DO-AHEAD BREAKFAST BAKE
This is a weekend favorite--ham, potatoes, cheese and eggs combined in a simple, yet company-good casserole.

Steps:
- Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
- Layer ham, potatoes (from potato boxes), bell pepper, onion and 1 cup of the cheese in baking dish. In large bowl, stir Bisquick mix, milk, sauce mix (from potato boxes), pepper and eggs until blended. Pour into baking dish; sprinkle with remaining 1 cup cheese. Cover; refrigerate at least 8 hours, but no longer than 24 hours.
- Heat oven to 375°F. Bake 40 to 45 minutes or until brown on top and knife inserted in center comes out clean. Let stand 10 minutes.

Mmm mmm good! This is a must do for every holiday in my household, or just when you have guests overnight! Can be made with egg substitute, skim milk and turkey sausage to make it healthier!

Steps:
- Spread croutons on bottom of greased 9x13 inch baking dish. Crumble sausage into medium skillet. Cook over medium heat until browned, stirring occasionally. Drain off any drippings. Spread sausage over croutons.
- In a large bowl, whisk together eggs and milk until well blended. Stir in soup, spinach, mushrooms, cheeses and mustard. Pour egg mixture over sausage and croutons. Refrigerate overnight.
- The next morning, preheat oven to 325 degrees F (165 degrees C).
- Bake in preheated oven for 50 to 55 minutes or until set and lightly browned on top. Garnish with parsley sprigs and serve hot.

- Place potato patties in a 13x9-in. baking dish coated with cooking spray. Top with ham and 1 cup cheese. Combine milk, soup, egg substitute, mustard and pepper; pour over cheese. - Preheat oven to 350°F (180°C).
- Cut each biscuit into 9 pieces. Set aside.
- In a bowl, mix eggs, milk, pepper, salt, and chives.
- In a 9x13 inch (23x33 cm) glass baking dish, evenly spread out the biscuit pieces and the ham.
- Pour the egg mixture over everything.
- Bake for 35 minutes.
- To make the Hollandaise combine the egg yolks, lemon juice, salt, and cayenne in a blender. Gradually add the hot butter until fully mixed.
- Slice and pour Hollandaise sauce over the bake. Top with chives
