2 red grapefruits
1/2 teaspoon honey
1/4 teaspoon fresh lemon juice
1 piece (1/2 inch) peeled fresh ginger
3 tablespoons extra-virgin olive oil
1 pound sea scallops, tough muscles removed, scallops halved horizontally
1/4 teaspoon coarse salt
1 cup arugula sprouts
Freshly ground pepper

Steps:

  • Remove peel and pith from each grapefruit. Holding over a bowl, carve out flesh between the membranes, letting segments drop into the bowl (you should have about 2 cups segments). Squeeze membranes over bowl. Strain juice into a measuring cup. Transfer 1/2 cup juice to a saucepan; discard remaining juice.
  • Make the dressing: Add honey, lemon juice, and ginger to pan with juice. Bring mixture to a simmer, stirring occasionally. Remove from heat; let cool completely. Discard ginger. Gradually whisk in 1 tablespoon oil until emulsified.
  • Lay scallops, cut side up, on a rimmed baking sheet; season tops with 1/8 teaspoon salt. Heat remaining 2 tablespoons oil in a medium skillet over medium-high heat. Add scallops, seasoned side down; cook until edges are browned, about 4 minutes. Flip, and cook 30 seconds more. Set aside.
  • Toss arugula sprouts with 1 tablespoon dressing in a small bowl; set aside.
  • To serve, divide grapefruit segments among 4 serving plates. Top each with sprouts and seared scallops, dividing evenly. Drizzle each plate with 1 tablespoon dressing, and season with remaining 1/8 teaspoon salt and the pepper.

A spicy, brothy tomato sauce is a perfect base for a seafood pasta. Here we use scallops, which cook quickly and stay tender and fresh. Arugula provides a nice, peppery punch to round out the dish.

5 tablespoons extra-virgin olive oil
3 cloves garlic, sliced
1/2 teaspoon red pepper flakes, plus more for topping
1 28-ounce can whole peeled San Marzano tomatoes, crushed by hand
8 ounces mezzi rigatoni (about 4 cups)
1/4 cup dry white wine
12 ounces medium sea scallops, muscle removed, patted dry and halved crosswise
4 cups baby arugula
1 lemon

Steps:

  • Bring a large pot of salted water to a boil. Heat 3 tablespoons olive oil in a large wide pot or Dutch oven over medium-high heat. Add the garlic and cook, stirring occasionally, until golden brown, 2 to 3 minutes. Stir in the red pepper flakes, then add the tomatoes and 1/2 teaspoon salt. Bring to a steady simmer and cook until thickened, 7 to 10 minutes.
  • Meanwhile, add the pasta to the boiling water and cook as the label directs for al dente. Reserve 1 cup cooking water, then drain.
  • During the last 4 minutes of cooking the pasta, add the wine and scallops to the tomato sauce, stirring to evenly distribute the scallops in the sauce. Simmer until just cooked through, about 4 minutes.
  • Add the pasta and 1/2 cup cooking water to the scallops. Cook, stirring, until the pasta is well coated, 1 to 2 minutes. Add some of the remaining cooking water, a few tablespoons at a time, if the pasta is dry; season with salt. Stir in 3 cups arugula to wilt slightly.
  • Divide the pasta among shallow bowls. Top with the remaining 1 cup arugula and drizzle with the remaining 2 tablespoons olive oil. Finely grate the lemon zest over the pasta and top with more red pepper flakes.

3 clementines, peeled and cut into segments
1 ruby red grapefruit, peeled and cut into segments
Salt
Pinch crushed red pepper
8 large dry diver sea scallops
Extra-virgin olive oil
2 cloves garlic, smashed
2 cups baby arugula
1/2 small red onion, finely julienned
1/2 cup pomegranate seeds

Steps:

  • Combine all the citrus in a medium bowl with a pinch of salt and crushed red pepper and reserve.
  • Season the scallops with salt. Coat a large saute pan with olive oil. When the oil is hot but not smoking add the smashed garlic cloves. When the garlic has become golden and very aromatic remove it from the pan and discard it. Next, gently lay the scallops in the pan and cook for 2 to 3 minutes on each side. If the pan begins to smoke reduce the heat of the burner. The scallops should look beautifully caramelized on each side.
  • While the scallops are cooking, dress the arugula in a small bowl with some of the juice from the reserved citrus and also high-quality extra-virgin olive oil and some salt. Arrange the arugula on individual serving plates. Toss the onion in with the citrus and give it a sprinkle of olive oil. Lay the citrus on the arugula.
  • Cut the scallops in half equatorially and place them overlapping in a line against the citrus. Sprinkle with pomegranate seeds and give another little drizzle of olive oil.

