs and Cheddar cheese. Bake 25 minutes in a 350°F oven, or until firm and brown. Should be golden brown and fluffy.

2- 9 ″ deep pie crusts (baked 3 minutes and cooled)
1 pound lump crab meat
4 eggs
2 tablespoon flour
1 cup mayonnaise
1 cup whole milk
8 ounce shredded Swiss cheese
8 ounce shredded Cheddar cheese
2 teaspoons Old Bay seasoning
1 tablespoon finely chopped onion
1 tablespoon finely chopped green pepper
(Note: You can use backfin, it is fine. Lump is the most expensive and not necessary.)

Steps:

  • Preheat oven to 350ºF Bake your crust for 3 minutes. We used Pillsbury pie dough and it worked out great. We did spray the pie pans with Pam spray to keep the crust from sticking. Combine eggs, flour, mayonnaise and milk, mix well. Add cheese, 1 teaspoon Old Bay, onion and pepper and mix well. Fold in crab meat and try not to separate the lumps of crab meat too much. Pour into 2 separate pie crusts, sprinkle with additional Old Bay Seasoning. Bake at 350ºF for 50 minutes or until knife comes out clean. (Check at about 40 minutes to avoid burning, since ovens vary.)

1 package (6 ounces) frozen ready-to-serve crabmeat, thawed and drained, or 1 package (5 ounces) frozen cooked salad shrimp, thawed and drained
1 cup shredded sharp natural Cheddar cheese (4 ounces)
1 package (3 ounces) cream cheese, cut into 1/4-inch cubes
1/4 cup sliced green onion
1 jar (2 ounces) diced pimientos, drained, if desired
1/2 cup Original Bisquick™ mix
1 cup milk
1/2 teaspoon salt
1/8 teaspoon ground nutmeg
2 eggs

Steps:

  • Heat oven to 400°F. Grease pie plate, 9x1 1/4 inches. Mix crabmeat, cheeses, onions and pimientos in pie plate.
  • Stir remaining ingredients in bowl with fork until blended. Pour into pie plate.
  • Bake uncovered 35 to 40 minutes or until golden brown and knife inserted in center comes out clean (some cream cheese may stick to knife). Let stand 10 minutes before cutting.

1/2 cup mayonnaise
2 tablespoons flour
3/4 cup light cream or 3/4 cup whole milk
2 eggs
salt & pepper
2 tablespoons butter
1/2 cup breadcrumbs
3/4 lb crabmeat (fresh picked is better if you can get it)
paprika
1 unbaked pie shell

Steps:

  • Preheat oven to 350 F degrees.
  • Mix first four ingredients.
  • Stir in crab, s&p.
  • Pour into pie shell.
  • Melt butter and add bread crumbs.
  • Stir.
  • Sprinkle over crab mixture.
  • Sprinkle w/ a few dashes of paprika.
  • Bake 40-45 minutes.
  • Let rest 10 minutes or so before serving.

  • For the homemade puff pastry crust: Combine the flour and 1/2 teaspoon salt in a food processor. Pulse a few times. Add the cold butter and pulse until the bits of butter are the size of peas. Add the cold water 1 tablespoon at a time, pulsing in between, until the dough comes together. It will be a bit lumpy.
  • Shape the dough into a rectangle, then wrap it in plastic and refrigerate for at least 30 minutes. Preheat the oven to 400 degrees F.
  • Place the dough on a floured work surface and roll out to a 8x20-inch rectangle. Trim the rough edges. Then cut down the center lengthwise. Cut each strip into 5 pieces, creating ten 4-inch squares of dough. Fold each square and place them into muffin tins. Press the centers down to the bottom and press the folds into the sides. Prick the bottoms of the shells several times with a fork. Bake the shells for 15 minutes. Then cool a little.
  • In the meantime, combine the cream and eggs in a medium sized bowl. Whisk until smooth. Then stir in the crabmeat, tarragon, shallot, nutmeg, cayenne pepper, and remaining 1/4 teaspoon salt.
