DOUGHNUT PAN EGG SANDWICHES
Doughnut pans take up a lot of kitchen real estate for something that gets used, say, twice a year. Still, we love 'em, which is why we dreamed up another great way to put a doughnut pan to work: For baked eggs in the perfect shape to pop on a bagel.

Steps:
- Preheat the oven to 300 degrees F. Lightly coat a 6-cavity nonstick doughnut pan with nonstick spray.
- Crack the eggs into a large liquid measuring cup and whisk until no streaks remain; sprinkle with salt. Divide the eggs among the cavities of the doughnut pan and top with the bacon and chives. Carefully place the pan on a sheet tray and bake until the eggs are set and slightly puffed up, 8 to 10 minutes. Cool slightly, then remove the eggs from the doughnut pan.
- Meanwhile, split open the bagels. Top the bottom halves with American cheese pieces and transfer to a sheet tray. Spread the top halves with butter and place them butter-side down on the sheet tray. Bake until the cheese is melted and the buttered bagels are starting to turn golden brown, about 4 minutes.
- Top the cheese half of a bagel with an egg ring and drizzle on some ketchup. Season with salt and pepper and cover with the butter half of the bagel. Repeat with the remaining bagels, egg rings and ketchup to make 5 more sandwiches.
EXTRA-CRUNCHY SHEET-PAN MAC AND CHEESE
When you spread your mac and cheese out on a sheet pan and top it with lots of buttery breadcrumbs, you achieve maximum crunchiness in every cheesy bite.

- Position a rack in the upper third of the oven and preheat to 450 degrees F. Bring a large pot of salted water to a boil. Add the macaroni, and cook according to package directions until al dente. Drain the macaroni, reserving 1 1/2 cups of the pasta water. Set aside.
- Heat the half-and-half, cream cheese, and reserved pasta water in a large pot over medium heat, stirring until the cream cheese is completely melted and the mixture just comes to a simmer. Remove from heat and add the Cheddar, Monterey Jack, Dijon mustard, and hot sauce, whisking until the cheeses are melted and the sauce is smooth.
- Add the macaroni to the pot and stir to combine. (It will look very loose, but the pasta will absorb some of the sauce as it bakes.) Season to taste with salt if desired. Spread the macaroni mixture on an 18-by-13-inch sheet pan.
- Toss the panko, butter and 1/2 teaspoon salt together in a medium bowl and sprinkle evenly over the pasta. Bake until the cheese is bubbly and the bread crumbs are brown and crisp, rotating halfway through, 20 to 25 minutes.
DOUGHNUT PAN SURPRISE CAKE
It's hard to improve on the fun of a confetti cake, but baking the layers in a doughnut pan leaves you with a hole in the center that you can fill with chocolate pudding -- a sweet surprise that we think might do it!

- Preheat the oven to 350 degrees F. Spray a 6-cavity nonstick doughnut pan with nonstick spray.
- Prepare the cake batter according to the directions on the box. Transfer 3/4 cup batter to a liquid measuring cup and pour among the cavities of the doughnut pan, dividing evenly (reserve the remainder of the batter for another use; see Cook's Note). Tap the pan several times on the counter to smooth out the batter. Bake until a toothpick comes out clean, 5 to 6 minutes.
- Remove the cake layers from the pan to a rack and cool completely.
- Place a large dollop of frosting on a plate. Top with a cake layer, then frost the top, leaving the hole unfrosted. Top with a second cake layer and frost its top in the same manner. Top with a third cake layer. Using a small spoon, carefully dollop 2 tablespoons chocolate pudding into the center of the cake. Frost the sides of the cake, adding extra frosting to fill in the rounded edges for a straight-sided cake. Frost the top of the cake and garnish with 1 tablespoon sprinkles.
- Repeat with the remaining frosting, cake layers, chocolate pudding and sprinkles to make a second cake.

- Mac 'n' Cheese:.
- Preheat oven to 375 degrees. Grease a 12 cup bundt pan with nonstick cooking spray. Coat pan with bread crumbs as if flouring the pan.
- In a dutch oven melt butter over medium high heat. Once the butter has melted whisk in the flour to form a roux. Gradually whisk in milk until there are no lumps. Whisk in both cheeses.
- Once the mixture is smooth turn off the heat and stir in the cooked pasta and bacon. Season with salt and pepper.
- Stirring quickly add the eggs being sure not to let them scramble.
- Spoon the mixture in the prepared bundt pan. Use a spatula to press the pasta down to create an even layer. Sprinkle the bread crumbs over the top and bake for 40-45 minutes until golden brown.
- Allow to cool for 15 minutes. Use a rubber spatula to loosen the sides of the pan before removing.
- Serve with cheese sauce and garnish with crumbled bacon and chives.