1 lb bay scallop
3 red bell peppers, can use yellow
2 tablespoons butter
1 garlic clove, minced
4 cups arugula, torn
1/2 cup whipping cream
2 tablespoons tomato paste
2 tablespoons lime juice
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Rinse scallops, pat dry and set aside.
  • Slice peppers lengthwise inot 1/2 inch wide strips.
  • In a large skillet, melt the butter over medium-high heat.
  • Stir fry the sweet pepper strips and garlic for 4-5 minutes or until just tender.
  • Add arugula; stir fry for 30 seconds or until just wilted.
  • Divide vegetable mixture among 4 dinner plates. Cover; keep warm.
  • To the same skillet, add cream and tomato paste.
  • Bring mixture to a boil and add scallops.
  • Simmer, uncovered, for 2-3 minutes or until scallops are opaque.
  • Remove scallops with a slotted spoon; arrange alongside vegetables.
  • Return cream mixture to boiling; cook for 1 minute or until mixture is slightly thickened, stirring briskly with a whisk.
  • Add lime juice, salt and pepper.
  • Spoon cream mixture over scallops.

3 tablespoons olive oil, divided
16 large sea scallops
½ medium red grapefruit
½ bulb fennel
3 cups baby spinach leaves
2 tablespoons rice vinegar
1 tablespoon freshly squeezed lemon juice
1 tablespoon diced shallot
1 teaspoon brown mustard
1 teaspoon honey
salt and ground black pepper to taste

Steps:

  • Heat butter and 1 tablespoon oil in a large saute pan over medium-high heat. Pat scallops dry and add to the hot pan; sear until caramelized, 6 to 7 minutes, flipping halfway.
  • While scallops are cooking, peel, skin, and slice grapefruit. Slice fennel thinly, reserving a few fronds. Place grapefruit, fennel, fronds, and spinach in a large bowl.
  • Prepare dressing by mixing remaining 2 tablespoons olive oil, vinegar, lemon juice, shallot, mustard, honey, salt, and pepper together in a small bowl.
  • Add seared scallops to the salad and mix to combine. Drizzle dressing over top.

1/4 pound sea scallops, patted dry and cut into 1/2-inch-thick slices
1 tablespoon flour
2 tablespoons olive oil
1/4 cup dry white wine
2 tablespoons bottled clam juice
1 tablespoon minced shallot
1/3 cup fresh pink grapefruit juice
1/2 teaspoon grated pink grapefruit zest
1/2 teaspoon sugar
3 tablespoons cold unsalted butter, cut into bits
1 tablespoon thinly sliced scallions
fresh pink grapefruit sections for garnish

Steps:

  • In a bowl toss together the scallops, the flour, and salt and pepper to taste. In a skillet large enough to hold the scallops in one layer heat the oil over moderately high heat until it is hot but not smoking and in it sauté the scallops, stirring, for 2 1/2 to 3 minutes, or until they are just firm and lightly golden. Transfer the scallops to a plate. Add the wine to the skillet, deglaze the skillet, scraping up the brown bits, and stir in the clam juice, the shallot, the grapefruit juice, the zest, and the sugar. Boil the liquid until it is reduced to about 1/3 cup and strain the mixture through a fine sieve set over a saucepan. Set the pan over low heat and whisk in the butter, 1 at a time, lifting the pan from the heat occasionally to cool the mixture and adding each new bit of butter before the previous one has melted completely. (The sauce should not get hot enough to liquefy. It should be the consistency of thin hollandaise.) Add the scallion and the scallops with any juices that have accumulated on the plate and heat the mixture until the scallops are heated through. Divide the mixture between 2 plates and garnish each plate with some of the grapefruit sections.

