DOUBLE BACON, SPINACH AND CHEESE MEATLOAF
I came up with this recipe at the age of 16 (almost 20 years ago). I found my old high school cook book I created and here it is. This may sound a little labour intensive, but it isn't really. Once cooked, this looks very impressive. The first time I maded this, I was rather impressed with myself!

Steps:
- Chop 4 bacon rashers finely and cook in a pan. Once cooked, add the washed and trimmed spinach and the crushed garlic, cook until spinach is just wilted, about 45-60 seconds.
- You can either leave the spinach mixture as is, or puree to a paste. Set aside mixture to cool slightly while you make the meatloaf base.
- In a large bowl, add the meat, eggs, onion, zucchini, bread crumbs and sauce. I like to use hands to mix it well.
- Lay out a large rectangular peice of foil. Place the remaining bacon along the foil side ways, not lengthways. You want the ends of the bacon to overlap touch while the meatloaf is cooking.
- Gently place handfulls of the meat mix over the bacon. Cover the bacon and smooth out the meat with wet hands to create a 2cm (3/4 inch) thick meatloaf over the bacon.
- Pour the spinach and bacon mix over the meatloaf. Spread evenly over, leaviing a gap of at least 4 cm (just over 1 inch) lengthways. This will help the mix not to squeeze out when you roll it up.
- Over the spinach layer, sprinkle the cheese on top, not going past the spinach. The cheese will ooze out while cooking otherwise.
- Using the foil as a guide, roll the meatloaf up lengthways. Discard the foil. Pinch the ends of the meatloaf closing them sealed.
- Place meatloaf carefully seam side down on a lined baking tray (easier to clean later).
- Bake at 180oC (375 F) for 1 full hour.
- Remove from oven and let stand for 5-10 minutes before slicing.
- * Please note that bacon in Australia, NZ and UK has an eye of meat and are twice as long as bacon in the US (our bacon is 30 cm long, about 10 inches). US cooks may need extra bacon for the top of the meatloaf. If someone makes it from the US, please post a note as to how much you used. Thank you.

- Microwave frozen spinach according to package information, then drain.
- Place spinach on top of cheese making sure to leave perimeter empty.
- Take on side of wax paper and roll meatloaf carefully, being sure not to let meatloaf crack while rolling.
- After you have rolled the meatloaf pinch the edges to ensure that the cheese/spinach does not leak out while cooking.
- Cover entire meatloaf with the can of tomato paste. (You may want to add some italian seasoning to the tomato paste as it is slightly bland).
- Bake covered for about 35 - 45 minutes or until desired temperature.

SPINACH - STUFFED MEATLOAF
This is a great tasting meatloaf that adds that important iron to your diet. This recipe was originally from the cookbook 1,000 Low Fat recipes by Terry Golson The preparation time does not include the resting time in the fridge. - Spinach and Mushroom-Filled Rolled Meatloaf. This rolled meatloaf will send you straight to flavor town. It looks fancy and tastes amazing. This meatloaf features a trio of pork, beef, and veal for maximum flavor and texture.
- Stuffed Meatloaf (Cheese, Roasted Red Peppers, Basil, and Ham) If you love the juxtaposition of sweet and savory in your dishes, try this meatloaf. It strikes the perfect balance between the two flavors.
- Meatloaf Stuffed with Mashed Potatoes. There’s no need for a side dish because this is a whole meal in one! It’s sweet, savory, and delicious. I guarantee that this will please every palate from kids to adults.
- Feta Cheese and Pepper-Stuffed Meatloaf. Take a trip to the Mediterranean with this delicious meatloaf. You can find meatloaf-like dishes all around the region, spanning three continents.
- Macaroni Cheese-Stuffed Meatloaf. Um. Yes, please! I know I said it before, but even meatloaf haters will love this recipe. It’s like a whole southern barbecue in one dish.
- Veggie-Stuffed Meatloaf. Do you have a hard time getting your family to eat their vegetables? This veggie-stuffed meatloaf is the solution. It uses a mix of pork and beef, plus all of the usual suspects.
- Cheese-Stuffed Taco Meatloaf. Switch it up on Taco Tuesday with this delicious cheese-stuffed taco meatloaf. It’s bold, spicy, and super indulgent. It’s just like making a regular meatloaf, but with a few Tex-Mex swaps.
