Halloween is one of my favorite holidays, and entertaining is one of my favorite things to do. My entire family loves these cute apps, especially my kids, which makes the recipe extra-special. -Rachel Ruiz, Hurlburt Fld, Florida

1 pound ground beef
1 can (16 ounces) refried beans
1 envelope taco seasoning
1/4 cup salsa
2 cups shredded cheddar cheese
3/4 cup sliced ripe olives, divided
4 tubes (13.8 ounces each) refrigerated pizza crust
2 large egg whites, lightly beaten
3 cups shredded Monterey Jack cheese

Steps:

  • Preheat oven to 350°. In a large skillet, cook beef over medium heat 6-8 minutes or until no longer pink, breaking into crumbles; drain., In a large bowl, combine beans, taco seasoning and salsa. Stir in beef, cheddar cheese and 1/4 cup olives., On a lightly floured surface, unroll one pizza crust; cut into 25 circles with a 2-in. biscuit or round cookie cutter. Repeat with remaining pizza dough. Reroll scraps to form 50 balls., Place 1 heaping tablespoon beef mixture on the center of half of the circles. Top with remaining circles; pinch edges to seal. Place on parchment paper-lined baking sheets; gently shape into ghosts. Brush with egg whites; press two dough balls into sides to form arms. Sprinkle with Monterey Jack cheese; top each with sliced olives for the eyes and mouths., Bake 15-20 minutes or until golden brown and cheese is melted

Number Of Ingredients 19

2 quarts vegetable or canola oil
1 1/4 cups all-purpose flour
3/4 cup yellow cornmeal
1/4 cup sugar
2 teaspoons poppy seeds
1 teaspoon baking powder
1 teaspoon kosher salt
Freshly ground black pepper
1 large egg
1 1/4 cups buttermilk
Hot sauce, optional
One 13-ounce package all-beef mini cocktail franks, patted dry
Cherry tomatoes, sliced in half for garnish
Pearl onions, for garnish
Sport peppers, for garnish
Cornichons, cut in half lengthwise, for garnish
Celery salt, for sprinkling
Neon relish, for serving
Mustard, for serving

Steps:

  • Fill a deep pot with the oil and heat to 360 degrees F. Set a wire rack over a sheet tray.
  • Meanwhile, combine the flour, cornmeal, sugar, poppy seeds, baking powder, salt and pepper in a large bowl. Whisk in the egg, buttermilk and hot sauce, if using. Place a 5-inch skewer halfway through the center of each cocktail frank. Dip the franks in the batter to coat, then place into the oil to fry until golden brown, 3 to 5 minutes. Remove with a slotted spoon or tongs to the wire rack. Repeat with the remaining franks and batter, being sure to return the oil to temperature between each batch.
  • Stand a frank up, and onto the skewer thread a tomato, pearl onion, sport pepper and cornichon. Sprinkle with the celery salt. Serve with the relish and mustard. Repeat with the remaining skewers.

Hot appitizers in the crock pot. It doesn't say how many this will serve but I know 2 guys that would knock it off in a hurry.I'm going to say 4 servings but take your best shot about how many of your crew it will serve. From: Southern U.S. Cuisine

1 cup ketchup
1/2 cup firmly packed brown sugar
1 tablespoon red wine or 1 tablespoon white vinegar
2 teaspoons soy sauce
1 teaspoon Dijon mustard or 1 teaspoon spicy brown mustard
1/2 teaspoon cayenne (or to taste)
1 medium garlic clove, finely minced
1 lb hot dogs, cut into 1-inch pieces or 1 lb cocktail franks

Steps:

  • Combine ketchup, brown sugar, vinegar, soy sauce, mustard, and garlic in the crockery pot.
  • Cover and cook on HIGH for 1 hour, stirring occasionally.
  • Add hot dogs; stir to coat with sauce.
  • Cover and cook on LOW for 1 1/2 hours, or until hot.
  • Serve hot, with toothpicks, from crockpot.

CORN DOG BITES

No need to have skewers for these! Leftover batter can be refrigerated and used for a couple of days. One son likes them better made with the leftover batter. I have never cooked a whole pack of hot dogs in one session, so I don't know how long that would take. Cooking time is estimated for one serving. Recipe from The Southern Living Cookbook. Update: there was a question about the two listed amounts of sugar. The recipe is correct as shown. I put 1 T plus 1 tsp of sugar in the batter.

1 cup all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup cornmeal
1 tablespoon sugar
1 teaspoon sugar
1 egg
1 -1 1/4 cup buttermilk
1/2 teaspoon baking soda
8 -10 hot dogs (each cut into 6 or 8 pieces)
peanut oil (for frying)

Steps:

  • In medium bowl, combine flour, baking powder, salt, cornmeal, and both amounts of the sugar.
  • In a small bowl, combine the egg and buttermilk.
  • Add wet ingredients to the dry ones.
  • Add 1/4 cup buttermilk if batter is too stiff.
  • Immerse 6 or 8 hot dog pieces at the time in the batter.
  • In a small skillet, heat about 1 inch of oil to medium high.
  • Use a fork or tongs to take hot dog pieces out of batter and place carefully into hot oil.
  • Fry until golden brown on both sides. You might have to adjust the temperature of the oil to keep it cooking but not burning.
  • Drain on paper towels.
  • Continue frying in small batches.

  • Transfer the dough to a lightly greased bowl and cover with a clean towel or plastic wrap. TURN THE OVEN OFF and place in the oven to rise for 1 hour.
  • Fill a large stock pot about 2/3 full of water and place on stovetop. Add the baking soda and bring to a boil. While the water is coming to a boil, divide the dough into 16 equal pieces. Roll it out with a rolling pin or use your hands to create a rectangle. Wrap around each half and pinch at the bottom. Make sure that it's sealed together well so that it doesn't come undone while it boils or bakes.