1/4 cup olive oil
1 sweet onion (3/4 pound) such as Vidalia, OsoSweet, or Walla Walla, halved lengthwise and thinly sliced
1 pink grapefruit
3/4 cup Prosecco
2 tablespoons minced shallot
1 stick cold unsalted butter, cut into tablespoons, divided
12 large sea scallops (about 1 1/2 pounds total), tough ligament from side discarded
1 teaspoon vegetable oil
Garnish: chervil sprigs

Steps:

  • Heat olive oil in a 2- to 3-quart heavy saucepan over medium-low heat until it shimmers, then cook onion, covered, over low heat, stirring occasionally, until wilted, about 10 minutes. Stir in 1/2 teaspoon salt and 1/4 teaspoon pepper and cook, covered, stirring occasionally, until very tender but not colored, about 20 minutes more. (If onion begins to color, add 1 to 2 tablespoons of water as necessary during cooking.)
  • Purée onion in a blender until smooth (use caution when blending hot foods). Transfer to a bowl; keep warm, covered.
  • Cut 1/2 inch from top and bottom of grapefruit with a sharp knife, exposing fruit at both ends. Cut peel and pith from sides, then cut segments free from membranes. Cut segments into 1/3-inch dice and reserve.
  • Boil Prosecco and shallot in a small heavy saucepan until liquid is reduced to 1 to 2 tablespoons, about 5 minutes. Reduce heat to medium-low, then whisk in 6 tablespoons butter, 1 tablespoon at a time, whisking constantly, adding each piece before previous one has completely melted, and lifting pan from heat occasionally to cool. Remove from heat; keep warm, covered.
  • Heat a dry 12-inch heavy skillet over medium-high heat until very hot, at least 2 minutes.
  • Meanwhile, pat scallops dry and sprinkle with 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Add vegetable oil to hot skillet, swirling to coat, then sear scallops without crowding, undisturbed, until undersides are well browned, about 3 minutes. Add remaining 2 tablespoons butter to skillet, swirling skillet (so butter helps release scallops), then turn scallops over and cook until just cooked through, about 1 minute more.
  • Spoon 2 tablespoons onion purée onto each of 4 plates, then top with scallops, browned sides up, and diced grapefruit. Drizzle with Prosecco butter.

16 large sea scallops (about 1 1/4 pounds), rinsed and dried, tough muscles removed
1 1/2 teaspoons coarse salt
1/4 teaspoon freshly ground pepper
3 tablespoons safflower oil
2 garlic cloves, thinly sliced lengthwise
7 ounces baby spinach (about 10 cups)
7 ounces baby arugula (about 10 cups)
1/4 teaspoon crushed red-pepper flakes

Steps:

  • Heat a large straight-sided skillet over medium-high heat. Sprinkle scallops with 1 teaspoon salt and 1/8 teaspoon pepper. Heat 2 tablespoons oil in skillet. Arrange scallops in skillet, and cook on 1 side until golden brown, about 7 minutes. Flip, and cook until scallops are opaque, 30 to 45 seconds. Transfer to a plate lined with paper towels.
  • Reduce heat to medium, and add remaining tablespoon oil to skillet. Add garlic, and cook for 15 seconds. Add spinach, arugula, red-pepper flakes, and remaining 1/2 teaspoon salt and 1/8 teaspoon pepper. Cook, tossing greens often, until just wilted, about 2 minutes. Transfer to a platter, top with scallops, and serve immediately.

18 sea scallops (about 18 ounces)

Steps:

  • Squeeze 3/4 cup juice from 2 grapefruit. Cook honey in heavy medium saucepan over medium heat until honey begins to caramelize, stirring occasionally, about 8 minutes. Add grapefruit juice, white wine vinegar, and salt. Simmer over medium-high heat until reduced by half, about 10 minutes. Add pepper. Remove from heat. Cover to keep warm. (Can be made 2 days ahead. Cover and chill.) Using small sharp knife, cut peel and white pith from 2 grapefruit. Working over bowl, cut between membranes to release grapefruit segments. Set aside. Whisk 2 tablespoons oil and lemon juice in medium bowl. Add arugula and toss to coat. Season with salt and pepper. Sprinkle scallops with salt and pepper. Heat 1 tablespoon olive oil in heavy large skillet over high heat. Add scallops and saute until cooked through, about 2 minutes per side. Bring sauce to simmer; spoon 1 tablespoon sauce onto each of 6 plates. Drizzle 1 teaspoon olive oil over sauce on each plate. Divide arugula salad among plates, mounding slightly in center. Alternate 3 scallops and 3 grapefruit segments around arugula on each plate.
